HOT ITALIAN PATTIES
I've been making these spicy and satisfying sandwiches for more than a dozen years. On occasion, I substitute country sausage for the Italian sausage and they taste just as good. Served with a zesty sauce for dipping, they're my family's favorite. -Brenda Jackson, Garden City, Kansas

- In a saucepan, combine the tomato sauce, basil, pepper flakes and garlic powder. Bring to a boil over medium heat. Reduce heat; simmer for 15 minutes. , Meanwhile, shape sausage into four thin oval patties. In a skillet over medium heat, cook patties until no longer pink; remove and keep warm. , In the drippings, saute onion until tender. Place a slice of cheese on four slices of bread; layer each with a sausage patty, onion and remaining cheese. Top with remaining bread. Butter the outsides of sandwiches. , On a griddle or in a large skillet, toast over medium heat until both sides are golden brown and cheese is melted. Serve with herbed tomato sauce for dipping.

SPICY ITALIAN BURGER WITH CRISPY PANCETTA

- 1. In a medium saucepan, on low heat, sauté the minced garlic in the olive oil for 2 minutes and add the sauces. Combine thoroughly and keep warm.
- 2. Place the ground pork and sausage mixture in a large mixing bowl. Add the salt and pepper and the chopped onions. Combine thoroughly, but don't over mix. Form into 6 patties, cover and set aside.
- 3. In a large sauté pan melt the butter over medium high heat. Lower the heat to medium. Add the mushroom slices, the salt and pepper and brown on both side for 2 to 3 minutes. Remove from the heat.
- 4. Toss the spinach and Arugula in a medium bowl with the oil, vinegar and salt and set aside
- 5. To a hot frying pan add the pancetta and cook until crispy. Remove from the heat and set aside on paper towels.
- 6. Slice the ciabatta buns in half and place cut side up on a large baking sheet. Combine the melted butter and minced garlic in a small bowl. Brush the mixture on each bun half. Sprinkle on the Parmesan cheese. Place in a pre-heated 375 deg oven for 7 to 10 minutes until the edges are just turning brown. Remove from the oven.
- 7. Heat a grill to medium high. Put an indentation in the middle of each burger with your thumb and place on the grill indentation side up. Cook for 4 minutes, turn the burgers and cook and additional 4 minutes. Lower the heat to medium low, add 2 slices of cheese to each burger and cook an additional 2 minutes until the cheese is melted. Remove from the heat and cover. The internal temperature of the burgers should be about 155 to 160 degrees when they are removed from the heat.
- 8. Assembling the Burgers Divide the dressed greens between the bun bottoms. Place 3 mushroom slices on each bun followed by 2 tablespoons of the sauce. Place the burgers on top of that, followed by another 2 tablespoons of the sauce and then the pancetta. Cover and serve.
HOMEMADE ITALIAN SAUSAGE PATTIES
If you need Italian sausage, add this seasoning to ground pork and make your own homemade Italian sausage.

- Combine parsley, salt, fennel, black pepper, garlic, Italian seasoning, minced onion, and red pepper flakes in a spice grinder or mortar and pestle. Grind until all seasonings are finely crushed.
- Place pork in a large bowl and add seasoning mix. Mix with your hands until well combined. Roll into a log and slice into four 1/2-inch thick sausage patties.
- Heat oil in a skillet over medium heat and cook sausage patties for 4 minutes. Turn patties and finish cooking for 4 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C).

SPICY SAUSAGE MEATLOAF PATTIES WITH ITALIAN BARBECUE SAUCE
I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

- Preheat oven to 425 degrees F.
- Heat a small skillet over medium heat with 2 tablespoons extra-virgin olive oil. When the oil is hot, saute the red pepper, half the onions, celery and carrots together, 5 minutes, season with salt and pepper then remove to a plate to cool.
- Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
- Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.
- Serve meatloaves with Italian barbecue sauce on top and green salad alongside.

- Combine tomato sauce, 1 tsp of Italian seasoning & 1/8 tsp of salt in a small saucepan.
- Cover & cook over medium heat until hot, set aside & keep warm.
- Combine turkey, garlic, remaining 1 teaspoon Italian seasoning, fennel seeds, pepper flakes & 1/8 tsp salt. Mix until blended.
- Divide mixture into 4 equal portions & shape into 1/2 inch thick patties.
- Coat a large nonstick skillet with cooking spray; Place over medium heat until hot.

- Spoon tomato sauce over patties to coat.

SPICY PORK PATTIES
These are so easy to put together. Make them as spicy as you like, we used a very hot chili, and hot curry paste, but you could tone it down if you wanted. Make them into 12 little patties for appetizers, or 4 large for dinner (cook longer). Serve with a thai dipping sauce, or a cucumber raita.

One of my favorite cheap & easy lunches. I like them with a dollop of mayonnaise or tarter sauce, or serve on a bun with lettuce, tomato and mayo. I've even reheated the leftover patties the next day in my toaster!

- Preheat oven to 475°.
- Heat a small skillet over medium heat with 2 tablespoons olive oil; when oil is hot, add the bell pepper, half the onion, celery, and carrots; stir/saute 5 minutes; season with salt and pepper, then remove to a plate to cool.
