EASY ZESTY BLACK BEAN CHILI RECIPE
A comforting, easy black bean chili recipe with plenty of piquant spices. Just the right amount of heat. Chop, pour, simmer, done. One of my favorites.

Steps:
- Heat the oil in a large pot and add the jalapeno peppers and onions. Cook them down about 5 minutes, or until they become tender.
- Add the garlic and cook for another minute, until the garlic becomes fragrant.
- Add the ground turkey and break apart with a wooden spoon. Cook until the turkey is mostly cooked through, about 5 minutes.
- Stir in the tomato paste and cook another minute.
- Add in the beans, chicken stock (or beer), and seasonings, plus hot sauce to taste. Bring to a boil.
- Reduce heat and simmer for at least 30 minutes. You can easily let it simmer for an hour to let the flavors develop even further.
- Serve!

- In a large skillet, cook and crumble turkey with onion over medium-high heat until no longer pink, 5-7 minutes. Transfer to a 4-qt. slow cooker., Stir in all remaining ingredients except toppings. Cook, covered, on low until flavors are blended, 6-8 hours. Top as desired.

- In a large pot, heat the olive oil and fry the garlic and onions for 5 mins until almost softened. Add the pimenton and cumin, cook for a few mins, then add the vinegar, sugar, tomatoes and some seasoning. Cook for 10 mins.
- Pour in the beans and cook for another 10 mins. Serve with rice and the accompaniments of your choice in small bowls.

- Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers, and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin, and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce. Bring chili to boil, stirring occasionally. Reduce heat to medium-low and simmer until flavors blend and chili thickens, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.

- Place the red and yellow fresh peppers on the grill and cook until charred. (Can be charred on the stovetop if you have a gas stove.) With tongs, place them in a paper bag to sweat, about 3 minutes. Remove the peppers from the bags, allow to cool, and remove the skins. Core and seed, then cut them into bite-size pieces, about 1/2 inch each, and set aside in a bowl.
- In a large fry pan, toast the dried spices and a good teaspoon of salt over medium heat just for a few minutes or until the spices become fragrant. Remove the pan from the heat immediately and pour the toasted spices into a bowl and set aside.
- In a large 5-quart pot, pour enough olive oil to cover the bottom of the pot and heat up the oil. Add the chopped onions and the jalapeños and heat until they're all softened; add the garlic and cook, stirring frequently, until the garlic is transparent, just a few minutes. Add the tomatoes and black beans, (and their juices), and the spice mixture, and stir well. Cover the pot and lower the heat slightly and cook for 15 minutes.
- While the chili is cooking brew the coffee then add after the 15 minutes; stir well, then cook the chili another 10 more minutes. Taste, and adjust seasonings as necessary. Remove from heat and start serving it up!

SQUASH-BLACK BEAN CHILI

- Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the onion and bell peppers, season with salt and cook, stirring occasionally, until the vegetables are tender and lightly browned, about 10 minutes. Add the garlic and cook 1 minute. Add the chile powders, cumin, coriander, oregano and tomato paste. Cook, stirring, until the vegetables are coated in the spice mixture, about 2 minutes, adding a splash of water if the mixture is dry.
- Add 2 cups water, the tomatoes, beans, bay leaves and 1 teaspoon salt to the pot. Bring to a boil, then reduce the heat to a simmer and stir in the squash and rutabaga. Partially cover and cook, stirring occasionally, until the vegetables are tender and the chili is slightly thickened, 30 to 40 minutes. (Add up to 1/2 cup water if the chili gets too thick.) Remove the bay leaves and season with salt. Serve with assorted toppings and cornbread.
BEEF AND BLACK BEAN CHILI WITH TOASTED CUMIN CREMA AND AVOCADO RELISH
Steps:
- Heat oil in a large Dutch oven over high heat. Season the beef with salt and pepper, and saute until browned on all sides. Transfer the meat to a plate and remove all but 3 tablespoons of the fat from the pan.
- Add the onions to the pan and cook until soft. Add the garlic and cook for 2 minutes. Add the ancho powder, pasilla powder, and cumin and cook an additional 2 minutes. Add the beer and cook until completely reduced. Return the beef to the pot, add the chicken stock, tomatoes, chipotle puree, and honey, and bring to a boil. Reduce the heat to medium, cover the pan, and simmer for 45 minutes. Add the beans and continue cooking for 15 minutes. Remove from the heat, add the lime juice, and adjust seasonings.
- Serve with a dollop of Toasted Cumin Crema and Avocado Relish.
- Place the cumin in a small saute pan over medium heat. Toast until lightly golden brown. Place in a small bowl. Stir in the crema and season with salt and pepper, to taste. Place in a squeeze bottle.
- Combine all ingredients in a small bowl and season with salt and pepper.
MEXICAN BLACK BEAN CHILI

- Boil the black beans in water with onions, 1/2 cup green peppers, chipotle peppers, salt and pepper. Add additional water if needed. Cook beans until slightly tender, then add the 1/4 cup green pepper and remaining ingredients and simmer approximately 45 minutes to 1 hour. Add water as necessary for consistency.

- Heat half of the oil in a pan, add the onion and fry until it starts to soften, then add the garlic, celery and carrot and cook until soft. Meanwhile, heat the remaining oil in a separate frying pan and fry the mince in batches, scooping each batch out with a slotted spoon and leave any excess oil behind.
- Add the mince to the veg, then stir in the tomato purée and cook for 1 min. Stir in the passata and bring to a simmer. Cover and cook over a very low heat for 1½-2 hrs, then add the milk and cook for 30 mins. If you're making the base ahead of time, you can leave it to cool at this stage then freeze for up to a month. (Defrost fully before using in the next step.)
- Put the mince base in a pan and add 1 tsp chipotle paste, bring to a simmer and taste it - add the other tsp if you need to. Stir in the black beans and cook for 5 mins, then stir in the coriander.
- Warm the tortilla bowls in a low oven. Serve the bowls filled with chilli and add the avocado, a squeeze of lime, soured cream and cheese.
