Crispy Sesame Beef image

Restaurant-quality, amazingly crispy beef made in just 30 min with less oil - you won't even be able to tell the difference!

Provided by Chungah Rhee

Yield 4 servings

Number Of Ingredients 13

1 cup peanut oil
1 pound sirloin steak, sliced into thin strips
4 tablespoons cornstarch, divided
1/4 cup reduced sodium soy sauce
1/4 cup brown sugar, packed
2 tablespoons freshly squeezed orange juice
2 tablespoons rice vinegar
2 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon Sriracha, optional
1 teaspoon sesame oil
1 teaspoon sesame seeds
1 green onion, thinly sliced

Steps:

  • Heat peanut oil in a large stockpot or Dutch oven over medium heat. In a large bowl, combine steak and 2 tablespoons cornstarch, tossing to coat and letting the steak absorb the cornstarch. In a medium saucepan over medium high heat, combine soy sauce, brown sugar, orange juice, vinegar, garlic, ginger, Sriracha and sesame oil until slightly thickened, about 1-2 minutes. Provided by Grace Young

Categories     Healthy Diabetes-Friendly Recipes

Time 30m

Number Of Ingredients 13

12 ounces lean flank steak, trimmed
1 ½ teaspoons cornstarch
1 tablespoon reduced-sodium soy sauce, divided
1 teaspoon dry sherry plus 1 Tbsp., divided
1 teaspoon vegetable oil plus 1 Tbsp., divided
4 teaspoons hoisin sauce
4 teaspoons ketchup
1-3 teaspoons chile-garlic sauce or Sriracha
3 slices peeled ginger, smashed
1 small yellow onion, thinly sliced
1 cup diced green bell pepper (1-inch)
1 cup diced red bell pepper (1-inch)
2 tablespoons unsalted beef broth

Steps:

  • Cut beef with the grain into 2-inch-wide strips. Cut each strip across the grain into 1/4-inch-thick slices. Combine the beef, cornstarch, 1½ tsp. soy sauce, and 1 tsp. sherry in a medium bowl; stir until the cornstarch is no longer visible. Add 1 tsp. oil and stir until the beef is lightly coated.
  • Combine hoisin sauce, ketchup, chile-garlic sauce (or Sriracha) to taste, and the remaining 1½ tsp. soy sauce and 1 Tbsp. sherry in a small bowl. Set aside.
  • Heat a 14-inch flat-bottomed carbon-steel wok (or a 12-inch stainless-steel skillet) over high heat until a drop of water vaporizes within 1 to 2 seconds of contact. Cook, undisturbed, until the beef begins to brown, about 1 minute. Add onion and, using a metal spatula, stir-fry until the beef is lightly browned but not cooked through, 30 seconds to 1 minute more. Transfer the beef and onion mixture to a plate.
  • Add green and red peppers and broth to the pan. Cover and cook over high heat until the peppers are bright green and red and almost all the liquid has been absorbed, about 1 minute. Return the beef and onion and any accumulated juices to the pan. Add the reserved sauce and stir-fry until the beef is just cooked through and the peppers are tender-crisp, 30 seconds to 1 minute. SESAME BEEF AND BROCCOLI

Sesame Beef and Broccoli image

Sesame Beef and Broccoli! Full of protein, green broccoli goodness, and sticky-sweet garlic and ginger flavor. Perfect at-home takeout!

Provided by Lindsay

Categories     Dinner

Time 30m

Number Of Ingredients 14

1 lb. beef flank steak, thinly sliced
1 head broccoli, cut into florets
2 tablespoons vegetable oil
3 cloves garlic, thinly sliced or minced
one 1-inch knob fresh peeled ginger, grated or sliced
white rice, brown rice, or cauliflower rice for serving
thinly sliced green onions for serving
1/4 cup low sodium soy sauce
1/4 cup water
1/3 cup brown sugar (sub coconut sugar)
1 tablespoon sambal oelek
1 tablespoon rice vinegar (sub white vinegar)
1 tablespoon sesame oil
1 tablespoon cornstarch

Steps:

  • Freeze beef for 30 minutes - 1 hour for easier slicing. Slice against the grain, into very thin strips. Toss the beef strips with a generous pinch of coarse salt and let it rest while you prep everything else. (All of this is optional but recommended for flavor and texture.)
  • Whisk the sauce ingredients together.
  • Heat a large heavy skillet over medium heat. Add a swish of oil. Working in batches, add the beef in a single layer. Let rest, undisturbed, for a minute or two to achieve a nice browning on the meat. Flip each piece over and cook until browned and yummy. Remove beef from pan.
  • Add a swish of oil to the same pan. Add the broccoli; stir fry for 2-3 minutes, until bright green. (Sometimes I add a splash of water to steam it a little bit.) Remove broccoli from pan.
  • Turn the heat down and let the pan cool a bit. Add one last swish of oil. Add the ginger and garlic; sauté for 1-2 minutes. Add the sauce; stir until a thickened and sticky sauce forms. Add beef and broccoli back in. Toss gently to coat.
  • Serve with rice, thinly sliced green onions, and sesame seeds.
