SLOW COOKER CREAMY LEMON CHICKEN
Slow Cooker Creamy Lemon Chicken with butter, garlic and lemon coating tender chicken breasts in a creamy sauce. Even great as a pasta topping!

Steps:
- In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat.
- Add the kosher salt, black pepper and Italian seasoning to the chicken and add it to the pan.
- Cook on each side for 4-6 minutes.
- Add the chicken to your slow cooker.
- Cover with lemon juice, lemon zest, garlic and the rest of the butter in pieces (I added the lemons in the before picture just for reference. Don't cook the lemons in the slow cooker).
- Cook on low for 4 hours or on high for 2 hours.
- In a large measuring cup add the half and half, cornstarch and chicken base and whisk well.
- Add the liquid, mix, and cook an additional hour on high.

- In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
- In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
- Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

- Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. Add water, lemon juice, garlic and bouillon to the skillet; bring to a boil, stirring to loosen browned bits. Pour over chicken. , Cover and cook on low for 5-6 hours. Baste chicken with cooking juices. Add parsley. Cover and cook 15-30 minutes longer or until meat juices run clear. Serve with rice. (If desired, cooking juices may be thickened before serving.)

SLOW COOKER LEMON CHICKEN
Steps:
- Season the chicken pieces with salt and pepper. Sprinkle half of garlic and oregano over the chicken.
- Melt butter in a sauté pan over medium heat and brown chicken on all sides.
- Transfer chicken to crock pot. Sprinkle with remaining oregano and garlic. Add wine or sherry to the sauté pan and stir to loosen brown bits; pour into slow cooker.
- Cover and cook on low (200 F) for 7 to 8 hours. Add lemon juice last hour.
- Skim fat from juices and pour to a serving bowl; thicken juices, if desired.

- For the seasoning: Mix all the seasoning ingredients together in a bowl. Using your fingers, gently slide your fingers between the meat and the skin, entering at either end. Without tearing the skin, separate the skin from the meat of the breast, thighs, and legs of the chicken. Grab a handful of the seasoning and rub half of the mixture between the skin and meat. If you get a good dollop under the skin, you can lay the skin back down and use your fingers to massage the outside of the skin and work the seasoning across the surface of the meat. Rub the remaining mixture inside the cavity of the chicken.
- For the poaching liquid: Combine lemon juice, soy sauce, and chicken broth. Pour mixture over the chicken in the slow-cooker.
- Put lemon rinds (reserved from squeezing the juice), one whole bouillon cube, and a few of the garlic cloves inside the cavity of the chicken. Arrange lemon quarters, the remaining garlic cloves, and the sprigs of thyme around the chicken toward the edges of the cooker. Crumble the other bouillon cube over the chicken and rub it into the skin.
- Place the lid on the cooker and cook on HIGH for 4 hours. (Note: This recipe is best when done on HIGH, but can also be done in 6-8 hours on LOW.).
- Twenty to thirty minutes before the time is done, pour reserved lemon juice mixture over chicken and add the rosemary sprigs. (Rosemary tends to get bitter and antiseptic tasting if cooked the entire time in the slow-cooker.).
- Remove chicken from the slow-cooker and allow it to rest on the carving board (or handy cookie sheet) for about 20 minutes. The meat actually continues cooking during this resting period and the juices will redistribute through the meat. When ready to serve, tear off the skin and discard. Use your fingers to pull off the legs--the bones should come apart with a gentle tug, but if they don't, use a carving knife to wedge them apart. Keep using your fingers to work over the chicken, placing the meat on a serving platter and reserving the bones for another use (like home-made chicken broth!). Serve immediately!

- 1-Peel and slice red onion and add to the bottom of the slow cooker in one layer.
- 2-Add chicken thighs on top in one layer.
- 3-Wash and half baby potatoes and add to slow-cooker.
- 4-In a small bowl mix zest of 1 lemon, juice of that same lemon, olive oil, honey, thyme, sea salt, pepper and finely chopped garlic and then pour over ingredients in slow cooker.
- 5-Put lid on and secure, then set to high for 3-4 hours or low for 6-8 hours (depending on your schedule. 3 hours on high being the minimum and 4 the maximum and 6 hours being the minimum and 8 hours the maximum when set on low).
- 6-15-20 minutes before the time is over, set slow cooker to high and add asparagus on top and put lid back on. The thicker the asparagus, the longer it will take.
- 7-optional but recommended: 5 minutes before the time is over, remove the chicken thighs, place on a baking sheet and put under the broiler on high for 3-5 minutes or until the skin is golden.
- 8-Enjoy!
