1/2 cup of cooked Lima beans
2 radishes, chopped
3 baby peppers
2 shallots, sliced
3 spring onions, sliced
3 cloves of garlic, finely diced

Steps:

  • Drain the kidney beans and garbanzo beans and rinse well (this removes a lot of the sodium.)
  • Combine the beans and the rest of the salad ingredients in a large bowl.
  • Add the dressing ingredients to a small bowl and whisk until well combined.
  • :Pour the dressing over the salad and mix well.
  • Store in an airtight container in the fridge for up to a week.

Any firm bean will do. You may omit the jalapeno altogether. This salad will work as a main course and is very satisfying and colorful. The different tastes and textures are very pleasing. Serve cold.

3 cups chopped red onion
1/4 cup finely chopped fresh garlic
2 cans (15 ounce size) garbanzo beans, drained and rinsed

3/4 cup (packed) chopped fresh flat leaf Italian parsley
1 1/2 cup chopped green onions (scallions), green parts only
1/4 cup fresh lemon juice
1 cup crumbled feta cheese

1 handful chopped kalamata or black oil-cured olives, optional

Steps:

  • Heat 1/3 cup olive oil in a large frying pan and add red onion, stirring to coat it with the oil. Cook onion gently over medium or medium-low heat, stirring often, until soft and starting to brown, about 10 to 12 minutes. Stir in garlic and cook until fragrant, about one minute; don't let the garlic brown. Remove from heat and let cool. In a large bowl, stir together garbanzo beans, cilantro, parsley, green onions and lemon juice. Add cooled onion garlic mixture. Mix in crumbled feta cheese and olives (if using). Add salt and freshly ground pepper to taste (remember that the feta and olives will already be salty) and up to 1/2 cup more olive oil if desired. 1 (5 ounce) can tuna in olive oil (canned chicken or salmon can be used instead)
1 (15 ounce) can garbanzo beans (also called chickpeas)
1 chopped red bell pepper
1/4 cup chopped red onion (or use Vidalia onion)
4 sun-dried tomatoes packed in oil, chopped
1/4 cup loosely packed sliced pepperoncini pepper, chopped
1/2 cup chopped cilantro
1/2 chopped parsley (or use 1 cup chopped parsley if you don't like cilantro)
2 tablespoons roasted red peppers, chopped
3 tablespoons olive oil, I use garlic infused evoo
2 tablespoons lemon juice
1/4 teaspoon lemon, herb spice blend (like McCormack Perfect Pinch Lemon Herb or Mrs. Dash Savory Lemon with Herbs Table Blend)
1/4 teaspoon dried Mediterranean oregano
1/4 teaspoon garlic powder (not garlic salt)
1/4 teaspoon smoked paprika
1/4 teaspoon turmeric
1/4 teaspoon pepper

Steps:

  • In small bowl, whisk together olive oil, lemon juice, Mediterranean oregano, (pinch or rub dried oregano to release more flavor) lemon herb seasoning, garlic powder, turmeric, paprika and pepper to make the dressing.
  • Put garbanzo beans in colander and rinse well with cold water, let drain. Pat dry with paper towels if needed so the beans are relatively dry.
  • Put the drained & dried beans into a bowl and mix in a quarter of the dressing. Let beans marinate while you prep the other ingredients.
  • Wash the cilantro and parsley, spin dry, and finely chop. (You can use just parsley if you are not a cilantro fan.) Chop the red pepper and red onion. Chop roasted red pepper and peperoncini. Blot the sun dried tomatoes with paper towel to remove excess oil then chop.
  • Drain oil from tuna and discard. Put tuna in mixing bowl and break apart with a fork a little, keeping it slightly chunky. Add the marinated beans and dressing, red pepper, red onion, sun dried tomatoes, roasted red pepper and peperoncini, chopped cilantro and parsley and combine gently. (Don't over-mix.).
  • Mix additional dressing into salad. If you prefer your salads a little more dry you may not want all the dressing. Chill in refrigerator for 30 minutes to meld flavors. Season to taste with more fresh ground black pepper and sea salt and serve.

1/2 cup sliced green onion
1/2 cup finely chopped celery

Steps:

  • Add chickpeas, tomatoes, cucumbers, olives, parsley, and onion to a large bowl.
  • In a small measuring cup, combine olive oil, white wine vinegar, garlic, oregano, thyme, Dijon, and a couple large pinches of salt and pepper.
  • Mix until well combined. Pour over chickpea mixture.
  • Toss to combine evenly.
  • Garnish with fresh parsley and crumbled feta cheese and serve with whole wheat pita bread and hummus. Drizzle with my quick and easy yogurt sauce for extra flavor!
