POTATO AND HAM BONE SOUP RECIPE
Cold days of winter call for a soul warming soup. This potato soup is easy to make with russet potatoes and a leftover ham bone. Perfect meal for a cold evening.

Steps:
- Dice the carrot.
- Dice the celery stalks.
- Dice the onion.
- Heat heavy stock pot over Medium heat.
- Add the butter.
- Add onions, carrots, celery
- Stir and cook until vegetables are tender.
- Add ham bone.
- Add water.
- Bring to a boil. Reduce heat and simmer for 1 hour.
- Remove ham bone. Set aside. Remove meat when cooled.
- Cube the potatoes into about 1 inch pieces.
- Add potatoes to pot. Cook about 15 minutes until potatoes are tender.
- Remove about half of the potatoes. Set aside.
- Add the milk.
- Use an Immersion Blender to puree potatoes left in the pot.
- Add potato pieces and ham meat back to pot. Stir well.
- Add salt and pepper as needed.
- Serve warm.
- Enjoy!
DELICIOUS HAM AND POTATO SOUP
This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

Steps:
- Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
- In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
- Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

CHEESY CREAMY HAM AND POTATO SOUP
A rich hearty soup great for left over holiday ham. I use the bone from the ham to make the stock. DS said it was the best soup he ever had!

Steps:
- Boil ham bone in 4 cups of water in large COVERED stock pot for approx 1 hour. (If omitting this step use 4 chicken bouillon or 4 cups chicken broth instead).
- Remove ham bone and strain stock to remove any debris.
- Boil the 2 med potatoes halved in stock until softened, remove to separate bowl.
- Combine 2 1/4 cups diced potatoes, 1 med onion, DICED HAM, and 3 minced garlic cloves and add to stock. Add salt and pepper to taste. Cook until potatoes are tender.
- Mash 2 halved potatoes with small amount of milk and add to stock (helps to thicken).
- In separate pan, melt butter. Add in flour a tablespoon at a time to make a roux or paste. Add milk and blend well to make a cream sauce.
- Simmer cream sauce for 2 minutes. Add cheese and blend well. Mixture will be very gooey.
- Add cheese blend to soup and gently mix to combine.

- Cube potatoes and ham
- Place potatoes, ham and onions in a saucepot with a small amount of water, enough to cover the potatoes and ham
- Add lots of pepper and enough salt to taste
- Cook until potatoes are tender
- Add butter and milk, stirring constantly. Be careful not to scorch
- Cook slowly until heated. If you need to thicken this soup you can add some instant mashed potato flakes.
HAM BONE SOUP
Made this up after winning a ham at the company Christmas party. I'm not a big ham or soup fan, but the ham turned out pretty good and I thought I'd experiment with a soup to use up some of the leftovers. I couldn't find a recipe I liked, so I basically combined three recipes I found on 'Zaar. I'm a picky eater - don't like carrots or many types of beans - which is why I didn't stick to the navy bean/pea/carrot type recipes. I used cornstarch to thicken which didn't work very well. Another recipe recommended the potato flakes (which I don't have). I made my ham with looneytunesfan's Brown Sugar Honey Baked Ham recipe (#151563). The soup seemed sweet to me and I'm guessing it's because of the sugary ham. I think it turned out pretty good so I thought I'd share. Feel free to experiment or make suggestions. I'm more of a baker than a cook! :)

- Cover ham bone in water and simmer for about an hour.
- Add onion and bay leaves. Simmer until onions are tender.
- Add potatoes, garlic, ham and beans. Simmer until ham falls off bone.

USING THE CHRISTMAS HAM BONE, MAKES YOU FEEL GOOD POTATO SOUP
This recipe is a "base" potato soup that is WONDERFUL as is, but with SO many possibilities! I dumped in a can on Niblets corn, and it became chowder! It was wonderful! How about: add Julienne'ed carrots close to the end; or 8 oz Velveeta cheese; or 2 cups cooked broccoli florets; or throw in some cooked shrimp and crab meat & some Cajun seasonings...; or any combination you can think of! YUM! If your hambone isn't too meaty, add a cup of shredded or chopped ham from leftovers.

- Place first 6 ingredients in a Dutch Oven, bring to a boil over medium heat, and simmer for 30 minutes or until meat easily comes off the bone with a fork. Shred ham from the bone, discard any fat, return meat to the pot. Add diced potatoes, bring to a boil, reduce heat and simmer until potatoes are tender.
- While potatoes are cooking, in a medium saucepan, melt butter over medium heat being careful not to brown. Add flour, stirring constantly until incorporated well. Bring heat to medium/high and gradually stir in the Half n Half until creamy, thick and bubbly, stirring constantly, being careful not to scorch. Once it thickly coats the spoon, remove from heat.
- When the potatoes are tender, stir the sauce mixture into the potato pot over medium heat, stirring constantly. Let simmer until soup reaches the desired consistency. You can add milk to adjust.
- There has been no salt added to this point. You may add salt, pepper, garlic, herbs or seasonings to your taste.

- Heat oil and add onion, carrot, and bell pepper.
- Saute until soft and beginning to colour.
- Add ham bone, peppercorns, bay leaf and stock or water.
- Cover bring to a boil.
- Simmer one hour.
- Skim off foam.
- Add potatoes, cabbage, tomatoes, partially cover.
- Cook on simmer for one hour.
- Add herbs and sauce and simmer 15 minutes.
- Add the parsley last, and serve immediately.
