DILLY CREAM CHEESE IN PASTRY
I had this tasty appetizer at a party and HAD to have the recipe. The horseradish adds a nice zip to the cool cream cheese and dill. Serve with crackers.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- On a lightly floured surface, unroll the crescent roll dough into a rectangle, and press all of the seams together to make a single sheet. Spread horseradish over the top of the block of cream cheese, then sprinkle with enough dried dill to cover. Place the block of cream cheese dill side down in the center of the sheet of dough. Sprinkle the other side with enough dill to cover. Wrap the dough around the cheese like a present, and seal any openings. Place on the prepared baking sheet.
- Bake for about 20 minutes in the preheated oven, or until the pastry is golden brown. Serve warm.

- Preheat oven to 425°F (220°C).
- In a pan over medium heat, melt butter. Add the garlic and onions, cooking until translucent.
- Add the spinach, salt, and pepper, cooking until spinach is wilted.
- Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
- On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
- Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
- Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
- Brush the beaten egg on the top and sides of the pastry. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
- Brush the top again with the egg wash.
- Bake for 20-25 minutes, until pastry is golden brown.
- Slice, then serve!

- Preheat oven to 400°F.
- In a small bowl, mix together 6 oz. of cream cheese and 1/2 cup of mayonnaise until smooth. Set aside.
- In a large bowl, mix together salmon, onions, celery, pimentos, peas, parsley, dill and lemon zest. Mix with the cream cheese mixture. Taste and season with salt and pepper.
- Spray a sheet pan with nonstick cooking spray. Lay 1 sheet of puff pastry on pan.
- Mound the salmon filling evenly across from one side to the other side, about 2 inches from the bottom end. Wrap the pastry over the top. Pinch the bottom and top pastry, rolling to seal it closed. Brush pastry with beaten egg and refrigerate for 15 minutes before baking.
- Bake for 25 minutes. Remove from oven and let rest 10 minutes before serving.
- While the pastry is baking, make the sauce. With a fork or hand mixer, blend 6 oz. of cream cheese with 1/2 cup mayonnaise until combined. Mix in the cucumber.
- Slice salmon and serve with sauce. Enjoy!

It is a very attractive dish with a wonderful cream cheese pastry that will make people think you are a cooking superstar! This is best to make ahead of time as it is a bit of a futzy dish and then pop in the oven before your company is coming.

- SOUR CREAM DILL SAUCE:.
- Mix all ingredients together in a bowl and refrigerate until ready to serve.
- PASTRY:.
- In large bowl beat together cream cheese, butter, sugar and salt until fluffy.
- Stir in flour just to blend.
- Divide in half; shape into squares. Wrap each half in plastic wrap; refrigerate until firm - about 1 hour.
- FILLING:.
- Meanwhile, in a large skillet, heat half of oil over medium heat; fry mushrooms and 1/4 teaspoon each of the salt and pepper until no liquid remains, about 7 minutes.
- Transfer to bowl.
- In a saucepan, heat remaining oil over medium heat. Fry onion, garlic and remaining salt and pepper for 3 minutes.
- Add rice and 1 cup water; bring to a boil. Cover, reduce heat and simmer until rice is tender and the water is absorbed, about 20 minutes.
- Add spinach and dill to rice mixture and fluff with fork. Let cool. (NOTE: It is important to let this mixture cool for as long as possible in order that it does not make the pastry soggy and difficult to work with - I unfortunately know this from experience.).
- PREPARING COULIBIAC:.
- Line rimmed baking sheet with parchment paper. On lightly floured surface, roll out 1 piece of pastry to 10 inch square and about 1/8 inch thick.
- Place on prepared pan. Spoon half of the rice mixture over pastry, leaving a 2 inch border.
- Top with 1 salmon fillet; spread with mushroom mixture.
- Top with remaining salmon fillet; spoon remaining rice mixture over the top.
- Mix egg yolk with 1 tablespoon of water for egg wash; brush over border of pastry.
- Roll out remaining pastry to 11 inch square; place on filling, smoothing around edge. Fold bottom edge over top edge, pressing to seal. Flute edges.
- Brush egg wash over pastry; cut 4 steam vents on top. Bake in 350°F oven until golden, about 1 hour.
- Let stand for 10 minutes. Using serrated knife, cut diagonally into quarters and then cut each quarter into half or thirds. Serve with Sour Cream Dill Sauce.

- Preheat the oven to 425F/218C and line a large baking sheet with parchment paper or a silicon mat. Prepare a large pastry bag tipped with a star tip, I used Ateco tip #847. Place the butter into a medium-sized saucepan and melt it over medium heat. Add the water and salt to the melted butter and allow the mixture to come to a simmer. Add the flour in all at once and whisk for about 20 seconds, until a dough ball forms. Switch over to a spatula and continue mixing and pressing the dough for about 30 seconds.
- Allow the dough to cool for about 20 minutes, until it's just lukewarm to touch. Begin adding the eggs, one at a time, mixing well after each addition; do this with a hand whisk or hand-held mixer. The dough will look funny at first but keep mixing; it will come together after the last egg is added. Transfer the dough into the prepared pastry bag. Pipe medium-sized dollops onto the prepared baking sheet, spacing them about 1-inch apart. Watch my video recipe to see how it's done.
- Bake the puffs in the preheated oven at 425F/218C for 10 minutes, then reduce the heat to 375F/190C and continue baking for another 35 to 40 minutes, until the puffs are a deep, golden color. Do not open the oven door at any time during the baking process, otherwise the pastries will fall flat! Remove the puffs from the oven and let them cool completely. - For the smoked salmon filling, first place the softened cream cheese into a mixer bowl and whisk on medium speed for a few minutes, until the cheese is creamy and smooth. Add in the chilled heavy cream and salt and whisk again on medium-high speed for 3 to 4 minutes, or until stiff peaks form. Chop the smoked salmon into pea-sized pieces and finely chop the dill. Add the salmon, dill and paprika into the cream filling and fold thoroughly with a spatula. Transfer the filling into a plastic bag or pastry bag for easier filling.
