Provided by Ari Laing

Categories     Dinner

Time 30m

Number Of Ingredients 11

2 (10 - 12 oz) halibut steaks or (4) halibut fillets (steaks pictured here about 1 ¼-1 ½" thick, totaling ~24 oz)
1 tsp Kosher salt
¼ tsp freshly ground black pepper
3 Tbsp grapeseed oil (or other neutral oil, such as canola)
2 Tbsp Chinese chili sauce
1 Tbsp sesame oil
4 cloves garlic (smashed)
Basil, mint, and/or cilantro (for serving)
1 Thai bird chili (or other long red pepper, thinly sliced, for serving)
Lime wedges (for serving)
Mumm Napa Brut Rosé

Steps:

  • Season the fish. Pat the halibut dry on both sides with a paper towel, then generously season on both sides with Kosher salt and black pepper. Allow to sit at room temperature for 10 minutes before cooking.
  • Heat the pan. Heat a large cast iron skillet over medium-high heat for a few minutes, until very hot. Add grapeseed oil (or other neutral oil). You're looking for a thin layer on the bottom of the pan.
  • Sear the halibut. When hot, add halibut steaks and cook undisturbed for 5-6 minutes. This will help the fish form a crust that makes it easier to flip.
  • Make the chili garlic oil. In a medium bowl, combine chili oil and sesame oil, then whisk well. Keep smashed cloves close by.
  • Add sauce. Use a fish spatula to carefully flip halibut steaks over. Pour the chili garlic oil on top, then add garlic cloves to the pan. Cook an additional 4-5 minutes, or until halibut has reached an internal temperature of between 130F - 135F. Tilt the pan slightly during the last few minutes of cook time, then use a large spoon to collect the sauce and baste the fish fillets or steaks.
  • Garnish then serve. Transfer cooked halibut to serving plates, then garnish with fresh herbs (basil, cilantro, mint, or a combination), lime wedges, and thinly sliced chilies. Recommended wine pairing: Mumm Napa Brut Rosé

CHILE-GARLIC MARINATED AND GRILLED SHRIMP

Chile-Garlic Marinated and Grilled Shrimp image

This quick marinade is a cheater's version of Vietnamese nuoc mam cham, which is a mixture of Asian fish sauce, lime juice, sugar and chiles. Using crushed red pepper flakes rather than the fresh variety means less chopping, and finely grating the garlic into the marinade ensures it doesn't burn on the grill.

Provided by Food Network Kitchen

Time 45m

Yield Serves 4

Number Of Ingredients 9

3 large limes (about 10 ounces)
2 large cloves garlic
2 tablespoons fish sauce
2 tablespoons canola oil
1 tablespoon sugar
1/4 to 1/2 teaspoon crushed red pepper flakes
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced
1/4 cup lightly packed cilantro leaves

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and about 1/4 cup juice) and add to a medium glass bowl. Finely grate the garlic and add to the bowl along with the fish sauce, canola oil, sugar, red pepper flakes and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, grill the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Transfer to a large plate.
  • Top with the sliced scallions and cilantro and serve with the lime wedges.

GRILLED WHOLE FISH IN CHILE, GARLIC AND MINT SAUCE

Grilled Whole Fish in Chile, Garlic and Mint Sauce image

I'm really liking the fish with mint recipes I've encountered so I was jazzed to see this recipe in The Times-Picayune. I have another nice pink snapper in the fridge (catch of the day) & plenty of mint & fish peppers to work with from the garden. The Times-Picayune attribute this recipe to "Mediterranean Hot and Spicy" by Aglaia Kremezi (Broadway Books, $19.95) - full of flavorful fresh dishes from around the Mediterranean Sea. This recipe is from a restaurant in Jaffa, Israel.

Time 1h5m

Yield 2 serving(s)

Number Of Ingredients 10

2 -4 fresh green chilies, minced, to taste
1 -2 garlic clove, minced, to taste
3 tablespoons mint, chopped fresh (1 teaspoon dried mint, crumbled)
2 -3 tablespoons fresh lemon juice, to taste
4 -5 tablespoons extra virgin olive oil, fruity, to taste
sea salt, to taste
black pepper, freshly ground, to taste
1 whole head-on fish, about 1 1/2 pounds, suitable for grilling, cleaned, such as sea bream, porgy, gray mullet
1/2 cup tomatoes, ripe fresh, finely diced, peeled and seeded, drained
2 tablespoons flat leaf parsley, chopped fresh

Steps:

  • Mix chiles, garlic, mint, lemon juice and olive oil. Add a little salt; mix thoroughly; then taste and adjust the seasonings. The sauce should be hot. Let stand at room temperature at least 30 minutes, up to 2 hours.
  • Light a charcoal grill or preheat a broiler. Salt the fish inside and out and place on a well-oiled grill about 5 inches from the heat. Broil or grill, turning once, until firm and almost done, about 15 minutes total. Remove from heat and cover with foil. Let stand 5 minutes.
  • Mix sauce with the chopped tomato. Serve the fish with the sauce on the side, or cut the fish open, remove the central bone, and transfer the fillets to a heat-proof platter. Pour half the sauce over the fish, sprinkle with some pepper, and place under a very hot broiler for a few seconds before serving, sprinkled with the parsley. Pass the rest of the sauce separately.0.

Yield Makes 6 servings

Number Of Ingredients 8

6 7- to 8-ounce black cod fillets (about 1 inch thick)
Coarse kosher salt
6 tablespoons extra-virgin olive oil (preferably Spanish)
4 garlic cloves, thinly sliced crosswise
1 dried guindilla chile, crumbled, or 1/2 teaspoon dried crushed red pepper
3 tablespoons chopped fresh Italian parsley
Special Equipment
Fish grill basket (optional)

Steps:

  • Lightly brush fish grill basket with oil (if using), or brush grill rack with oil, and prepare barbecue (medium-high heat). Sprinkle fish on both sides with coarse salt and pepper. Place fish in grill basket (if using) or directly on grill rack, skin side down. Grill fish until opaque in center, 4 to 5 minutes per side. Transfer to platter; cover to keep warm.
  • Heat 6 tablespoons oil in small skillet over high heat. Add garlic and sautéuntil fragrant and light golden, about 1 minute. Add crumbled chile or crushed red pepper; stir 15 seconds. Immediately pour garlic chile oil over fish. Sprinkle with chopped parsley and serve.
  • Ingredient Tip:
  • The traditional chile for the garlic sauce is guindilla, a small, elongated, medium-hot Spanish chile that's usually sold dried. This chile may be difficult to find, but ordinary dried crushed red pepper makes an excellent substitute.

BROILED FISH WITH GARLIC OIL AND DRIED CHILE

Broiled Fish with Garlic Oil and Dried Chile image

_Besugo a la Parrilla_ Besugo translates as "red sea bream," which is the type of fish the restaurant uses for this dish; the bream is grilled, then deboned and served whole. Red bream is difficult to find in this country, so we've substituted red snapper, and we've chosen to broil fillets to keep things simple.

Time 15m

Yield Makes 4 servings

Number Of Ingredients 7

1 dried red guindilla chile* or dried guajillo or New Mexican chile*
4 (6-oz) red snapper fillets with skin
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 teaspoon fine sea salt
1 tablespoon red-wine vinegar
2 tablespoons chopped fresh flat-leaf parsley
2 garlic cloves, very thinly sliced

Steps:

  • Split open chile and discard stem and seeds. Heat a dry small heavy skillet over moderate heat until hot, then toast chile until fragrant, 5 to 10 seconds on each side. Finely chop chile.
  • Line rack of a broiler pan with foil and lightly oil, then set aside. Preheat broiler.
  • Pat fish dry, then brush both sides with 1 tablespoon oil (total) and sprinkle with sea salt. Broil fillets, skin sides up, about 5 inches from heat 9 minutes (skin will be browned and blistered). Turn fish over and broil until flesh is opaque (just cooked through), 1 to 2 minutes more.
  • Transfer fish to a platter and sprinkle with vinegar, parsley, and chopped chile.
  • Heat remaining 1/3 cup oil in small heavy skillet over moderately high heat until hot but not smoking, then sauté garlic, stirring, until golden, about 1 minute. Drizzle oil with garlic over fish and serve immediately.
  • Available at Latino markets, some supermarkets, specialty foods shops, and Kitchen Market (888-468-4433).
