1 cup sliced carrot
2 tablespoons sliced green onion
2 tablespoons minced red bell pepper
½ cucumber - halved lengthwise, seeded, and sliced

Steps:

  • Whisk rice vinegar, sugar, vegetable oil, ginger, and salt together in a bowl until sugar and salt are dissolved into a smooth dressing.
  • Toss carrot, green onion, bell pepper, and cucumber in the dressing to evenly coat.
  • Cover bowl with plastic wrap and refrigerate until chilled, about 30 minutes.

I got this recipe from the cook at my favorite Thai restaurant in Cincinnati. His carrot salad was one of his most popular salads/appetizers, people would buy multiple orders to go so they could bring this as a take along dish to an event. This is even better made a day ahead.

1 pound carrots, coarsely grated
1 cup white sugar
½ cup water
½ cup rice vinegar
2 tablespoons minced garlic
2 tablespoons Thai fish sauce
1 ½ teaspoons Thai red curry paste
2 tablespoons lime juice
1 tablespoon red pepper flakes
½ cup finely chopped unsalted peanuts

Steps:

  • Place grated carrots in a large bowl.
  • Combine sugar, water, and vinegar in a saucepan and bring to a boil; cook until sugar is dissolved, about 5 minutes. Reduce heat to medium; add garlic, fish sauce, and curry paste to sugar mixture and simmer until flavors blend, 2 to 5 minutes. Remove saucepan from heat and cool dressing completely, about 30 minutes.
  • Stir lime juice and red pepper flakes into dressing and pour over carrots. Add peanuts and toss to coat. Refrigerate until chilled, at least 30 minutes.

Steps:

  • Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.

1 1/2 tablespoons fresh lime juice
1 1/2 tablespoons rice wine vinegar
1 tablespoon canola oil
1 clove garlic, minced
1 teaspoon brown sugar
1 teaspoon lime zest
1/2-1 small jalapeno, seeded and minced
salt and pepper
1 seedless cucumber
1 small red bell pepper
1 medium carrot
1/2 small red onion
1 -2 tablespoon chopped cilantro (optional)
1/4 cup dry roasted peanuts, chopped

Steps:

  • Whisk the first 7 ingredients (lime juice through jalapeno) in a large bowl.
  • Season with salt and pepper.
  • Trim the ends from the cucumber.
  • Split lengthwise in half.
  • Slice very thinly.
  • Toss into the dressing.
  • Halve the red pepper vertically, core and remove seeds and white membranes.
  • Slice the pepper, horizontally, into very thin strips.
  • Add to the dressing and toss.
  • Peel the carrot and trim off ends.
  • Slice diagonally into very thin slices.
  • Add to the rest of the salad.
  • Peel the onion and cut in half horizontally.
  • Then slice vertically into very thin strips.
  • Add these to the bowl and toss everything together until well mixed.
  • Set aside for at least one hour, stirring occasionally (this can be marinated for up to 8 hours, but refrigerate if marinating for longer than 2 hours).
  • Transfer to a serving bowl.
  • Sprinkle cilantro (if used) and peanuts over top.

1 Kirby cucumber, deseeded and cut into 1/4-inch cubes
1/2 medium red onion, very finely diced
1 teaspoon kosher salt, plus more as needed
1 medium carrot, peeled and cut into 1/4-inch cubes
1 large russet potato (about 1 pound), peeled and cut into 2-inch cubes
1 large egg
1/3 cup plus 1 tablespoon mayonnaise (preferably Hellmann's)
1 teaspoon granulated sugar
1 teaspoon rice vinegar
Freshly ground black pepper

Steps:

  • In a small bowl, combine the cucumber, red onion and 1 teaspoon kosher salt. Set aside to sweat slightly.
  • Bring a medium pot of salted water to a boil. Add the carrot and cook until tender-crisp, 2 minutes. Remove with a slotted spoon or fine-mesh sieve and set aside.
  • Add the cubed potato and egg to the boiling water. Cook the egg for 10 minutes and the potatoes until fork-tender, 15 to 20 minutes. While the potato finishes cooking, run the hard-boiled egg under cold tap water. Peel the egg, finely chop it, then add it to a medium bowl. When the potato is cooked, transfer to the bowl with the egg and mash with a fork until uniform.
  • Add the mayonnaise, sugar and vinegar to the mashed potato mixture and stir to coat. Season to taste with salt and pepper. Squeeze the salted cucumber and red onion with your hands (discarding any liquid), and fold them into the potato and egg mixture along with the cooked carrot.
  • To serve, scoop the potato salad onto a plate using an ice cream scoop, and eat warm or at room temperature. (To store for later, transfer to a resealable container and keep in the refrigerator for 3 to 5 days. This salad even tastes great cold, straight out of the fridge.)

From the Chicago Tribune, originally attributed to Ron Bilaro, a personal chef in Chicago. The original recipe called for 2 T. of the sesame oil but I knocked that down to 1 T. as we feel a little goes a long way with sesame oil. Add more if you wish.

Steps:

  • In a small saucepan combine rice wine vinegar, granulated sugar, and water. Heat up the mixture until the sugar dissolves. Remove the dressing from heat and allow to come down to room temp.
  • Place sliced cucumber, sliced radishes, minced red onion and minced jalapeno in mixing bowl and add salt and cilantro.
  • When the cucumber dressing is at room temp, add it to the cucumbers and toss to combine everything.

Bring to a boil then turn down the heat and simmer for 30 minutes. Remove from the heat and let cool. Strain the solids and discard and return the juice to the saucepan.
  • In a small bowl, whisk the cornstarch with 3 tbsp of the carrot juice. Whisk ¼ cup of the hot carrot juice with the cornstarch/juice mixture then add to the saucepan. Whisk until thickened. Stir in the Miyoko’s vegan butter and sriracha and whisk until combined. Keep the sauce warm.
