1-1/2 pounds sole fillets, cut into 1-inch strips
1 tablespoon taco seasoning
1/4 cup butter, cubed
1 package (10 ounces) angel hair coleslaw mix
1/2 cup minced fresh cilantro
1/2 cup reduced-fat mayonnaise
1 tablespoon lime juice
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
8 taco shells, warmed
8 lime wedges

Steps:

  • Sprinkle fish with taco seasoning. In a large skillet over medium heat, cook fish in butter for 3-4 minutes on each side or until fish flakes easily with a fork., Meanwhile, in a small bowl, combine the coleslaw, cilantro, mayonnaise, lime juice, sugar, salt and pepper., Place fish in taco shells. Top with coleslaw mixture; serve with lime wedges.

3/4 cup olive oil
6 tablespoons lime juice
1 tablespoon fresh cilantro
1 tablespoon vegan or regular mayonnaise
1 teaspoon ground cumin
1/2 teaspoon honey
1 canned chipotle pepper in adobo
Kosher salt
One 19-ounce bag frozen fish sticks, such as Gorton's
One 15-ounce can black beans, rinsed and drained
1 cup diced jicama
1 cup corn kernels
1 cup cherry tomatoes, halved
1 small red onion, finely diced
1 head romaine lettuce, chopped
One 5-ounce container mixed spring greens
1 English cucumber, sliced
Shredded Mexican blend cheese, for topping
Sour cream, for topping
Sliced avocado, for topping
Tortilla strips or crumbled tortilla chips, for topping

Steps:

  • For the dressing: In a blender, add the olive oil, lime juice, cilantro, mayo, cumin, honey, chipotle pepper and 1 teaspoon salt and blend until smooth.
  • For the salad: Cook the fish sticks according to the package directions.
  • Meanwhile, in a large bowl, combine the black beans, jicama, corn, cherry tomatoes and red onion with half the dressing. Add the romaine, mixed greens and cucumber to the bowl and toss to coat.
  • Divide the salad among 4 bowls. Top with the fish sticks, cheese, sour cream, avocado and tortilla chips. Serve with the remaining dressing on the side.

1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced fresh cilantro
4 teaspoons taco seasoning
1/2 pound cod or haddock fillets, cut into 1-inch pieces
1 tablespoon lemon juice
1 tablespoon canola oil
4 taco shells
Optional ingredients: Shredded lettuce, chopped tomato and lime wedges

Steps:

  • For sauce, mix mayonnaise, sour cream, cilantro and 2 teaspoons taco seasoning. In another bowl, toss cod with lemon juice and remaining taco seasoning., In a skillet, heat oil over medium-high heat; saute cod just until it begins to flake easily with a fork, 4-6 minutes (fish may break apart as it cooks). Spoon into taco shells; serve with sauce and optional ingredients as desired.

1 small yellow onion
1 jalapeno pepper
2 plum tomatoes
1 fresh lime
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1/4 tablespoon garlic powder
1/4 tablespoon onion power
2 cups corn flour, such as Maseca
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup room temperature water
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon smoked paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon ground white pepper
2 small fish fillets (We use tuna, but you can substitute with whatever your family's favorite fish is. Total weight should be about 1 1/2 pounds.)
1 tablespoon vegetable oil
1 clove garlic, minced
1 tablespoon crisp chardonnay (if you have to cook with it, make it something that you will enjoy finishing your meal!)
1 tablespoon chopped fresh cilantro

Steps:

  • For the pico de "guyo": Remove the thin outer layers of the onion and chop into 1/8- by 1/8-inch pieces. Chop the jalapeno in half and remove the seeds and inner membrane (use gloves when handling the jalapeno). Dice the jalapeno into small pieces. Cut the tomatoes into 1/8- by 1/8-inch pieces. Cut the lime in half and squeeze the juice into the mix. Add the salt and pepper. Let all the ingredients sit and marinate for at least 30 minutes.
  • For the cilantro lime sauce: Mix the mayonnaise, sour cream, cilantro, lime juice, garlic powder and onion powder together and let marinate for at least 30 minutes.
  • For the corn tortillas: Place the corn flour in a mixing bowl. Add the salt and pepper. Slowly add the water while mixing the dough with your hands until it becomes a tad bit softer than a "play dough" consistency. Break off the dough into twenty-four 1/4-inch round balls. Flatten the dough using a tortilla press that has been lined with a ziptop bag on each side. Remove the dough and place directly onto a skillet that has been lightly oiled and heated to 350 degrees F. When you notice the dough just beginning to show stress cracks, about 3 minutes, flip it and cook an additional 5 minutes. Remove from the heat and stack with paper towels in between each tortilla.
  • For the blackening seasoning: Combine the oregano, thyme, smoked paprika, cayenne pepper and white pepper in a bowl and mix together.
  • For the fish: Cut your fresh fish into small cubes about 1/4- by 1/4-inch. Sprinkle liberally with 1/2 tablespoon of the blackening seasoning. Heat the oil in a pan over medium-high heat. Add the fish to the pan and saute for 1 minute. Add the garlic to the pan and continue to saute for about 45 more seconds. Add the wine and cilantro. Finish cooking about 1 more minute.
  • Reheat the tortillas if necessary, remove from the heat and add some lettuce, cooked fish, cilantro lime sauce and pico de "guyo". Serve 3 per plate. Enjoy!

50g yogurt
50g mayonnaise
1 jalapeno chilli
1 garlic clove
1 lime , juiced
small pack coriander
1 tsp fajita seasoning
½ lime , juiced
2 tsp olive oil
20g fajita seasoning
2 cod loins (around 140g each), cut into chunks
8 small corn tortilla , griddled, to serve
8 spoonfuls each curtido and tomatillo salsa, to serve (refer to the method for our recipes)

Steps:

  • To make the sauce, put all of its ingredients in a food processor, blitz until smooth and season well. Add a splash of water if you need to, to make it a consistency that can be drizzled, then pour into a bowl or jug and chill until needed.
  • To make the fish, whisk the lime juice, oil and fajita seasoning in a bowl, add the cod and toss well. Fry the cod in a non-stick frying pan over a high heat for 5 mins until beginning to flake, but not falling apart. Divide between the tortillas, each one drizzled with the sauce and topped with a spoonful of our curtido and our tomatillo salsa.

1 1/4 pounds tilapia fillets, about 5
1 cup all-purpose flour
1 teaspoon baking powder
Kosher salt
1 to 1 1/2 cups water
3 cups canola oil
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon hot sauce
1 tablespoon lime juice
2 teaspoon garlic, chopped
3 tablespoons chopped fresh cilantro leaves, divided
Freshly ground black pepper
8 corn tortillas
1/2 head green cabbage, shredded (reserve remaining half for Round 2 Recipe, Bean and Cheese Chalupas)

Steps:

  • Cut the fish into 1 1/2-inch chunks. (Reserve 1 fillet and refrigerate for the online Round 2 Recipe, Ceviche.)
  • To make the batter, whisk together the flour, baking powder, and salt in a medium bowl. Whisk in enough water, about 1 to 1 1/2 cups, until the mixture is the consistency of pancake batter.
  • Heat the oil in a deep skillet over medium heat to 360 degrees F.
  • When the oil is hot, working in batches, dip the fish pieces into the batter and carefully add them to the hot oil. Cook the fish until golden brown on both sides and the fish is cooked through, about 4 to 6 minutes total. Remove from the pan and drain on to a sheet tray lined with a paper bag or paper towels.
  • To make the sauce, whisk together the mayonnaise, sour cream, hot sauce, lime juice, garlic, and 2 tablespoons cilantro in a small bowl. Taste and adjust seasoning with salt and pepper.
  • Wrap the tortillas in a damp towel and microwave on medium for 1 minute to warm. Put about 1/4 cup of the shredded cabbage on each tortilla. Put 3 pieces of the fried fish on top of the cabbage, then top with some sauce. Arrange the tacos on a serving platter and garnish with a sprinkle of cilantro. Serve immediately.

2 Tbsp. TACO BELL® Taco Seasoning Mix
1 pkt. OVEN FRY Fish Fry Seasoned Coating Mix for Fish
1/2 cup TACO BELL® Thick & Chunky Salsa

Steps:

  • Preheat oven to 425°F. Moisten fish fillets with water. Shake off excess. Add taco seasoning mix to the coating mix in shaker bag.
  • Shake 1 or 2 fish fillets at a time with coating mixture. Place in 15x10x1-inch baking pan sprayed with cooking spray. Discard any remaining coating mixture.
  • Bake 12 to 20 minutes or until fish flakes easily with fork. Serve with salsa.
