Vegetable oil, for frying
1 1/2 to 2 pounds fresh cod
Salt and pepper
1 /2 cup all-purpose unbleached flour
2 large eggs
2 tablespoons cold water, a splash
2 cups plain bread crumbs
1/2 teaspoon dried mustard powder
1/4 teaspoon cayenne pepper, a few pinches
Wedged lemons and malt vinegar for topping

Steps:

  • Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
  • Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
  • When the fish is evenly golden all over, remove and drain on brown paper sacks.
  • Suggested: 3 disposable pie tins .

1 egg
1 cup milk
1 cup crisp rice cereal, crushed
1/4 cup all-purpose flour
1/4 cup cornmeal
1-1/2 teaspoons lemon-pepper seasoning
1/4 teaspoon seasoned salt
1/8 teaspoon onion salt
1/8 teaspoon garlic salt
4 walleye or other whitefish fillets (1-3/4 to 2 pounds)
Oil for frying

Steps:

  • In a shallow bowl, whisk together the egg and milk. In a large resealable plastic bag, combine the cereal, flour, cornmeal and seasonings. Dip the fish fillets into egg mixture, then coat with cereal mixture., In a large skillet, heat 1/4 in. of oil over medium-high heat. Fry the fillets for 5-7 minutes on each side or until fish flakes easily with a fork.

4 tilapia fillets (any boneless fish works, e.g. haddock, sole)
1 egg (binding agent, may need two if they are smaller)
1 lemon
fresh thyme sprig (a few will do, more for garnish or decor)
1/2 cup flour
salt
pepper
chili powder
paprika
cumin
oregano
spices (any that you like!)
vegetable oil (for frying)

Steps:

  • thaw the fish if frozen - rinse it under water and pat dry if you wish.
  • preheat about an inch of oil in a pan.
  • cut the fillets into smaller pieces if you want.
  • crack the egg into a shallow bowl and beat - add a pinch of salt and pepper.
  • prepare the spiced fish fry coating - mix roughly 50:50 flour:spices. I suggest adding a fair amount of salt and pepper, and also chili powder if you like it hot. ANY COMBO OF SPICES WORK, be liberal. MIX UNTIL HOMOGENOUS.
  • dip the fish in egg - let the extra egg drip off (tap against the side of bowl).
  • coat both sides of the egged up fish in the frying coating.
  • carefully (hot oil is dangerous!) fry both sides of the fish in the oil until golden brown on both sides, and the inside of the fish is flaky and white.
  • dry on paper towels lined with a bed of thyme.
  • garnish with lemon wedges and thyme sprigs (optional).

buttermilk
oil

Steps:

  • Combine first 6 ingredients. This may be stored in an airtight container in the freezer. Mix before using to redistribute the seasonings.
  • To make fried fish; dip fish in buttermilk, then roll in coating mix. Heat approximately 3" oil in a large skillet to 375°F Fry one piece at a time until golden brown, 4-6 minutes.
