RUTH'S CHRIS STEAKHOUSE CHOPPED SALAD -- COPYCAT RECIPE

Ruth's Chris Steakhouse Chopped Salad -- Copycat Recipe image

This is just one of my all-time favorite salads that is famous on the menu at all Ruth's Chris Steakhouses. The recipe is a copycat and if you ask me, it is the real deal. It is so delicious with the chopped lettuces, hearts of palm, bacon, eggs, blue cheese and the creamy lemon basil dressing! I could eat a gallon at a time! Enjoy!

Categories     Salads

Time 25m

Number Of Ingredients 19

8 packed cups iceberg lettuce, sliced in 1/4″ julienned slices
1 packed cup spinach, chopped
1 packed cup radicchio, sliced very thin
1/3 medium red onion, sliced very thin and then halved
1/4 cup chopped green olives
1 cup crumbled blue cheese
1 can artichoke hearts, drained, and using just the chunky ends, cut ends into 1/4″ chunks, saving the layered portion of the hearts for another recipe or salad (I added this ingredient and it's fantastic)
1-14 oz.can hearts of palm, drained, and cut into 1/4″ chunks
6 oz. fresh mushrooms, chopped
8 slices of super-thick smoked bacon, cooked until dark brownish-red, fat drained, cut into 1/4″ bits
4 hard-boiled eggs, cut into 1/4″ chunks
1-1/2 cups crispy, dried fried onion rings, crumbled and used to top the salad
garnish: cherry tomatoes cut in half
freshly cracked black pepper and salt to taste
2 cups sour cream
4 Tbsps. freshly squeezed lemon juice
½ cup freshly chopped basil
1/2 tsp. garlic powder
seasoned salt and pepper to taste

Steps:

  • In a very large bowl, combine lettuce, spinach, radicchio, red onions, green olives, mushrooms, eggs, hearts of palm and bacon; toss well.
  • Add crumbled blue cheese and about 1/2 of Lemon Basil Dressing; toss until well mixed.
  • Divide salad among 4 dinner plates, garnish with cherry tomato halves and top salads with crispy fried onions.
  • Combine all ingredients, add seasoned salt and garlic powder to taste.
  • Mix well; refrigerate until serving.
  • Refrigerate any leftover dressing.

CHOPPED SALAD

Chopped Salad image

The key is chopping the veggies into small pieces. This is what gives the salad such a clean, fresh taste. The small pieces impart juices and flavor. No dressing required. This is good for lunch or as a side dish for dinner. It can be kept in the refrigerator for several days. NOTE: For a Fatoush-type of salad, toast or broil a slice of pita bread; break-up the crispy pieces into the salad.

CHOPPED SALAD (SOON TO BE FAMOUS)

Chopped Salad (Soon to Be Famous) image

A local fast-food restaurant by me sells a pretty good chopped salad but, I got tired of paying $7 for a salad. So, I did what I could to make the recipe my own. My sister actually likes mine better and said I should post it. So here is the recipe for my soon-to-be famous chopped salad.

Provided by Jeanelle71

Categories     Greens

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 head iceberg lettuce, cleaned and chopped
1/2 cup ditalini
4 slices bacon
1 tomatoes, seeded and chopped
1/2 medium red onion, chopped
4 ounces crumbled blue cheese
1 avocado, peeled and chopped
1 -2 teaspoon season salt
1 small chicken breast (optional)

Steps:

  • Cook pasta per package instructions.
  • After draining pasta in colander, rinse the pasta in cold water to cool off. Once drained and cooled, sprinkle with Season Salt, to taste. (I use Tastefully Simple but I am sure other brands would work as well).
  • Fry bacon on stovetop. Once crisp, pat to remove excess oil and crumble.
  • If using chicken, boil chicken to cook. Once cooked through, chop into small pieces. Please note: I do not often use chicken but, when I do I use a small breast or 1/2 of a breast.
  • Combine all ingredients in a large bowl and toss.
  • Although I do not use salad dressing, my family uses a light vinigrette (their current favorite is sun-dried tomato) as a dressing with the salad.
  • Also, ingredients can be removed or their amounts adjusted to meet the tastes of people eating the salad although the basic ingredients remain the same.

  • Beef Stroganoff. Beef Stroganoff may have hit peak popularity in America in the 1950s and 1960s, but it's been around far longer than that. The recipe originated in 17th century Russia and gets its name from Count Pavel Alexandrovich Stroganov, a diplomat from the Russian Stroganov family.
  • Reuben. Though there's some debate about the Reuben's origins, many believe the sandwich emerged in the 1920s at the Blackstone Hotel in Omaha, Nebraska, where Bernard Schimmel was the chef.
  • Sandwich. Now you know where the "Reuben" comes from, but what about the concept of a sandwich itself? Well, according to PBS, the sandwich is named after 18th-century aristocrat John Montagu, the fourth Earl of Sandwich, who enjoyed eating sliced meats between two pieces of bread.
  • Waldorf Salad. The Waldorf salad, which features apples, celery, grapes, and chopped walnuts over a bed of greens, is named after the establishment that birthed it: the Waldorf-Astoria Hotel in New York City.
  • French Fries. Though some claim French fries have French origins, National Geographic says the first French fries came from Belgium, where fishermen near the River Meuse began frying potatoes during the long winter months when there wasn't enough fish to fry.
  • Caesar Salad. Though most assume the Caesar salad has a connection to Julius Caesar, the popular salad was actually created in Tijuana, Mexico, in 1924 by Italian-American restaurateur Caesar Cardini.
  • Chicken à la King. While it's unclear who exactly is responsible for Chicken à la King, according to Politico, the most likely story indicates that the meal was originally made by the chef at New York's Brighton Beach Hotel, owned by E. Clark King II.
  • Lobster Newburg. Ben Wenberg, a successful sea captain in the West Indes fruit trade, is rumored to be responsible for this creamy, decadent seafood dish.
  • Salisbury Steak. The Salisbury steak got its name from Dr. James Henry Salisbury, a 19th-century physician who first served it to Civil War soldiers during a study.
  • Baked Alaska. This dessert dish consists of cake and ice cream enveloped in meringue, then brûléed on the outside. The unlikely baking method was conceived by an 18th-century scientist named Sir Benjamin Thompson, according to NPR.
