OUR BEST AMBROSIA RECIPE EVER

Our Best Ambrosia Recipe Ever image

Provided by Emily Nabors Hall

Time 20m

Number Of Ingredients 7

1 cup plain whole-milk Greek yogurt
2 tablespoons honey, plus more for drizzling
2 teaspoons vanilla bean paste
¼ teaspoon kosher salt
4 assorted medium oranges (such as navel, Cara Cara, and blood oranges)
1 fresh medium pineapple, peeled and cored
½ cup toasted, sweetened coconut chips (such as Dang)

Steps:

  • Whisk together Greek yogurt, honey, 1 tablespoon water, vanilla bean paste, and salt in a medium bowl until smooth. (Store yogurt mixture, covered, in the refrigerator up to 2 days.)
  • Cut peel and pith from oranges; cut oranges into ¼-inch-thick rounds. Cut pineapple lengthwise into ¼-inch-thick planks; cut planks into 2-inch pieces. (Store orange rounds and pineapple pieces in an airtight container in the refrigerator up to 1 day.)

Categories     Dessert     No-Cook     Thanksgiving     Orange     Cherry     Banana     Coconut     Pineapple     Vegan     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 8 servings

Number Of Ingredients 5

6 navel oranges
1 pineapple, peeled, cored, and cut into cubes
1 cup coconut, shredded fresh, fresh frozen, or packaged sweetened, according to taste or tradition
1 large banana
1 small (4 1/2-ounce) bottle maraschino cherries, drained well (optional)

Steps:

  • Peel the oranges, taking care to remove all the white pith. Slice the oranges over a bowl or storage container so that you catch any juice, and add the slices to the bowl. Circular slices look prettiest, hold together best, and are easiest.
  • Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.
  • When ready to serve, slice the banana and toss it with other fruits. Add the cherries last.
  • Serve the ambrosia in your prettiest glass bowl. It will become a tradition.

OLD SOUTH AMBROSIA

Provided by Mary Moss Darden

Categories     Fruit     Brunch     Dessert     No-Cook     Buffet     Orange     Apple     Banana     Coconut     Pineapple     Pecan     Shower     Chill     Vegan     Potluck

Number Of Ingredients 9

1 fresh coconut
1 can crushed pineapple, with juice
2 apples, chopped
1/2 cup pecans, coarsely broken
5 oranges
1 can fruit cocktail, with juice
2 bananas, sliced
sugar to taste
cherries for garnish

Steps:

  • Grate coconut in bowl. Add peeled and sectioned oranges; discard membrane and seeds. Add pineapple, fruit cocktail, apples, bananas, and nuts. Sweeten with sugar, being careful not to add too much as the syrup from the fruit is usually sufficient. Chill before serving. This dessert is pretty garnished with cherries and served in a crystal bowl.

  • Peel the oranges with a sharp paring knife. Make sure to remove all of the white pith. Next, section the oranges by placing the blade along the inside of the orange membrane for each section. Run the blade to the center of the orange and pop out the orange section. When you section the oranges, be sure to do this over a bowl to catch all of the juice.
  • Place the orange sections in the bowl with the juice from the oranges and mix in the powdered sugar. Place in a serving dish and top with the coconut and if desired a Maraschino cherry.
