BEEF AND SPICY SAUSAGE FOLDOVERS
Make these baked foldovers a new taco night tradition. They're great reheated, too!

Steps:
- Heat oven to 400°F. Grease large cookie sheet with shortening or cooking spray.
- In 10-inch skillet, cook beef and sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix and tomatoes. Reduce heat to medium; cook 5 minutes, stirring occasionally.
- Meanwhile, in large bowl, stir Bisquick mix and boiling water with fork until dough forms. On surface sprinkled with Bisquick mix, roll dough in Bisquick mix to coat; knead 20 times. Divide dough into 6 balls, about 1/2 cup each. Roll or pat each ball into 7-inch round.
- Stir cheese into beef mixture. Spoon about 1/2 cup beef mixture onto half of each round. Moisten edge of round with water. Fold round over beef mixture; press edge with fork to seal. Cut 3 small slits in top of each crust to allow steam to escape. Carefully move to cookie sheet with spatula.
- Bake 20 to 22 minutes or until light golden brown. Serve each foldover with 2 tablespoons each sour cream and salsa. Garnish with cilantro.

ALL AMERICAN BEEF TACO

- Make a taco mold by rolling out aluminum foil and folding it over in 10-inch increments until you have a 4-sheet-thick piece of foil. Fold the large foil square in half horizontally, bringing the bottom to the top, and then turn 90 degrees. Crimp over the top and bottom edges by 1 inch, and then fold over the sides by 1 inch. Place the aluminum foil roll or a narrow rolling pin into the center of the foil square and bring the sides together to create a hollow, narrow tube to mold the taco, making sure it can stand up on the long side.
- Heat the oven to 250 degrees F.
- Heat the peanut oil in a 12-inch cast iron skillet over medium heat until it reaches 350 degrees F on a deep-fry thermometer, about 5 minutes. Adjust the heat to maintain the temperature.
- Shape 1 tortilla around the aluminum foil mold, forming a taco shape. Use tongs to hold up the sides against the mold and put the bottom of the tortilla into the hot oil and fry for 20 seconds. Lay 1 side of the tortilla down in the hot oil and fry for 30 seconds. Flip the tortilla over and fry for an additional 30 seconds. Remove the taco shell to a cooling rack set over a newspaper lined half sheet pan and cool for 30 seconds before removing the mold. Sprinkle the hot tortillas with kosher salt, to taste. Repeat frying procedure with the remaining tortillas. Keep the taco shells warm in the heated oven while preparing the filling.
- Drain all but 2 tablespoons of the peanut oil from the skillet and return to medium heat. Once the oil shimmers, add the onion and cook until softened and lightly browned around the edges, about 3 to 4 minutes. Add the ground meat, 1 teaspoon salt, and garlic. Cook until browned, about 3 to 4 minutes, stirring occasionally, to break up the meat. Add Taco Potion and beef broth. Bring to a simmer and cook, uncovered, until sauce is slightly thickened, 2 to 3 minutes.
- Assemble each taco with meat mixture, panela, jalapeno slices, lettuce, tomatoes, and cilantro. Serve immediately.
- Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 1 month.
BEEF TACOS

- Preheat the oven to 325 degrees F.
- For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
- For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
- Serve with the grated cheese, diced tomatoes and shredded lettuce.
TACO FOLDOVERS
This is like a modified quesadilla. I like the buttery taste of the crust with the spice of the filling. I often used leftover grilled chicken in this recipe. If I use fresh salsa in the filling, I omit the additional tomatoes.

- Heat oven to 450F.
- If using homemade pie crust, roll into 2 rounds (as if for double crust pie).
- Place pie crusts on ungreased cookie sheet.
- Combine mayo and salsa.
- Spread mayo mixture evenly over each pie crust.
- Sprinkle half of each crust with remaining ingredients.
- Fold untopped half of each crust over filling; DO NOT SEAL.
- Bake at 450F for 14 to 18 minutes or until golden brown.
- Cut into wedges (like a quesadilla) to serve.
- If desired, top with shredded lettuce, sliced ripe olives, sour cream and additional salsa.

- Brown meat with onions in large skillet; drain. Return to skillet. Stir in corn, ketchup and steak sauce; set aside.

Use the turkey and Reduced Fat Crescent Rolls to make this decently healthy, and the soy cheese to make it dairy-free.

- Brown meat and onion; stir in barbecue sauce and set aside.
- Heat oven to 375.
- Unroll crescent dough into four long rectangles on Pam-sprayed cookie sheet. Overlap long sides; firmly press perforations and edges to seal. Pat to form a 15x13-inch rectangle.
- Spread meat mixture lengthwise, in a 4-inch wide strip, down center of dough to within 1 inch of ends. Top meat with cheese slices.
- Fold shorter sides of dough 1-inch over filling. Bring long sides of dough rectangle over filling, overlapping edges; pinch edge to seal. Sprinkle with sesame seeds.
