PAN SEARED HALIBUT WITH CHILI GARLIC OIL
Pan seared halibut gets a major upgrade from a spicy chili garlic oil that gives the fish a serious kick. Serve with fresh herbs, lime wedges, and thinly sliced chilis. An easy weeknight dinner or celebratory meal!

- Season the fish. Pat the halibut dry on both sides with a paper towel, then generously season on both sides with Kosher salt and black pepper. Allow to sit at room temperature for 10 minutes before cooking.
- Heat the pan. Heat a large cast iron skillet over medium-high heat for a few minutes, until very hot. Add grapeseed oil (or other neutral oil). You're looking for a thin layer on the bottom of the pan.
- Sear the halibut. When hot, add halibut steaks and cook undisturbed for 5-6 minutes. This will help the fish form a crust that makes it easier to flip.
- Make the chili garlic oil. In a medium bowl, combine chili oil and sesame oil, then whisk well. Keep smashed cloves close by.
- Add sauce. Use a fish spatula to carefully flip halibut steaks over. Pour the chili garlic oil on top, then add garlic cloves to the pan. Cook an additional 4-5 minutes, or until halibut has reached an internal temperature of between 130F - 135F. Tilt the pan slightly during the last few minutes of cook time, then use a large spoon to collect the sauce and baste the fish fillets or steaks.
- Garnish then serve. Transfer cooked halibut to serving plates, then garnish with fresh herbs (basil, cilantro, mint, or a combination), lime wedges, and thinly sliced chilies. Recommended wine pairing: Mumm Napa Brut Rosé

CHILE-GARLIC MARINATED AND GRILLED SHRIMP
This quick marinade is a cheater's version of Vietnamese nuoc mam cham, which is a mixture of Asian fish sauce, lime juice, sugar and chiles. Using crushed red pepper flakes rather than the fresh variety means less chopping, and finely grating the garlic into the marinade ensures it doesn't burn on the grill.

- Zest and juice 2 of the limes (you should have about 1 tablespoon zest and about 1/4 cup juice) and add to a medium glass bowl. Finely grate the garlic and add to the bowl along with the fish sauce, canola oil, sugar, red pepper flakes and shrimp. Toss to combine.
- Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges and reserve for serving.
- Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, grill the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Transfer to a large plate.
- Top with the sliced scallions and cilantro and serve with the lime wedges.
OVEN ROASTED SHRIMP WITH TOASTED GARLIC AND RED CHILE OIL

- Preheat oven to 500 degrees F.
- Place the shrimp in a cazuela or an ovenproof casserole and season with salt and pepper, to taste. Drizzle olive oil over shrimp, add crushed garlic, and toss to coat. Roast in the oven until pink and cooked through, about 4 to 5 minutes. Drizzle generously with Red Chile Oil and sprinkle with thyme and Toasted Garlic Chips. Serve with crusty bread.

- 6 dried chiles de arbol, lightly toasted and crushed
- 6 cloves garlic, finely chopped
- Pinch salt
- 3 sprigs fresh thyme, leaves removed
- Blend all ingredients including the thyme leaves in a blender until smooth.. Strain through a fine mesh strainer into a bowl.

- Heat the oil in a small skillet until it begins to shimmer. Add the garlic and cook until the slices begin to brown and curl. Remove with a slotted spoon to a plate lined with paper towels and season with salt.
GRILLED SHRIMP WITH GARLIC-RED CHILE-THYME MARINADE

- Place chiles in a large bowl, cover with boiling water, and let stand for 1 hour to soften. Remove chiles from the water, coarsely chop, and place in the jar of a blender. Add the garlic, thyme, and oil and blend until smooth. Season, to taste, with salt and pepper. Place the shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
- Preheat a grill to high. Remove the prawns from the marinade and grill for 1 1/2 to 2 minutes per side, with the cover closed. Serve on brown paper bags, if desired.
GRILLED WHOLE FISH IN CHILE, GARLIC AND MINT SAUCE
I'm really liking the fish with mint recipes I've encountered so I was jazzed to see this recipe in The Times-Picayune. I have another nice pink snapper in the fridge (catch of the day) & plenty of mint & fish peppers to work with from the garden. The Times-Picayune attribute this recipe to "Mediterranean Hot and Spicy" by Aglaia Kremezi (Broadway Books, $19.95) - full of flavorful fresh dishes from around the Mediterranean Sea. This recipe is from a restaurant in Jaffa, Israel.

- Mix chiles, garlic, mint, lemon juice and olive oil. Add a little salt; mix thoroughly; then taste and adjust the seasonings. The sauce should be hot. Let stand at room temperature at least 30 minutes, up to 2 hours.
- Light a charcoal grill or preheat a broiler. Salt the fish inside and out and place on a well-oiled grill about 5 inches from the heat. Broil or grill, turning once, until firm and almost done, about 15 minutes total. Remove from heat and cover with foil. Let stand 5 minutes.

BROILED FISH WITH GARLIC OIL AND DRIED CHILE

Red bream is difficult to find in this country, so we've substituted red snapper, and we've chosen to broil fillets to keep things simple.

- Split open chile and discard stem and seeds. Heat a dry small heavy skillet over moderate heat until hot, then toast chile until fragrant, 5 to 10 seconds on each side. Finely chop chile.
- Line rack of a broiler pan with foil and lightly oil, then set aside. Preheat broiler.
- Pat fish dry, then brush both sides with 1 tablespoon oil (total) and sprinkle with sea salt. Broil fillets, skin sides up, about 5 inches from heat 9 minutes (skin will be browned and blistered). Turn fish over and broil until flesh is opaque (just cooked through), 1 to 2 minutes more.
- Transfer fish to a platter and sprinkle with vinegar, parsley, and chopped chile.
