THYME-SCENTED GOAT CHEESE WITH PROSCIUTTO AND SHALLOTS



Thyme-Scented Goat Cheese with Prosciutto and Shallots image

Goat cheese, also known as chevre, boasts a distinctive tang that plays well against the caramelized shallots seasoned with balsamic vinegar.

Number Of Ingredients 10

2 teaspoons olive oil
2 large shallots, finely chopped (about 3/4 cup)
1 tablespoon balsamic vinegar
4 ounces goat cheese, softened
1 tablespoon milk
1 1/2 teaspoons chopped fresh thyme
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 thin slices prosciutto, crosswise cut into 1 1/2-inch-wide strips (about 3 oz. total)
24 Keebler® Town House® Original crackers

Steps:

  • 1. In small skillet heat oil over medium-high heat. Add shallots. Cook for 3 to 4 minutes or until browned. Add vinegar. Cook, uncovered, about 30 seconds or until slightly reduced. Set aside.
  • 2. In small bowl combine goat cheese, milk, thyme, salt and pepper. Stir until soft and creamy.
  • 3. Place one folded piece of prosciutto on each KEEBLER TOWN HOUSE Original cracker. Spoon about 1 teaspoon of goat cheese mixture on each. Top each with some of the shallot mixture.

1 (5.5-ounce) log soft mild goat cheese
1 teaspoon pink peppercorns or peppercorn mélange, cracked
1 tablespoon fresh thyme leaves
3 tablespoons extra-virgin olive oil
1 teaspoon grated lemon peel
1/2 small garlic clove, pressed (optional)
Sliced baguette (toasted, if desired)

Steps:

  • Place cheese on plate; using plastic wrap as aid, shape into 5-inch round. Sprinkle with salt, peppercorns, and thyme, and press into cheese. Mix olive oil, lemon peel, and garlic, if desired, in small bowl. Pour over cheese. Serve with baguette.

5 ounces (about 3/4 cup) soft fresh goat cheese, room temperature
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon peel
1 garlic clove, minced
5 teaspoons olive oil
16 French-bread baguette slices, toasted

Steps:

  • Place goat cheese in small bowl. Mix thyme, lemon peel and garlic in another small bowl; season with ground black pepper. Mix half of thyme mixture into goat cheese. Add olive oil to remaining half of thyme mixture. Form cheese into 2 1/2-inch round; flatten slightly. Place in center of plate. Spoon oil-thyme mixture over top of cheese. Surround cheese with baguette slices and serve.
