This delicious creamy lemon salad dressing only takes a few pantry ingredients and a couple minutes to make!

1/4 cup fresh squeezed lemon juice
1/4 cup extra-virgin olive oil
1/4 cup real maple syrup
2 dashes finely ground black pepper
1/4 cup real mayonnaise

Steps:

  • In a medium-sized bowl, combine lemon juice, olive oil, maple syrup and finely ground black pepper. Mix or whisk well, to fully blend ingredients.
  • Add mayonnaise to blended salad dressing. Whisk salad dressing well, until smooth.
  • Place salad dressing in an airtight, covered container and refrigerate until ready to serve. The longer salad dressing is refrigerated, the better the flavors can develop.
  • Right before using, give the salad dressing a good stir or shake to re-mix ingredients.
  • Enjoy this delicious salad dressing!

Ellen Greenblatt, a friend who lives in Berkeley, Calif., shared this recipe with me. Toss a green salad with this dressing, and no additional herbs will be necessary. It is perfect for chicken salad or drizzled over a cooked chicken breast; use it over shrimp, salmon or sliced tomatoes. Ms. Greenblatt uses a mini food processor, but the dressing also can be made in a mortar and pestle. Try it on some of the salads in the Recipes for Health index.

About 1/3 cup fresh basil leaves
2 tablespoons plus 1 teaspoon fresh lemon juice
Salt
lots of freshly ground black pepper
2 to 3 teaspoons mild honey (to taste)
6 tablespoons extra virgin olive oil

Steps:

  • Place the basil in the bowl of a mini food processor and pulse until finely chopped. Scrape down the sides of the bowl. Add the lemon juice, salt, pepper and honey, and pulse several times until combined. Scrape down the sides of the bowl, then add the olive oil and process until emulsified. Taste and adjust honey and salt. Serve right away to preserve the color.

Lemons: 2 (about 3-4 Tablespoons fresh lemon juice)
Sweet White Wine Vinegar: 1 Tablespoon
Extra Virgin Olive Oil: 4 Tablespoons
Dijon Mustard: 1 Tablespoon
Water: 1 Tablespoon
Sea Salt: 0.25 teaspoon
Ground Black Pepper: pinch (1/8th teaspoon)

Steps:

  • This creamy lemon vinaigrette has 6 ingredients and some water to thin it out. Sweet white vinegar pairs so well with the tart lemon but any vinegar can be used to make this vinaigrette. You can substitute with plain white vinegar, apple cider vinegar or even champagne vinegar. For added sweetness add just a bit of sugar, honey or maple syrup. Though dijon is my personal favorite, any mustard that you like or have on hand will work! As this is a lemon forward dressing, I highly recommend going with the real thing - fresh lemons!
  • To your food processor or blender, add all of the ingredients and blend until well combined. Taste and adjust seasoning by adding a bit more salt, pepper, and/or lemon juice if needed.
  • It is best to store this vinaigrette in a jar that has an air-tight lid. Store the creamy lemon vinaigrette in the refrigerator for up to 2 weeks! As it sits, the oil will separate and harden a bit. Simply give the jar a shake to re-emulsify or pour it back into your blender for a quick blend.

Meyer lemons are much less tart and acidic than traditional lemons, like a cross between a lemon and a mandarin. They're also sweeter, so no additional sugar is needed. I love this on kale salad, but also drizzled over roasted veggies or grilled salmon or trout.
