SUMMER CHICKEN STIR FRY



Summer Chicken Stir Fry image

This twist on Ree's versatile summer stir fry from her book "Food From My Frontier," is made with shrimp instead of chicken. The key to a successful stir-fry is to have all of your ingredients prepped before you start cooking. The high heat under the pan makes things go quickly - if you stop to prep inbetween, your food will overcook.

1 tablespoon butter
1 tablespoon olive oil
2 pounds boneless skinless chicken breast, cut into 1-inch chunks
4 cloves garlic, minced
2 large zucchinis, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings to serve
Juice of 1 lemon
Rice or Pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the chicken and garlic, then sauté until the chicken is cooked through, about 5 minutes. Remove the chicken to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Next, throw the chicken back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.

1 (2 inch) piece fresh ginger root
2 tablespoons coconut oil
2 ½ teaspoons pressed garlic
⅓ cup hoisin sauce

Steps:

  • Slice the chicken breasts into strips across the grain, and set aside. Peel and grate the ginger root and set aside.
  • Heat the coconut oil in a wok over medium-high heat until the oil is melted and hot. Stir in the ginger and garlic, and cook and stir for about 20 seconds, to release the flavor. Toss the chicken strips into the hot oil, and scoop the hoisin sauce over the chicken. Cook and stir for 5 to 7 minutes, until the sauce coats the chicken and the meat is no longer pink inside.

3 tablespoons oil, divided
1 lb boneless chicken, cut into strips
1 cup sliced celery
1 cup carrot, cut into strips
2 cups sugar snap peas
1 tablespoon minced onion
1 tablespoon minced garlic
1 1/2 cups chicken broth
2 teaspoons cornstarch
1 tablespoon soy sauce
1/2 teaspoon dried ginger

Steps:

  • In wok or large skillet, heat 2 T oil; stir fry chicken until done and browned.
  • Remove chicken, keep warm.
  • In same pan add remaining oil, saute celery and carrots until crisp tender (about 5 minutes).
  • Add snow peas and saute 3 minutes.
  • Add onion and garlic.
  • Mix broth and cornstarch; add soy sauce and ginger,stir until smooth.
  • Add to vegetables;cook and stir until mixture thickens.
  • Return chicken and heat through.

16 ounces chicken breasts, sliced into strips
salt, to taste
fresh ground black pepper
2 teaspoons vegetable oil
2 cups broccoli florets
2 teaspoons sesame oil
2 1/2 garlic cloves, peeled
4 teaspoons freshly grated ginger, more ot less to your taste
1 1/3 cups sliced carrots
1 1/3 cups snow peas
2/3 large red bell pepper, sliced into strips
1/8 teaspoon hot pepper flakes (or to taste)
4 teaspoons rice vinegar, apple cider vinegar also works well
2 teaspoons low sodium soy sauce

Steps:

  • Bring a medium pot of salted water to a boil.
  • Meanwhile, season the chicken with salt and pepper.
  • Heat the vegetable oil in a nonstick wok or large nonstick skillet over high heat.
  • When the oil is hot, add the chicken and cook, tossing with a wooden spoon, until the chicken begins to brown.
  • Turn off the heat and transfer the chicken to a plate.
  • Blanch the broccoli in the boiling water until the stems just begin to get tender, about 1 or 2 minutes.
  • Drain and set aside.
  • Add the sesame oil and garlic cloves to the wok.
  • Turn the heat to medium and cook until the garlic is fragrant and lightly golden.
  • Remove the garlic, add the ginger and cook for another minute.
  • Turn the heat to high, add the carrots and cook, tossing with a wooden spoon, for 2 minutes.
  • Add the peas, red peppers and hot pepper flakes, continue tossing with the spoon and cook for 1 minute more.
  • Add the chicken, broccoli, vinegar and soy sauce and cook for 2 minutes more.
  • Serve immediately over a bed of rice.

800 g chicken thigh fillets, cut into 2cm slices
2 tablespoons vegetable oil
1 tablespoon light soy sauce
1/4 cup honey
2 tablespoons light soy sauce
2 tablespoons shaoxing wine or 2 tablespoons dry sherry
2 tablespoons finely diced gingerroot
1 tablespoon oyster sauce
2 teaspoons dark soy sauce
2 teaspoons five-spice powder
1/2 teaspoon sesame oil

Steps:

  • Combine chicken with marinade ingredients in a large bowl and leave to marinade in the refrigerator overnight.
  • Heat the oil in a hot wok until surface seems to shimmer slightly. Add half the marinated chicken with the marinade and stir-fry for 1 minute. Remove from wok and set aside. Add remaining chicken and stir-fry for 1 minute. Return reserve chicken to the wok with the soy sauce and stir-fry for a further 2 minutes or until chicken is just cooked through and slightly caramelised.
  • Serve with steamed rice.

vegetable oil cooking spray
4 chicken breast halves, skinless, boneless, cut into strips
1 teaspoon paprika
1 red onion, sliced in rings
2 garlic cloves, pressed
1 sweet green pepper, sliced into sticks
1 sweet red pepper, sliced into sticks
1 jalapeno pepper, sliced into sticks
1 inch piece fresh ginger, sliced into thin strips
1 small acorn squash, cubed (or squash of your choice)
2 fresh tomatoes, large diced
1/4 teaspoon salt
1/4 teaspoon pepper, fresh ground
3/4 cup chicken stock
1 teaspoon cornstarch

Steps:

  • Parboil squash, or cut in half, remove seeds and microwave for about 3 minutes depending on size, cube and set aside.
  • Generously spray a non stick wok or deep fry pan. Heat wok and add chicken strips; brown on all sides, about 5 minutes. Sprinkle chicken with paprika.
  • Lower heat and add onions and garlic, stir fry about 5 minutes, until onion is soft, being careful not to burn garlic.
  • Add sweet and hot peppers and ginger sticks; stir fry about 3 minutes.
  • Add squash cubes, stir fry 2 minutes.
  • Add tomato , stir fry just until heated through, 1 minute.
  • Sprinkle salt and pepper over all.
  • Make a slurry out of the chicken stock and cornstarch; add to chicken and vegetables; stir fry until liquid is thickened about 4 minutes.
  • Nice served over brown rice.

4 whole boneless skinless chicken breasts
1 tablespoon vegetable oil
1 bunch broccoli, separated into flowerets and sliced stems
2 cups snow peas
2 cups chicken stock
2 inches fresh ginger (peeled and grated)
2 garlic cloves
1 tablespoon cornstarch
1/3 cup cold water
1/3 cup soy sauce
1/3 cup dry sherry
1 teaspoon sesame oil

Steps:

  • Cut the chicken into 1 inch strips and stir-fry it in the oil over high heat for about 2 minutes, until it has browned and is barely cooked through. Drain the chicken and set it aside.
  • Steam the broccoli flowerets and the sliced stems for 3 minutes, and the snow peas for 1 minute. Set them aside.
  • Boil the chicken stock, ginger, and garlic for 5 minutes and then strain the stock.
  • Combine the cornstarch with the cold water. Stir it into the chicken stock and boil the mixture until it has thickened. Add the soy sauce, sherry, and sesame oil. Add the chicken and vegetables to the sauce and heat through. Serve with boiled or steamed rice.
