Steps:
- 1. In a small bowl, combine the onions, water, vinegar, salt, and pepper. Let sit at room temperature for 5 minutes to allow the flavors to develop.
- Add 1/2 cup of the oil to the vinegar mixture. Add additional to taste.
- 2. In a large bowl, combine the lettuce, roasted peppers, olives, haricots verts, cucumber, and herbs. Toss with enough dressing to coat, and season to taste with additional salt and pepper. Serve any remaining dressing on the side.

RUTH'S CHRIS STEAKHOUSE CHOPPED SALAD -- COPYCAT RECIPE
This is just one of my all-time favorite salads that is famous on the menu at all Ruth's Chris Steakhouses. The recipe is a copycat and if you ask me, it is the real deal. It is so delicious with the chopped lettuces, hearts of palm, bacon, eggs, blue cheese and the creamy lemon basil dressing! I could eat a gallon at a time! Enjoy!

- In a very large bowl, combine lettuce, spinach, radicchio, red onions, green olives, mushrooms, eggs, hearts of palm and bacon; toss well.
- Add crumbled blue cheese and about 1/2 of Lemon Basil Dressing; toss until well mixed.
- Divide salad among 4 dinner plates, garnish with cherry tomato halves and top salads with crispy fried onions.
- Combine all ingredients, add seasoned salt and garlic powder to taste.
- Mix well; refrigerate until serving.
- Refrigerate any leftover dressing.

A local fast-food restaurant by me sells a pretty good chopped salad but, I got tired of paying $7 for a salad. So, I did what I could to make the recipe my own. My sister actually likes mine better and said I should post it. So here is the recipe for my soon-to-be famous chopped salad.

- Cook pasta per package instructions.
- After draining pasta in colander, rinse the pasta in cold water to cool off. Once drained and cooled, sprinkle with Season Salt, to taste. (I use Tastefully Simple but I am sure other brands would work as well).
- Fry bacon on stovetop. Once crisp, pat to remove excess oil and crumble.
- If using chicken, boil chicken to cook. Once cooked through, chop into small pieces. Please note: I do not often use chicken but, when I do I use a small breast or 1/2 of a breast.
- Combine all ingredients in a large bowl and toss.
- Although I do not use salad dressing, my family uses a light vinigrette (their current favorite is sun-dried tomato) as a dressing with the salad.
- Also, ingredients can be removed or their amounts adjusted to meet the tastes of people eating the salad although the basic ingredients remain the same.

- Up to to two days ahead- Make the dressing and refrigerate. To make the dressing, combine mayo, buttermilk, cheese, juice of lemon, basil leaves and garlic in a blender. Pulse and blend on low until ingredients are mixed well. Add ground salt and pepper to taste. Cook the couscous according to package directions, you may skip the toasting of the couscous if you like the lighter appearance of the couscous. Refrigerate until ready to assemble salad.
- On day of serving:Chop the tomatoes and add balsamic, olive oil and a pinch of salt and pepper. Set aside. Wash and chop the arugula. Set aside. To make the trail mix, combine the currants, pumpkin seeds and Asiago cheese and set aside. - Cook the couscous according to package directions and immediately toss with 1 teaspoon olive oil to prevent clumping. Allow to cool.
- On a large platter, arrange the arugula in a row down the center. Make a row of the cooked (yet, slightly cooled or cold) couscous next to it. Sprinkle the couscous with a little salt.
