GRILLED POTATOES IN FOIL (POTATO PACKETS)
Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

Steps:
- Place foil packets on the counter and spray with cooking spray.
- Wash and slice potatoes (and onions/mushrooms if using).
- Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.
- Grill over medium heat for 30 minutes or until soft.

- Preheat grill for medium heat.
- Layer sliced potatoes on aluminum foil with the onion, garlic, basil, and butter. Season with salt and pepper. Fold foil around the potatoes to make a packet.
- Place potato packet on heated grill over indirect heat, and cook for 30 minutes, or until potatoes are tender. Turn over packet halfway through cooking.

- Preheat a grill for medium heat.
- Prepare 8 pieces of aluminum foil with vegetable cooking spray. Combine potatoes, green onion, soup, cheese, (and bacon and mushrooms if using) in a bowl. Season to taste with salt and pepper. Evenly divide the potato mixture among the squares of aluminum foil. Dot with butter. Fold into foil packets, sealing well.
- Cook foil packets on the grill for 12 to 20 minutes, until the potatoes have cooked.

- In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

GRILLED SCALLOPED POTATO PACKETS
This recipe was first made for me by my good friend, Jeff Hahaj. I like adding hot pepper rings to mine.

Steps:
- Heat your grill to medium high.
- Tear off 8 sheets of aluminum foil, 12x15 or so.
- Butter 4 sheets and lay them out on counter.
- Slice spuds and onion thin.
- Take 1/3 of each potato slices and lay out on buttered foil the size of your cheese slice.
- Top with onion's and ham, then with cheese, salt, pepper and cayenne.
- Repeat ending with a few spuds on top.
- Fold foil into tight packets and cover packets with one more sheet of foil.
- Place on grill, cover and cook for 20 minutes, turn and cook another 20 minutes.
- Unwrap and eat.
- I have pre-made these to take camping.
THE BEST SCALLOPED POTATOES
Creamy, cheesy and perfectly indulgent, scalloped potatoes are a classic for good reason. - Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with unsalted butter.
- Peel the potatoes and cut them into 1/8-inch-thick slices using a mandoline or sharp knife.
- Add the sliced potatoes, heavy cream, whole milk, 2 tablespoons butter, garlic, thyme, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the nutmeg to a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until the potatoes are tender and almost cooked through but still hold their shape, about 5 minutes. (They should not be soft and falling apart.) Remove the saucepan from the heat.
- Add the Gruyere and Parmesan, stirring gently to combine. Pour the potato mixture into the prepared baking dish. Bake until the top is light golden brown and the potatoes are cooked through and tender, about 45 minutes. Let rest for 10 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.

- Heat grill to medium heat.
- Microwave potatoes, carrots and water in microwaveable bowl covered with waxed paper on HIGH 5 to 7 min. or just until potatoes are crisp-tender; drain well. Mix 1/3 cup cheese and dressing. Add to potato mixture; mix lightly.
- Spoon onto center of large sheet of heavy-duty foil sprayed with cooking spray; fold to make packet. Place on upper shelf of grill.
- Grill 15 to 20 min. or until vegetables are tender. Cut slits in foil to release steam before carefully opening packet. Sprinkle potato mixture with parsley and remaining cheese.
