GARLIC PARMESAN PARCHMENT-BAKED CHICKEN RECIPE BY TASTY



Garlic Parmesan Parchment-baked Chicken Recipe by Tasty image

Here's what you need: parchment paper, chicken breast, zucchini, garlic, butter, Parmesan, salt, pepper

Number Of Ingredients 8

parchment paper, or aluminium foil, 12x18 inches (30.5 x 46 cm)
1 chicken breast
½ zucchini, sliced
1 clove garlic, minced
2 tablespoons butter
2 tablespoons Parmesan
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Fold the parchment paper in half, then open up.
  • Slice the zucchini into rounds and lay them on one half of the parchment paper.
  • Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the zucchini. Sprinkle with salt and pepper.
  • Lay the chicken on the zucchini, season with salt and pepper and spoon on the rest of the garlic butter. Top with parmesan.
  • Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
  • Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F (75˚C).
  • Enjoy!

1 chicken breast
1 small potato, sliced
¼ onion, sliced
3 tablespoons BBQ sauce
1 tablespoon olive oil
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Fold the parchment paper in half, then open up.
  • Quarter the potatoes and thinly slice the onion.
  • On one half, lay down the cut potatoes, drizzle on oil and sprinkle on salt & pepper.
  • Lay the chicken on the potatoes, season with salt and pepper and spread on the barbecue sauce. Top with sliced onions.
  • Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
  • Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F (75˚C).
  • Enjoy!

1 pound baby bok choy, trimmed and leaves separated
12 ounces cherry tomatoes, halved
1 small shallot, thinly sliced
1 bunch thyme
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
4 boneless, skinless chicken-breast halves (about 6 ounces each), pounded 1/2 inch thick
1/4 cup dry white wine, such as Sauvignon Blanc

Steps:

  • Preheat oven to 400 degrees with racks in upper and lower thirds. Cut four 12-by-17-inch pieces of parchment. Fold each in half crosswise to make a crease, then unfold and lay flat. Toss together bok choy leaves, tomatoes, shallot, 1 teaspoon thyme leaves, and oil in a large bowl. Season with salt and pepper.
  • Season chicken with salt and pepper. Dividing evenly, place bok choy mixture on one side of crease on each piece of parchment, then top with chicken and 2 thyme sprigs. Drizzle each with 1 tablespoon wine. Fold parchment over, then make small overlapping pleats to seal and create half-moon-shaped packets.
  • Bake on 2 rimmed baking sheets until chicken is cooked through, 22 minutes. Transfer to plates; serve immediately, carefully cutting packets open with kitchen shears.

4 boneless skinless chicken breast halves
1 cup carrot, cut in matchstick size strips
1 cup zucchini, matchstrick size strips
1/2 cup snow peas
1/2 cup thinly sliced red bell pepper
1/2 cup reduced-sodium chicken broth, divided
2 tablespoons all-purpose flour
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 375°.
  • Cut parchment paper into four 10-inch squares.
  • place 1 chicken breast in center of each piece of parchment; arrange carrots, zucchini, peas and bell pepper around chicken.
  • Combine 1/2 C.
  • chicken broth and flour in a small saucepan; stir in garlic, thyme, salt, nutmeg and black pepper.
  • Bring to a boil over high heat, stirring constantly until thickened.
  • Reduce heat to low, simmer 1 minute.
  • Spoon broth mixture evenly over chicken and vegetables.
  • Fold each parchment square in half diagonally, enclosing chicken and vegetables to form a triangle.
  • Fold edges over twice to seal.
  • Place parchment packets into 15x10-inch jelly roll pan.
  • Bake 25-30 minutes or until parchment is browned and puffed.

4 boneless skinless chicken breasts
4 sage leaves, chopped
1 tablespoon chopped tarragon leaf
1 lemon, juice and zest of, finely grated
4 teaspoons creme fraiche
salt
freshly dround black pepper
4 ripe vine tomatoes
1 tablespoon chopped basil

Steps:

  • Preheat the oven to 200 degrees celcius. Cut four large squares of parchment and place a chicken breast on each one. Sprinkle with the sage, tarragon and lemon zest. Squeeze over the lemon juice and spread a tsp of the creme fraiche on top of each chicken breast. Season well with salt and pepper.
  • Bring the corners of the parchment up and over the chicken and twist them together to form a tent like parcel. fold the edges of the paper together to seal and place the parcels on a large baking tray. cook in the oven for 15-20 mins or until te chicken is cooked through.
  • Meanwhile, preheat the grill. Halve the tomatoes and grill them 3-4 mins or until softened. Sprinkle well with the chopped basil and season well.
  • Unwarp the chicken and transfer to warmed serving plates. Spoon over the juice and serve immediately, with the grilled tomatoes and steamed green beans.
