Steps:
- Place the fruit in a large vat. Pour in the red wine, white wine, citrus rum and citrus vodka. Next, to add a subtle sweetness, dissolve the sugar in 1 cup water and add it to the mix. Stir well, then cover and refrigerate for several hours, giving the fruit and liquids time to meld. Serve in glasses over ice, and have tongs nearby so guests can help themselves to the fruit.

CLASSIC SPANISH SANGRIA
This is an authentic version of the popular wine drink. You can add any fruit that you want, but I find that apples and pears absorb all the rum. This one is not diluted with carbonated beverages. I have much success with red Burgundy wine and white rum, though spiced rum is nice too.

- Use a large glass pitcher, large enough to accommodate the liquid and fruit, when making your sangaria.
- Add the Sweet Vermouth, Cognac, and red wine . If adding sugar, add it now . We did not add the sugar and it was delicious and sweet enough with it.
- Using a long-handled wooden spoon, stir the mixture well, approximately 15 to 20 seconds. Pepe also pressed down on the fruit rinds, with the wooden spoon, to help release the flavors as he stirred.
