GOUDA COOKIES
Wonderful savory cookie to add to a cheese or fruit platter. Recipe is from about.com's Dutch food site.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place all ingredients in a food processor and blitz until the dough forms a crumbly, doughy texture. Shape into a flat disc, wrap in plastic wrap and rest in the fridge for 20 minutes.
- Sprinkle your work surface with flour and roll the dough out thinly to 3/32" thickness (3 mm). Cut out shapes using a cookie cutter and keep rolling out the dough as required, until you have used it all up.
- Line a cookie sheet with non-stick parchment paper and bake cookies for 10 minutes, or until slightly golden. Remove from the oven and allow to cool on a wire rack.
- Makes about 30 Gouda cookies, depending on the size of your cookie cutter.

Steps:
- Mix first 6 ingredients together and form 6 patties.
- Make an indent in each patty or a hole with a chop stick or your finger through each patty. This will stop the patty from swelling in the center. The hole will close.
- Grill 3 minutes each side for rare, 4 minutes each side for medium, 5 minutes each side for well done. One minute before removing, distribute cheese on each burger.
- Place on roll and garnish as you wish.

- Unroll crescent dough into one long rectangle; seal seams and perforations. Sprinkle with garlic powder. Cut into 24 pieces; lightly press onto the bottom and up the sides of ungreased miniature muffin cups. , Bake at 375° for 3 minutes. Place a piece of cheese in each cup. Bake 8-10 minutes longer or until golden brown and cheese is melted. Serve warm.

REALLY GOUDA MAC AND CHEESE

- Melt 1 tablespoon butter on a griddle over medium-high heat. Add bread and cook until toasted, 1 to 2 minutes per side. Set aside to cool.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain macaroni and transfer to a large bowl.
- Place cooled toast in a resealable bag and slowly crush with the bottom of a saucepan or a rolling pin. Set bread crumbs aside.
- Mix Cheddar and Gouda cheeses together and divide into 4 equal piles.
- Melt 1/2 cup butter in a saucepan over medium heat.
- While butter is melting, whisk 1 cup milk and cornstarch together in a bowl until cornstarch has dissolved. Add milk-cornstarch mixture to the melted butter. Gradually mix in remaining 1/2 cup milk and half-and-half. Cook, whisking continuously, until mixture thickens to the consistency of a milkshake, 3 to 5 minutes. Add 2 piles of cheese, one at a time, whisking after each addition until cheese has completely melted.
- Pour cheese sauce over cooked macaroni and mix to coat. Transfer 1/2 of the mac and cheese mixture to the reserved baking pan and spread evenly. Sprinkle 1 pile of cheese over top. Evenly distribute the rest of the mac and cheese mixture into the pan, sprinkle with remaining cheese, and top with reserved breadcrumbs.
- Bake in the preheated oven until golden and bubbly, 15 to 20 minutes.

- Place all ingredients in a food processor and process until it starts forming a dough. Place on some plastic wrap and form into a flat disk. Freeze for at least an hour to set.
- Take the dough out of the freezer. Place on your counter top and unwrap. Place another plastic wrap on top of the dough and roll out to 1 cm thickness. Remove the top plastic wrap and cut out the cookies with your cookie cutters. Place on the baking trays and top with the sage leaves.
- Bake for 10 minutes. Take out of the oven and let cool on the baking trays for 10 minutes and then transfer to wire rack to fully cool down.
