- Drain pineapple, reserving juice. Place pineapple and 2 tablespoons juice in a large bowl (set the remaining juice aside for glaze). Add the egg, bread crumbs and pepper to pineapple. Crumble sausage and beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 450° for 12-15 minutes or until a thermometer reads 160°., Meanwhile, in a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs. I love these little bites, and so do most of my clients. I use my own homemade meatballs, and a "special" sauce to coat them. They're easy to make, and can keep your guests happy, while waiting for the main course to arrive. So, you ready... Let's get into the kitchen.

- 1. PREP WORK

- 3. Drain the juice from the can of sliced pineapple, and reserve.
- 4. Cut up the pineapple into 1-inch (2.5cm) chunks, and reserve.
- 5. THE GLAZE
- 6. Gather your ingredients.
- 7. Add all the ingredients to a saucepan over medium heat.
- 8. Chef's Note: If the amount of the pineapple juice doesn't equal 1.5 cups, then add some water to make up the difference.
- 9. Whisk until thoroughly combined.
- 10. Allow the glaze to simmer until the sauce begins to thicken, about 10 - 12 minutes.
- 11. Add the meatballs, and continue to simmer for an additional 5 - 7 minutes.
- 12. PLATE/PRESENT
- 13. Place a pineapple chunk on top, and hold together with a skewer, or toothpick.
- 14. Serve while still nice and warm. Enjoy.
- 15. Keep the faith, and keep cooking.

GLAZED PINEAPPLE
Steps:
- Mix 4 tablespoons melted butter, 1/4 cup light brown sugar, 1/4 teaspoon each curry powder, cinnamon and vanilla extract, a pinch of salt and a splash of dark rum in a bowl. Slice a pineapple in half lengthwise (keeping the top attached), then cut each half into 3 long wedges; cut out the core. Place 2 wedges on a sheet of foil; brush with the spiced butter and fold up. Repeat to make 2 more packets; grill over medium heat until the pineapple is soft and golden on the bottom, 15 to 20 minutes.
CAJUN APPETIZER MEATBALLS
This is a great appetizer meatball recipe with a little kick to it. It can be made ahead and frozen in resealable plastic bags, then added to sauce and heated.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
- In a large bowl, mix thoroughly the ground beef, hot pepper sauce, Cajun seasoning, Worcestershire sauce, parsley, onion, bread crumbs, milk, and egg.
- Form the mixture into golf ball sized meatballs and place on the prepared baking sheet. Bake in preheated oven for 30 to 40 minutes, or until there is no pink left in the middle.
- In a small bowl, combine the barbeque sauce and peach preserves.
- When meatballs are done, place in a serving dish and cover with the barbeque sauce mixture. Toss to coat.

- Preheat oven to 350F degrees.
- First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
- Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
- To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
- Add vinegar, soy sauce and worcestershire sauce; stir.
- Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
- Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
- Bake in preheated oven for 30 minutes.
- If you want a lot, this recipe doubles well.

- Soak the bread in the milk. Combine the bread, eggs, horseradish, salt, and pepper in a mixing bowl; beat well at medium speed of an electric mixer.
