2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon salt
1 ¼ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
⅔ cup packed brown sugar
1 cup rolled oats
1 ½ cups grated apple
¼ cup chopped walnuts
¼ cup raisins
2 eggs
¼ cup milk
¼ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 1/2 x 4 1/2 inch loaf pan.
  • In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, brown sugar, and oats. Add apple, nuts, raisins, eggs, milk, and oil. Mix until dry ingredients are moistened.
  • Bake for 55 to 60 minutes, or until done. Cool on wire rack.

1 sheet refrigerated pie pastry
2 medium tart apples, peeled and thinly sliced
1 tablespoon plus 1/2 cup sugar, divided
1-1/2 teaspoons ground cinnamon
1/2 cup all-purpose flour
1/4 cup chopped walnuts
1/4 cup raisins
1/4 cup butter, melted
2 tablespoons beaten egg

Steps:

  • Cut pastry sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edges., In a large bowl, combine the apples, 1 tablespoon sugar and cinnamon; place in crust. In a small bowl, combine the flour, walnuts, raisins, butter, egg and remaining sugar; spoon over top. Bake at 350° for 50-55 minutes or until topping is golden brown and fruit is tender, covering edges with foil to prevent overbrowning if necessary. Cool on a wire rack.

  • In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
  • Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
  • Pour in 4 go 6 cups chicken broth. Simmer until step 5.

4 apples, cored, peeled and cubed
1 c jam, any flavor (peach/apricot)
1/2 c water
4 Tbsp brown sugar
1 c golden raisins
1 tsp cinnamon
1/3 c maple syrup
4 large thick center cut loin chops
4 Tbsp good olive oil
1 Tbsp worcestershire sauce
1/4 tsp black pepper

Steps:

  • 1. Add cubed apples to medium sauce pan. Stir in water, brown sugar, raisins, jam, cinnamon, maple syrup or jam and salt.
  • 2. Place sauce pan over medium heat and cook until tender about ten minutes.
  • 3. Season pork chops and put in a skillet with hot olive oil and add the Worcestershire sauce.
  • 4. Cook for 6-7 minutes per side. Do not over cook, only until just done in middle of the chop or the meat will be dry and tough.
  • 5. When chops are browned and almost done, add the apple mixture to the skillet and simmer for two minutes.
  • 6. Place the pork chops onto platte3r, top with the raisin mixture and drizzle any sauce left in the pan over the top of the chops!

3 large apples, cored and thinly sliced
1 Tbsp. freshly squeezed lemon juice
1/3 cup golden brown sugar, packed
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1/2 cup raisins, plumped (see Note)
2 Tbsp. flour
5 sheets phyllo pastry (see Note)
1/3 cup melted butter
Icing sugar for dusting

Steps:

  • Place the oven rack in the middle of the oven. Preheat the oven to 375 degrees F. Combine the first 7 ingredients in a bowl. Lightly brush one sheet of phyllo pastry with melted butter. Top with another sheet and brush it lightly with butter. Repeat these steps until all the phyllo is used. Place the layered phyllo on a large, parchment paper-lined baking sheet. Spoon on the apple mixture, shaping it into a long narrow rectangle along the bottom of the pastry. Fold over the sides of the pastry, about 2 inches on either side, and then carefully roll the filling into the pastry. Brush the top of the strudel with a little melted butter. Make small, diagonal cuts, about 2 inches apart, into the top of the pastry to make it easier to cut after baking. Bake for 25 to 30 minutes, or until puffed and golden. Allow it to rest for 15 minutes before slicing with a sharp, serrated knife. Dust portions with icing sugar and, if desired, serve with whipped cream. Note: To plump up the raisins before baking, soak them in 1 cup of hot water for 30 minutes. Drain well and they are ready to use. You'll find phyllo pastry in the freezer section. Thaw before using. Recipe Options: Instead of apples, use three ripe pears, halved lengthwise, cored and thinly sliced, Use dried cranberries rather than raisins. 8 center-cut pork chops
6 ounces unsalted butter
6 ounces demi-glace
Water
Salt

Vegetable oil

Steps:

  • Apple preparation:
  • Combine 3 apples, 6 ounces of dried raisins, 6 ounces of brown sugar, and let marinate for a few hours.
  • Pork chops:
  • In a hot pan, slowly grill the pork chops until completely cooked. Melt the unsalted butter, mix in the raisin, apple and sugar mixture, add 6 ounces of demi-glace, and saute until apples are soft.
  • Take 3 slices of apple for each serving and dip in water, sprinkle with salt, then coat in corn flour. Deep-fry the apples and place on each plate for garnish.
  • Serve with either sauteed fresh spinach or tropical rice and black beans.

1 tablespoon dark rum
1 teaspoon vanilla
3 Cortland or Empire apples, peeled and cut into 1/4-inch dice
1/2 cup raisins

Steps:

  • Preheat oven to 350°F and butter and flour a 12-cup bundt pan, knocking out excess flour.
  • Sift together flour, baking soda, and salt. Whisk together oil, eggs, sugars, spices, rum, and vanilla in a large bowl. Fold in flour mixture until just combined. Fold in apples and raisins and spoon batter into pan.
  • Bake in middle of oven until a tester comes out clean, about 1 1/4 hours.
  • Cool cake in pan on a rack 10 minutes, then turn out onto rack to cool completely.

1 1/2 teaspoons ground ginger

Steps:

  • Stir vinegar and sugar in heavy medium saucepan over medium-high heat until sugar dissolves. Boil without stirring until syrupy and reduced to 1 1/2 cups, about 15 minutes. Reduce heat to medium. Add all remaining ingredients. Simmer until apples are tender, liquid is absorbed, and mixture thickens slightly, stirring occasionally, about 30 minutes. (Can be prepared up to 2 weeks ahead. Cool completely. Refrigerate in airtight container.)

2 tsp lemon juice
1 1/2 cups apple sauce
2/3 cup butter, melted
1 cup golden raisins
icing sugar (powdered sugar), for garnish

Steps:

  • Preheat oven to 350F. In a large mixing bowl, stir together flour, cinnamon, salt, brown sugar and baking soda.
  • In another mixing bowl, stir together milk, lemon juice, apple sauce and butter. Pour into dry mixture and stir to combine.
  • Stir in raisins. Pour mixture into a 13×9 inch ungreased baking pan.
  • Bake for 40 to 45 minutes or until a toothpick comes out of the centre clean.
  • Cool. Cut into squares and sprinkle with icing sugar to serve.
