Swiss Chard and Golden Raisins image

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 25m

Yield 6 servings

Number Of Ingredients 8

2 1/2 pounds (the average weight of 2 bundles) red Swiss chard
1 1/2 tablespoons (1 1/2 turns around the pan in a slow stream) extra-virgin olive oil
1/8 pound, 2 slices, pancetta or bacon, chopped
1 small yellow skinned onion, chopped
1/4 cup (2 handfuls) golden raisins
14 ounces chicken stock or broth
Coarse salt
1/8 teaspoon nutmeg, a couple pinches ground or equivalent of freshly grated

Steps:

  • Heat a large skillet over medium high heat. Coarsely chop the greens of clean red chard. Add oil, pancetta, and chopped onion to the pan and cook 2 or 3 minutes until onions begin to soften and pancetta is lightly browned. Add chopped chard to pan in large bunches, adding remaining chard as the greens wilt.
  • Sprinkle in raisins, pour in broth and season with salt and nutmeg. Bring liquid to a boil, reduce heat and simmer greens 10 to 15 minutes until greens are no longer bitter and you are ready to serve. Raisins will plump as the dish cooks through.

TUSCAN SWISS CHARD AND BEANS SOUP

Tuscan Swiss Chard and Beans Soup image

Tuscan Swiss Chard and Beans Soup is made in under 30 minutes and bursts with so much flavor everyone will want a second bowl of this healthy green soup! Perfect for a light starter and easy enough to make during busy weeknights.

Provided by 2 sisters recipes

Time 25m

Number Of Ingredients 13

2 bunches of Swiss Chard
1/4 cup extra virgin olive oil
4 garlic cloves - sliced
1/8 tsp. crushed red pepper flakes
2 cans (15-ounce) cannellini beans or great northern beans - rinsed, drained
1 + 1/2 tsp. salt
1/8 tsp. garlic powder
dash of dried oregano
2 cups of water
2 cups vegetable broth
1 ripe tomato- chopped
fresh cracked black pepper to taste
Optional: 1 Parmigiano-Reggiano rind

Steps:

  • Thinly chop the Swiss Chard and submerge into a large pot of cold water, rinse under running water as needed, and transfer to a colander to drain. Do the same with the second bunch. Set aside.
  • In a large saucepot, heat olive oil over medium heat, add the garlic and red pepper flakes, and saute the garlic for 2 minutes to soften. Turn off the heat. (have the lid to the pot nearby)
  • Toss in the wet Swiss Chard and cover with the lid. Turn back on the heat, on medium heat. Allow the chard to saute and simmer for about 5 minutes. Stirring occasionally. The liquid on the bottom with be watery and that's good. Add salt, garlic powder, and dried oregano.
  • Add the beans. Cover again with the lid, and allow the beans to saute with the chard for 2 minutes. Add an additional tablespoon of extra virgin olive oil to the chard and beans.
  • Pour in the water and vegetable broth and bring to a low simmer. Then toss in the chopped tomato.
  • Cover with lid and simmer the soup for 8 minutes more. Turn off the soup. Here is where you can drop 1 rind of Parmigiano-Reggiano into the soup. Leave it in the soup for 10 minutes. It will slowly melt and give more flavor to this soup. Then fish it out and discard before serving.
  • Taste and season with black pepper to taste. Feel free to add more salt, if you prefer.
  • Yields: 4 to 6 servings.

SWISS CHARD WITH OLIVES

Swiss Chard with Olives image

Swiss chard, or other leafy green, sautéed with green olives, capers, green onions, and rosemary.

Provided by Elise Bauer

Categories     Green Vegetables     Greens     Olive     Swiss Chard

Time 15m

Yield 3

Number Of Ingredients 7

1 ounce pitted green olives (about 10 medium sized), roughly chopped or sliced
1/2 teaspoon fresh rosemary, minced
1 green onion or shallot, chopped
1/2 teaspoon capers
Extra virgin olive oil
1 large bunch Swiss chard, rinsed and patted dry
Freshly ground black pepper to taste

Steps:

  • Make olive, rosemary, green onion, caper mixture: Mix together the olives, rosemary, green onion, and capers with a tablespoon of olive oil and let sit while you prep the chard.
  • Prep chard leaves and stems: Use a knife to cut along the edges of the main stem of each leaf of chard, remove the stems. Cut the stems into 1/2-inch slices and set aside. Cut the leaves separately into 1-inch thick crosswise ribbons. Keep the leaves and the stems separate as you will be cooking them separately.
  • Sauté chard stems: Heat a large, stick-free sauté pan on medium high heat. Coat the bottom of the pan with about a tablespoon of olive oil, just enough to coat. When the oil is hot, add the chard stems. Cook for a couple of minutes, stirring often, until they begin to soften.
  • Add olive mixture, then chard leaves: Stir in the olive mixture. Cook for a minute more, then add the chopped chard leaves to the pan. Use tongs or two large spoons to toss the chard leaves in with the rest of the mixture, so that the chard gets coated with olive oil.

SWISS CHARD WITH GARLIC

Swiss Chard with Garlic image

This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

1 bunch Swiss chard
2 tablespoons olive oil

SWISS CHARD WITH OLIVES

BAKED SWISS CHARD WITH OLIVE OIL AND PARMESAN

Baked Swiss Chard With Olive Oil and Parmesan image

A trendy veggie! Never knew this stuff was so good. The REAL secret is lots of Parmesan. The recipe is derived from two blogs: Kalyn's Kitchen blog and Up A Creek Without A PatL. I made a slight variation: First I cut the stems into smaller pieces and simmered them for about 5 minutes, then added the ripped leaves and simmered a minute or two longer, until everything felt somewhat tender. Then continued as per the directions. At the finish, the cheese is all melty with some chewy or crisp browned pieces. Yum.

Categories     Chard

Time 30m

Yield 3-4 serving(s)

Number Of Ingredients 5

1 bunch chard leaves
1/4 teaspoon salt
olive oil, for spraying pan and chard leaves
1/4 cup coarsely grated parmesan cheese
fresh coarse ground black pepper

Steps:

  • Rip leaves from stems and tear. Parboil or steam in salted water until fairly soft. Drain.
  • Spray a non-stick baking dish with olive oil.
  • Place chard in the pan and mist lightly with olive oil, then sprinkle with cheese. (If doubling the recipe, make two layers, misting each layer with oil and sprinkling with cheese.).
  • Bake about 20 minutes, or until chard is softened and cheese is slightly browned on the edges. Season with fresh ground black pepper if desired and serve hot.

COD WITH SWISS CHARD, OLIVES, AND LEMON

Cod With Swiss Chard, Olives, and Lemon image

This recipe, adapted from the 1/2013 issue of Bon Appetit, uses sieved and chopped lemon instead of just the usual juice. Simmering the whole fruit softens the texture and removes any bitterness in the pith.

Provided by zeldaz51

Categories     Chard

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 11

1 lemon, stem removed
1/4 teaspoon coriander seed
1/4 teaspoon cumin seed
2 tablespoons olive oil, divided
4 four-ounce pieces cod fish fillets, preferably with skin on
kosher salt & freshly ground black pepper
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes (or to taste)
2 large bunch swiss chard, ribs and stems removed, leaves torn (about 1 1/2 pounds total)
2 tablespoons oil-cured black olives, pitted, sliced
2 tablespoons pine nuts, toasted (optional, for garnish)

Steps:

  • Place lemon in a small saucepan; add water just to cover. Place a small heatproof plate inside the saucepan, on top of the lemon, to keep it submerged. Bring water to a boil; reduce heat and simmer until lemon is very tender when pierced with a knife, about 30 minutes. Drain. Cut lemon in half and let it cool.
  • Scoop out the pulp from both lemon halves and press pulp through a coarse-mesh sieve into a small bowl; discard any solids remaining in the sieve. Finely chop the peel and pith and add to pulp. Set aside.
  • Toast coriander and cumin seeds in a small skillet over medium heat, stirring often, until slightly darkened and fragrant, about 3 minutes. Set aside.
  • Coarsely grind the toasted coriander and cumin seeds in a spice mill or with a mortar and pestle.
  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Season fish with spice mixture, salt, and pepper; place skin side down in skillet. Cook until browned and crisp, 5-6 minutes. Turn and cook until just opaque in the center, 2-4 minutes more. Be more cautious cooking the fish if it is skinless, as you do not want the unprotected flesh itself to be brown and crisp; you could also bake or broil the fish if it is skinless.
  • Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium heat. Add garlic and 1/4 teaspoon crushed red pepper flakes; cook, stirring, until fragrant, about 30 seconds. Add chard by the handful, tossing and allowing it to wilt slightly between additions. Season with salt and pepper. Cook, tossing occasionally, until all chard is tender, 5-7 minutes. Set aside.
  • Mix the sliced olives and the reserved lemon mixture into the cooked chard. Season with salt, pepper, and more crushed red pepper flakes, if desired. Serve fish with the chard.
