Basic Stuffing Balls With Variations image

These stuffing balls are a good side dish with poultry and pork dishes. For an appetizer, make the stuffing balls smaller, reduce the baking time accordingly, and serve them with homemade or purchased cranberry relish for dipping. If baking the stuffing balls with a meat dish, place stuffing balls in the oven for the final 30 minutes of cooking. You can use other breads too. I usually use good quality homebaked-style plain white bread and stuffing bread when it is available. You can use up odds and ends of white bread, brown bread, rye bread, hot dog buns, and rolls for this recipe too. Adjust the seasonings to suit your tastes. Add one cup chopped apples, raisins, or cranberries for a fruit stuffing, or add one cup of chopped walnuts or pecans. The variations are endless. You may need to add a little more chicken broth, just enough to hold the stuffing balls together. Use canned broth or dissolve a couple teaspoons soup base mix in warm water. Garnish chicken or pork dishes with the stuffing balls and grilled bacon rolls. To make the bacon rolls: Cut bacon strips in half; roll them up and secure with a toothpick; and grill or fry until well done; Drain on paper towels.

1/4 cup onion, finely chopped
1/2 cup celery, finely chopped
5 cups soft white bread cubes, 1/2-inch

1 egg, well beaten
1/4 cup chicken broth

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Line a baking sheet with foil paper and lightly grease the foil for easy clean up.
  • Heat butter or margarine in a large skillet.
  • Add onion and celery and sauté gently until soft.
  • Combine remaining ingredients with the celery and onion mixture, adding any variations you like.
  • Shape mixture into 8 balls. Dampen hands with cold water if necessary.
  • Place stuffing balls on prepared baking sheet.
  • Bake at 375 degrees Fahrenheit for about 20 minutes or until set.

These started to find the perfect bread item to make leftover turkey sandwiches on. Tried as bread and never reliable, rise to high or not enough. After much trial and error these have been pretty fool proof. Son in law loves and says its not Thanksgiving till the leftover sandwich is eaten. Feel free to change up the spices to your taste preferences. I use fresh ground hard red wheat in this recipe so whole wheat flour would replace that. I use a bread machine to mix up and rise the dough. I made for use with packaged yeast for ease for begining bakers like my daughter

1 egg
2 tablespoons butter, softened
1 cup wheat flour, hard red fresh ground is preferred
2 1/4 cups bread flour

Steps:

  • Add ingredients in order for your bread machine, liquids to dry with yeast last. Use dough cycle.
  • When risen punch down and place on floured board.
  • Pinch off pieces to your size perference, small rolls to generous sandwich size based on risen size.
  • Place on greased pan or non stick; about 2 inches apart.
  • Cover with clean towel and let rise about 30-45 minutes; or doubled in size.
  • I brush with a little melted butter or coconut oil right before baking.
  • Preheat 375.
  • Bake 12-20 minutes depending on size till golden brown.

4 tablespoons (57g) butter, divided
8 ounces (225g) sage sausage or breakfast sausage, removed from casings (see note)
1 small onion, finely chopped (about 3/4 cup)
1 rib celery, finely chopped (about 1/2 cup)
4 medium cloves garlic, finely chopped
1/4 cup (7g) minced fresh sage leaves
1/4 cup (7g) minced fresh parsley leaves
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
1 pound (450g) homemade or store-bought pizza dough (see note)
2 tablespoons (30ml) extra-virgin olive oil

Steps:

  • Melt 2 tablespoons (28g) butter in a large skillet over medium-high heat. Add sausage and mash with a stiff whisk or potato masher to break up into fine pieces (the largest pieces should be no bigger than 1/4 inch). Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onion, celery, garlic, and sage and cook, stirring frequently, until vegetables are softened, about 10 minutes. Add parsley and season to taste with salt and pepper. Transfer contents to a large bowl and set aside until completely cool.
  • While filling cools, make knots. On a lightly floured surface, divide dough into 2 even pieces. Working with one piece at a time, roll or stretch into an oblong strip about 8 inches long and 4 inches wide. With a bench scraper or knife, cut crosswise into 12 strips. Repeat with other half of dough.
  • Tie each strip into a knot and transfer to bowl with sausage mixture. Toss and fold with your hands, very gently, until every knot is thoroughly coated in sausage mixture. Grease a 9- by 13-inch baking dish with 1 tablespoon (14g) butter. Transfer knots to baking dish in a single layer. Drizzle with olive oil, cover tightly with plastic, and set aside until doubled in size, about 4 hours. Alternatively, refrigerate until doubled in size, 12 to 16 hours. Or cover in aluminum foil and freeze for up to a week, thaw completely in the refrigerator, and bring the rolls up to room temperature for an hour before baking.
  • When ready to bake, adjust oven rack to center position and preheat oven to 425°F (220°C). Unwrap rolls. Transfer to oven and bake until golden brown and crisp, 25 to 30 minutes.
  • When rolls are almost ready, melt remaining tablespoon butter in the microwave or on the stovetop. Remove rolls from oven and immediately brush on butter. Serve with gravy and cranberry sauce on the side.

These are fabulous as a side dish with stir-fry dishes. Serve warm with egg roll sauce or soy sauce if desired.

1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
1 quart peanut oil for frying
2 tablespoons all-purpose flour
2 tablespoons water
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
2 tablespoons sesame seeds

Steps:

  • Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
  • In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
  • Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  • Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

  • Prepare stuffing mix according to package directions. Meanwhile, in a small bowl, combine soup and milk; set aside. 3 tablespoons good olive oil
1 1/2 cups chopped yellow onions (2 onions)
2 (28-ounce) cans crushed tomatoes and their juice
1/4 cup red wine vinegar
1/2 cup light brown sugar, lightly packed
1/2 cup raisins
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 large head Savoy or green cabbage, including outer leaves
2 1/2 pounds ground chuck
3 extra-large eggs, lightly beaten
1/2 cup finely chopped yellow onions
1/2 cup plain dried breadcrumbs
1/2 cup uncooked white rice
1 teaspoon minced fresh thyme leaves
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the sauce, heat the olive oil in a large saucepan, add the onions, and cook over medium-low heat for 8 minutes, until the onions are translucent. Add the tomatoes, vinegar, brown sugar, raisins, salt, and pepper. Bring to a boil, then lower the heat and simmer uncovered for 30 minutes, stirring occasionally. Set aside.
  • Meanwhile, bring a large pot of water to a boil.
  • Remove the entire core of the cabbage with a paring knife. Immerse the head of cabbage in the boiling water for a few minutes, peeling off each leaf with tongs as soon as it s flexible. Set the leaves aside. Depending on the size of each leaf, you will need at least 14 leaves.
  • For the filling, in a large bowl, combine the ground chuck, eggs, onion, breadcrumbs, rice, thyme, salt, and pepper. Add 1 cup of the sauce to the meat mixture and mix lightly with a fork.
  • Preheat the oven to 350 degrees F.
  • To assemble, place 1 cup of the sauce in the bottom of a large Dutch oven. Remove the hard triangular rib from the base of each cabbage leaf with a small paring knife. Place 1/3 to 1/2 cup of filling in an oval shape near the rib edge of each leaf and roll up toward the outer edge, tucking the sides in as you roll. Place half the cabbage rolls, seam sides down, over the sauce. Add more sauce and more cabbage rolls alternately until you ve placed all the cabbage rolls in the pot. Pour the remaining sauce over the cabbage rolls. Cover the dish tightly with the lid and bake for 1 hour or until the meat is cooked and the rice is tender. Serve hot.

1 tbsp olive oil
1 onion, finely chopped
2 Bramley apples, approx 140/5oz each, peeled
3 x 450g/1lb packs good-quality pork sausage
2 x 200g/7oz packs vacuum-packed chestnuts, roughly chopped
small bunch parsley, leaves roughly chopped
small bunch sage, leaves roughly chopped
small bunch thyme, leaves stripped
1 egg
100g white breadcrumb
175g fresh or frozen cranberry
24 rashers streaky bacon
butter, for greasing

Steps:

  • Heat the oil in a large frying pan, then gently fry the onion for 5 mins until softened. Finely chop the apples either by hand or in a food processor.
  • Squeeze the sausagemeat from the sausages into a large bowl, then add all the other ingredients, except the cranberries and streaky bacon. Season generously, then get your hands in and mix well. Weigh out 450g of the stuffing and mix a handful of the cranberries into it. Use to stuff the neck of the turkey (see 'Goes well with').
  • To assemble, butter and season a large sheet of foil. Stretch out the bacon rashers slightly with the back of a kitchen knife, then overlap 12 rashers on the foil. Spoon half of the stuffing mix evenly over the bacon, leaving a border of about 3cm. Scatter with half the cranberries, then pat them in. Tuck the long edges of the bacon over the stuffing; then, using the foil to help, roll the stuffing up into a log shape. Repeat to make a second roll.
  • Heat oven to 190C/fan 170C/gas 5. Put the foil-wrapped rolls onto a roasting tin and roast for 45 mins. Unwrap, draining off any juice, then finish roasting for 15 mins until the bacon is crisp.

1 tbsp butter
3 onions , chopped
15g pack sage , shredded
200g pack cooked chestnut
100g hazelnut
100g breadcrumb
½ tsp mace
2 large eggs , beaten
2 tbsp butter , plus extra to serve
15 rashers streaky bacon
few sage leaves, to serve (optional)

Steps:

  • To make the stuffing, melt the butter in a large non-stick pan, add the onions and gently cook for 10-15 mins until very soft. Stir in the sage for 1 min, then tip into a large mixing bowl. Pulse the chestnuts in a food processor until chopped into small bits, then tip these into the bowl with the onions and repeat with the hazelnuts. Add the breadcrumbs, mace, beaten egg, 1 tsp salt and some pepper, and mix everything together well.
  • Tear off a very large sheet of foil. Smear the butter in the middle, making a rectangle about 30 x 40cm. Lay the bacon rashers over in a row, overlapping a little. Use a rolling pin to slowly but firmly roll down the length of the bacon strips to stretch them a bit. Shape the stuffing into a log along the rashers. Using the foil to help you, roll up the stuffing so that it is completely wrapped in the bacon. Overwrap with the extra foil and twist the ends to tighten and seal. If it's not very round, give it an extra roll or two on your work surface. Chill until ready to roast. Can be made up to 2 days ahead and kept in the fridge.
  • To cook, bake at 200C/180C fan/gas 6 (when you turn up the heat for the turkey) for 30 mins. When the turkey comes out, turn up the heat to 220C/200C fan/gas 7, unwrap the stuffing and continue to cook for 30 mins more until crisp. Keep warm, then slice and serve with sage leaves fried in butter, if you like.
