Huckleberry Peach Cobbler image

This cobbler combines huckleberries and peaches. Blueberries can be substituted if huckleberries aren't available. It's great served warm with vanilla ice cream. This cobbler works great with either fresh or frozen fruits.

2 cups huckleberries
3 cups sliced peaches
¼ cup cornstarch
⅔ cup white sugar
2 tablespoons butter
1 cup all-purpose flour
2 teaspoons baking powder
¼ cup white sugar
¼ teaspoon salt
¼ cup rolled oats
1 teaspoon grated lemon zest
¼ teaspoon ground cinnamon
¼ cup butter
½ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • If you're using frozen fruit, thaw and drain it before proceeding. Combine fruit in an ungreased 2-quart casserole dish. Mix the cornstarch and 2/3 cup sugar, and toss with fruit mixture. Dot with 2 tablespoons butter and set aside.
  • Sift the flour, baking powder, sugar, and salt into a bowl. Stir in the oats, lemon zest, and cinnamon. Cut in 1/4 cup butter until it's the size of small peas. Stir in milk to form a stiff batter. Spoon dollops of cobbler batter over the fruit in the casserole dish; the batter may not entirely cover the fruit.
  • Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes. Allow to cool about 15 minutes. Serve warm.

¼ cup butter
½ cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup milk
2 ½ cups huckleberries
¾ cup white sugar
½ cup boiling water
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Grease the bottom of a 9 inch square pan.
  • In a large bowl, cream 1/4 cup butter and 1/2 cup sugar. In a separate small bowl, combine flour, baking powder and salt. Stir into butter mixture. Stir in milk; mixture will be thick and lumpy. Spread batter into the prepared pan.
  • In a large bowl, combine berries, 3/4 cup sugar and 1/2 cup boiling water. Pour over the batter in the pan. Dot the top with remaining 1 tablespoon of butter.
  • Bake in the preheated oven for 45 to 50 minutes.

3 cups frozen huckleberries, thawed
1 cup sugar, plus 2 tablespoons
1 cup unbleached all-purpose flour
1/4 cup cornmeal
1 teaspoon baking powder

1 cup whole milk
1 vanilla bean, seeds scraped, or 1 teaspoon pure vanilla extract

Steps:

  • Heat oven to 350 degrees. Melt butter in a 10-inch cast-iron skillet in oven, about 5 minutes.
  • Meanwhile, toss huckleberries with 2 tablespoons sugar in a medium bowl. Whisk together flour, cornmeal, baking powder, salt, and remaining 1 cup sugar in a large bowl. Add milk and vanilla. 2 tablespoons plus 1 cup sugar, divided
1 teaspoon baking powder

1/8 teaspoon salt
2 cups fresh or frozen raspberries, thawed
2 cups fresh or frozen blueberries, thawed
Low-fat vanilla frozen yogurt, optional

Steps:

  • Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In another bowl, whisk together egg, milk and oil; add to dry ingredients, stirring just until moistened (batter will be thick). 18 ounces yellow butter recipe cake mix
3/4 cup butter
1 cup pecans, finely ground
1 cup quick-cooking oatmeal
1 tablespoon cinnamon
1 1/2 cups fresh huckleberries, frozen also ok

Steps:

  • Preheat oven to 350°.
  • Mix first five ingredients until crumbly.
  • Put half the mixture in the bottom of a 13- by 9-inch baking pan (sprayed with cooking oil) and pat down.
  • Distribute huckleberries over bottom layer.
  • Sprinkle remaining crumb mixture over the top and pat lightly.
  • Bake 30 minutes or until lightly browned.

4 cups huckleberries, fresh or frozen
½ cup sugar
2 tablespoons cornstarch
1 teaspoon lime juice
1 teaspoon lime zest
½ teaspoon kosher salt
1 vanilla bean, seeds scraped
2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon kosher salt
6 tablespoons butter
1 cup milk
⅓ cup finely chopped macadamia nuts
Vanilla ice cream, for serving

Steps:

  • Make the filling: Preheat the oven to 350º and grease a 10-inch cast-iron skillet with butter. In a medium bowl, mix together the huckleberries, sugar, cornstarch, lime juice, lime zest, salt and vanilla seeds to coat. Let sit while you prepare the topping.
  • Make the topping: In a medium bowl, whisk together the flour, sugar, baking powder and salt. Using your fingers, work the butter into the flour mixture until pea-size clumps form. Stir in the milk and macadamia nuts to form a dough.
  • Toss the berry mixture again now that the sugar has started to pull out the juices of the berries. Transfer to the greased skillet and scoop heaping tablespoonfuls of dough evenly over the filling. Bake until golden and bubbling, 25 to 30 minutes. Remove from the oven and let cool for 10 minutes. Serve with vanilla ice cream.
