CROCK POT ITALIAN SAUSAGE DINNER
This is one of my mom's recipes when she wanted to change things from just meat and potatoes all the time. I have adjusted this recipe after additional review.

Steps:
- Place water, sausage and green onions in crock pot.
- Add steak sauce, red pepper flakes, Italian seasoning and salt.
- Cover with lid and cook on low for 6-8 hours or on high for 3 hours.
- Stir in uncooked rice and tomatoes with juice.
- Cover and cook an additional 1 hour.

- Place pork chops and sausage in a 5- or 6-qt. slow cooker. Place tomatoes, tomato paste, Italian seasoning, garlic and pepper flakes in a food processor; pulse until chunky. Pour over meats. Cook, covered, on low 4 hours., Add onion and peppers to slow cooker. Cook, covered, on low 2-3 hours longer or until pork is tender, a thermometer inserted in sausages reads 160°, and vegetables are crisp-tender. Remove pork chops and sausages from slow cooker. Remove pork from bones; discard bones. Shred meat with two forks and cut sausages into 2-in. pieces; return to slow cooker. Serve on buns with cheese.

- Cut sausage into 4 or 5" pieces and brown on all sides in batches in skillet. Saute peppers, onions, and garlic in drippings. Combine tomato puree, sauce, and paste in bowl. Add seasonings and sugar. Layer half of sausage, onions, and peppers in 6qt cooker. Cover with half the tomato mixture. Repeat layers. Cover. Cook on high 1 hour and low 5-6 hours. - Transfer to crock pot.
- Add the spaghetti sauce, peppers, water, cheese, oregano and basil.

A hearty dish for a busy day. Also good as party or potluck food. The flavors of Italian sausage, spaghetti sauce, onions, and spinach meld perfectly in the crock pot. Despite all the healthy veggies its a real guy pleaser! ;)

Steps:
- Brown sausages in skillet or on grill.
- Peel and slice onions. Put in bottom of 6qt crock pot.
- If using peppers, seed and slice vertically. Layer on top of the onions.
- Pour frozen spinach into crock pot.
- Arrange sausages on top of the spinach.
- Pour spaghetti sauce evenly over top of everything.
- Cook on high for 2 hours then on low for 3-4 hours. OR, thaw the spinach first and cook on low for 6+ hours.
- Serve over pasta, over rice, or with a hearty, crusty, bread. Pass grated Parmesan at the table.
- Note -- If preparing for a party or a potluck you may wish to slice the sausage and make 2 layers of ingredients to better control the portions. This version could have shredded mozzarella incorporated into the layers and on top.
