EGG, SAUSAGE AND CHEESE BREAKFAST SANDWICH
Breakfast in a bun? Why not! This recipe has all the usual suspects - eggs, sausage, cheese - plus a little spice to kick your morning into high gear.

Steps:
- Preheat oven to 425 degrees F. Toast buns until golden brown.
- Cook sausage patties in a skillet over medium heat until brown.
- While preparing sausage, whisk the eggs together in a bowl and season with salt and pepper.
- In a clean saute pan add 1 tablespoon of olive oil and scramble the eggs till cooked throughout.
- Combine Sriracha sauce and mayonnaise and spread on each side of the buns.
- Place a sausage patty onto the four bottom buns. For each sandwich, top sausage with eggs, cheese and arugula.
- Serve while warm.

- Preheat oven to 350 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray. Season eggs with 1 teaspoon salt and 1/2 teaspoon pepper. Add eggs to the prepared baking dish. Place into oven and bake util eggs are just set, about 13-15 minutes; let cool 5 minutes. Cut out 6 rounds using a 3 1/2-inch biscuit cutter. In a large bowl, combine ground pork, fennel seeds, thyme, garlic powder, oregano, cayenne pepper, 1 teaspoon salt and 1/2 teaspoon pepper. Divide the pork mixture into sixths and shape each portion into 3 1/2-inch patties. Heat canola oil in a large skillet over medium heat. Working in batches, add patties to the skillet and cook until golden brown, about 3-4 minutes per side; let cool 5 minutes. Place one sausage patty over the muffin bottom. Top with 1 slice cheese and 1 egg round, and then cover with another muffin top to create a sandwich. Repeat with remaining English muffins to make 6 sandwiches. Wrap tightly in plastic wrap and place in the freezer. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely. Serve immediately.
HOMEMADE BREAKFAST SANDWICHES WITH HOMEMADE MAPLE SAUSAGE, EGG AND CHEESE

- Preheat the oven to 350 degrees F.
- Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
- Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
- To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
- In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
- Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
- Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.
SAUSAGE EGG AND CHEESE BREAKFAST SANDWICHES

- Place a quarter (small) sheet pan onto the middle rack of your oven and preheat to 375°.
- Meanwhile, beat the eggs with 1/2 teaspoon kosher salt.
- Once your oven (and pan) has preheated, use oven mitts to remove the pan and spray generously with olive oil spray.
- Pour in the beaten eggs and bake for 10 minutes (rotate half way through) or until set.
- Use a biscuit cutter (the size of your english muffin - about 3 inches) to stamp out scrambled egg rounds. Save scraps to make breakfast burritos or add to a stir-fry or fried rice.
- Build the breakfast sandwiches by topping the bottm half of an english muffin with sausage, an egg round and a slice of cheese.
- If freezing, allow to cool completely, wrap tightly in foil and freeze.*
- For melty cheese either microwave or slide the sandwich (without the english muffin top) underneath the broiler until melted.

SAUSAGE, EGG AND CHEESE BREAKFAST SANDWICHES
Steps:
- Toast the English muffins depending on how you crispy you like them. Place a piece of cheese on each sandwich.
- Microwave the sausage patties using the directions on the package. Fry the eggs separately, breaking the yolks to make sure they are all fully cooked. Place a sausage patty on top of the cheese and the fried egg on top of the sausage patty. Top your sandwich with the top of the English muffin.
- Finish your sandwich off by microwaving the whole sandwich for about 15 seconds to melt the cheese. (If using ham, you may want to fry the ham up a little to make it warm.)
