1/2 cup sun-dried tomato
2 garlic cloves
80 g pine nuts
1/2 cup rocket
1 bunch basil leaves
1/4 cup ground parmesan cheese
1/2 cup olive oil
500 g cooked pasta, hot

Steps:

  • Place the tomatoes, garlic, half of the pinenuts, rocket and basil in a food processor and process until smooth.
  • Toast the remaining pinenuts until golden. Set aside.
  • Slowly add the oil to the basil mixture while the processor is running. Turn the processor off and then stir through the parmesan.
  • Stir pesto through the pasta then sprinkle with the reserved pinenuts. Serve immediately with salad and crusty bread.

1/2 cup (packed) fresh basil leaves
1/4 cup blanched slivered almonds, toasted
1/4 cup drained oil-packed sun-dried tomatoes
1 garlic clove
1/8 teaspoon dried crushed red pepper
1/4 cup extra-virgin olive oil
1/2 cup water
2/3 cup grated Parmesan cheese
1 pound linguine

Steps:

  • Blend first 5 ingredients in processor until nuts are finely chopped. With machine running, gradually add oil, then 1/2 cup water, blending until almost smooth. Transfer pesto to bowl. Mix in 1/3 cup cheese. Season to taste with salt.
  • Cook linguine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup cooking water. Return pasta to pot. Add pesto and toss to coat, adding enough reserved water to form thin sauce. Season with salt and pepper. Serve, passing remaining cheese.

1/2 cup butter
1/2 small onion, finely chopped
1/2 cup pesto sauce
1/2 cup chopped sun-dried tomato (soak the sundried tomatoes for 15 minutes in boiling water to reconstitute them.)
fresh basil or parsley (garnish)
toasted pine nuts, crushed (garnish)

Steps:

  • Beat together cream cheese and butter in food processor (or beaters).
  • Add the onion.
  • Line a 2 cup margarine tub, or bowl, with plastic wrap.
  • Spread 1/3 of the cream cheese mixture in the bottom of the bowl.
  • Top with ½ of the pesto and tomatoes.
  • Repeat layers.
  • Top with cream cheese mixture.
  • Spread layers to the edge of the bowl, so they will show through when unmolded.
  • Refrigerate for several hours or overnight.
  • Unmold onto serving plate.
  • Serve with baguette slices or your favourite crackers.

2 tablespoons olive oil
2 chicken breasts, skin and fat removed
14 ounces penne or 14 ounces spiral shaped pasta
3/4 cup semi sun-dried tomato, roughly chopped
2/3 cup basil pesto
2/3 cup light cream
parmesan cheese, to serve

Steps:

  • Heat 1 tablespoon oil in frying pan over medium-high heat.
  • Season chicken with salt and pepper, add to pan and cook for 5-7 minutes each side or until cooked through.
  • Transfer to a plate and cover to keep warm.
  • Cook pasta according to packet direction, drain and return to saucepan.
  • Heat remaining oil in pan, add tomatoes and toss for a minute.
  • Thinly slice chicken and return to pan; add pesto and cream and toss over low heat til well combined.

4 ounces fontina or 4 ounces mozzarella cheese, shredded
4 tablespoons sun-dried tomatoes, chopped
1/2 cup basil pesto

Steps:

  • Preheat oven to 400 degrees.
  • Arrange chips on a baking sheet or in a deep dish pie plate.
  • Top each chip with a little tomato and cheese.
  • Bake in the oven for approximately 5 minutes.
  • After you remove the chips from the oven, top each with a small amount of pesto.
  • Do not put the pesto on the chips before you place them in the oven or you will have a tragic mess.

500 g pasta (penne or spirals)
190 g pesto sauce
1 cup pouring cream
150 g sun-dried tomatoes, chopped
150 -200 g feta cheese, cubed
50 -100 g kalamata olives, pitted

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, combine pesto, cream and sun-dried tomatoes in a saucepan. Bring almost to a boil, then lower to a gentle simmer. Add the feta cheese and olives after 3-5 minutes. Keep sauce warm until pasta is ready.
  • Drain pasta when it is al dente. Combine the pasta and sauce. Stir well and serve.

3 packages (8 oz each) cream cheese, softened
1/2 cup grated Parmesan cheese
3 cloves garlic, finely chopped
1 container (7 oz) refrigerated basil pesto
1 jar (8 oz) minced oil-packed sun-dried tomatoes, well drained
Baguette slices

Steps:

  • In food processor, place cream cheese, Parmesan cheese and garlic. Cover and process until blended. Divide into thirds (about 1 cup each).
  • Line 5-cup mold or 8x4-inch loaf pan with plastic wrap. Spoon one-third of the cheese mixture in bottom of mold; smooth top with spatula. Spoon pesto evenly over cheese layer. Spoon one-third of the cheese mixture over pesto layer; smooth top with spatula. Spoon tomatoes evenly over second cheese layer. Spoon remaining cheese mixture over tomatoes. Strike filled mold on counter to pack down. Cover and refrigerate at least 24 hours.
  • When ready to serve, turn mold upside down onto serving platter and remove plastic wrap. Serve torte with baguette slices.
