Time 40m

Yield 4 servings

Number Of Ingredients 19

1 jar pitted California green olives (about 15 ounces)
1/2 cup fresh mint leaves
1 small bunch fresh chives
Zest of 1 grapefruit, divided in half
1 tablespoon grapefruit juice
1/2 teaspoon cumin powder
Pinch ground cinnamon
1 tablespoon extra-virgin olive oil
1/2 cup Champagne or sparkling wine
1/2 coriander seeds, crushed
1/2 teaspoon honey
1/8 teaspoon ground sumac

Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 package prepared naan bread, 2 slices
1 package smoked salmon, about 6 slices torn into smaller slices
4 grapefruit segments, sliced thin
Fresh chives, for garnish, optional

Steps:

  • In a food processor, pulse the olives, mint, handful of chives, half of the grapefruit zest, all of the grapefruit juice, cumin, cinnamon, and olive oil. Dont over process, it should be a little chunky, but still finely chopped.
  • Pour the Champagne into a small saute pan with coriander seeds. Bring to a boil over medium-high heat and reduce until it just turns syrupy. Strain the mixture and set aside to cool.
  • In a small bowl, stir together the cooled Champagne "syrup", remaining grapefruit zest, honey, sumac, and creme fraiche. Season the mixture with salt, and pepper, to taste.
  • Heat a grill pan or large nonstick skillet and warm the naan bread on both sides. Cut the bread in half from top to bottom, then crosswise into 1-inch wide pieces. Smear each one with some tapenade, then top with a small piece of salmon, a piece of grapefruit and dollop of creme fraiche. Balance a short length of chive on top if you want to be extra fancy!

SMOKED SALMON BLINI CANAPéS

Smoked salmon blini canapés image

Classic smoked salmon on blinis with soured cream is the perfect partner to a glass of cold champagne.

Provided by Smiths of Smithfield

Categories     Starters & nibbles

Yield 20-24

Number Of Ingredients 7

1 lemon, zest and juice only
200g/7oz smoked salmon
20-24 ready-made cocktail blinis
1 small shallot, finely chopped
142ml/5fl oz soured cream
small bunch fresh dill
freshly ground black pepper

Steps:

  • Use a lemon zester to remove thin strips of zest from the lemon, taking care to avoid the white pith, which tastes bitter. Put the strips to one side.
  • To dice the salmon, pile up the slices of smoked salmon into a stack. Using a very sharp knife, cut across the stack to give you thin strips. Turn the stack 90 degrees and cut across the strips again so that end up with fine dice. Place into a bowl.
  • Add the juice of half of the lemon, or more to taste, and season with freshly ground black pepper.
  • Add the finely chopped shallot and mix well.
  • To serve, spread a layer of soured cream onto each blini. Place a spoonful of the salmon mixture on top of the soured cream and garnish each with a small sprig of dill and a strip of lemon zest.

Smoked Salmon Canapés image

Gorgeous, bite-sized, flavorful and refined. Let Smoked Salmon Canapés be the star of your next soirée. I promise, they won't disappoint.

Provided by Emily

Categories     Appetizer     Canapé

Time 20m

Yield 28 Canapés

Number Of Ingredients 5

4-5 whole mini cucumbers (, Pure Flavor Baby Gourmet)
4 oz smoked salmon (, Spence & Co)
1 oz Whole30 mayonnaise (, Tessemae's)
1 tsp lemon juice (, fresh)
1 pack dill (, fresh)

Steps:

  • Slice the mini cucumbers into evenly-sized discs. Set on a platter, evenly spaced.
  • Next cut the smoked salmon filets into small, evently-sized triangles or squares. Roll/fold and place on the cucumber slices tip-side down so the salmon stays rolled/folded. You want the salmon to be slightly smaller than the cucumber once placed on the cucumber.
  • Combine lemon juice and mayonnaise in a small bowl. Place in a piping bag fitted with a round size 1 or 2 tip. Gently and carefully pipe a small dot of lemon/mayo mix on top of each canapé.
  • Finally, garnish each canapé with a small sprig of dill. Be patient with this part, and it may require some tweezers.
  • Serve immediately, or store plated in the fridge for up to one hour.

25 MINUTE SMOKED SALMON CANAPéS WITH CUCUMBER

25 Minute Smoked Salmon Canapés With Cucumber image

Looking for an easy, yet super elegant dinner party appetizer idea? These smoked salmon canapés with cucumber are the perfect bite sized food. The canapés are made with seafood and a lemon artichoke cream cheese spread. These party snacks can be served cold, making them an easy dish to whip together. Serve the salmon canapé appetizers alone, or with your other favorite hors d'oeuvres for a full party spread.

Provided by Jessica Mode

Categories     Appetizer     Snack

Time 25m

Number Of Ingredients 10

4 slices pita bread
8 ounces cream cheese
2 artichoke hearts (tough outer leaves removed)
2 cloves garlic (outer paper removed)
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon dried parsley
1/4 teaspoon kosher salt
1 large English cucumber (outer peel removed)
2 tablespoons unsalted butter (room temperature)
6 ounces cold smoked salmon (sliced into 1/2 inch x 1 1/2 inch pieces)

Steps:

  • Heat oven to 200°F.
  • Toast pita bread straight on the oven racks for 15 minutes until golden brown and warmed.
  • To a blender add in cream cheese, artichoke hearts, garlic cloves, lemon, parsley, and salt. Blend until thoroughly combined and no large pieces of artichoke remain. Add mixture to a piping bag fitted with Wilton 1M tip. Set aside.
  • Using a vegetable peeler, carefully and slowly shave long ribbon-like strips of cucumber. Be careful not to break the strips as you peel. Set aside.
  • To assemble the canapé, cut toasted pita into 2.5 inch circles using a cookie cutter or jar lid. Spread a thin layer of butter over the pita. Pipe cream cheese along the top of the pita, gently twisting as you pipe to help release at the tip. Take a strip of cucumber and gently fold it over on itself four times, being sure to tuck the ends behind the nicely folded ribbon. Place the cucumber ribbon on the piped cream cheese, making sure it sticks in place. Take two strips of salmon, and gently roll together form a rose. Place the salmon rose in the center of the canapé. Serve immediately.

10 THINGS TO DO WITH SMOKED SALMON | BBC GOOD FOOD

From bbcgoodfood.com
  • Smoked salmon risotto. Treat yourself to a deliciously decadent midweek meal with our smoked salmon risotto. This simple dish oozes sophistication. The zesty lemon cuts through the creamy mascarpone base to create a perfectly balanced dish.
  • Smoked salmon with eggs. If you've not tried salmon with eggs, we recommend you do so soon. Go for this delicious scramble for breakfast. It's guaranteed empty plates – who could resist mopping up buttery eggs with a Tabasco kick with a second helping of hot toast?
  • Smoked salmon with scones and potato cakes. Smoked salmon makes a delicious topping for scones, especially when paired with soft cheese like in our seeded bagel-inspired recipe.
  • Smoked salmon pâté. Blitzing smoked salmon into a creamy pâté allows for use of thrifty fish trimmings. As unglamorous as they sound, they are a lot cheaper than traditional slices and nobody will tell the difference once cut up really small.
  • Smoked salmon gratin. As much as this beautiful fish deserves to take centre stage, it also works well dotted into spectacular side dishes. A smoked salmon potato bake is perfect for dinner parties or something a little different for Sunday dinner.
  • Smoked salmon sushi and smaller bites. There are infinite opportunities to use smoked salmon in the wonderful world of canapés. The classic option is to serve a slice of the fish on a pancake or blini, but try it out in homemade sushi, in tortilla rolls with cream cheese, or on toasted crostini too.
  • Potted smoked salmon. Potted fish is a vastly underrated starter, traditionally made with crab, shrimps or mackerel. But a mix of both smoked and fresh salmon works a treat.
  • Smoked salmon tart. Bake an indulgent tart combining smoked salmon with dill and cream, and experiment with a few capers and some sliced red onion. Serve with crispy salad and flavoured crème fraÎche and try adding wholegrain mustard, horseradish or lemon juice and black pepper.
  • Smoked salmon soup. Try adding smoked salmon to soup and achieve a finish similar to traditional Scottish cullen skink. Add your fish to a leek and potato base right at the end of cooking, so it retains its texture but impart that salty, smoked flavour.
  • Smoked salmon pasta. If you've not quite managed to make your way through a whole pack, use up those last few slices in a pasta dish. There are tons of ways to serve it, but typically it works well with lemon, crème frâiche and with light herbs like basil or dill.
