QUICK MAC AND CHEESE FOR ONE

Quick Mac and Cheese for One image

A quick recipe for mac and cheese for one. Easy, cheesy, and oh so good.

Provided by Tracy

Categories     Dinner     Lunch

Time 20m

Number Of Ingredients 8

2.5 ounces (½ cup) uncooked macaroni (or pasta of choice*)
1 tablespoon salted butter
1 tablespoon all-purpose flour
½ cup milk (any percentage)
½ cup (2oz) shredded sharp cheddar cheese (*)
Salt and pepper
Pinch of cayenne (optional)
Pinch of nutmeg (optional)

Steps:

  • Bring a small pot of lightly salted water to boil over high heat.
  • While your water heats, shred cheese, measure out the rest of your ingredients.
  • Cook macaroni according to the instructions on the box.
  • While your pasta cooks, in a small saucepan, melt butter over medium heat. Whisk in flour and cook until a thick paste forms and turns golden, about 30 seconds to 1 minute. Slowly whisk in milk, whisking out any lumps as they form. Cook, whisking constantly until mixture thickens and begins to bubble around the edges, 2 to 5 minutes.
  • Remove from heat and stir in cheese until completely melted. Add salt and pepper to taste, remembering that the pasta will cut the level of spice once added. If you like nutmeg and cayenne (I do!), start with a sprinkle, taste, and work your way up. A little of both goes a long way!
  • Once pasta is cooked, drain and stir in cheese sauce. Serve immediately and enjoy!

BAKED MAC AND CHEESE FOR ONE

Baked Mac and Cheese for One image

What a wonderful way to indulge yourself in macaroni and cheese... while still maintaining portion control! It's creamy, cheesy, and better than any single-serve mac and cheese you'll get from the store. Quick and easy to make, you probably have the ingredients in your kitchen already. A great recipe if you're cooking for one.

Categories     Other Main Dishes

Time 30m

Number Of Ingredients 15

4 Tbsp uncooked macaroni pasta
1 Tbsp butter
1 Tbsp all-purpose flour
1 pinch pepper
1/4 tsp salt
1/8 tsp onion powder
1/2 c milk
1/2 c cheddar cheese, shredded
*OPTIONAL INGREDIENTS
1/8 tsp ground mustard
1 dash(es) hot sauce
1 dash(es) Worcestershire sauce
TOPPINGS
1 Tbsp cheddar cheese, shredded
2 tsp bread crumbs (I like Panko bread crumbs)

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Fill a small saucepan with water and bring to a boil. Add pasta and let boil about 8 min or until the pasta is cooked but still firm. Drain & set pasta aside.
  • 3. In the same saucepan, melt the butter over medium-high heat.
  • 4. Stir in the flour, salt, pepper, and onion powder and stir until combined.
  • 5. Add milk and whisk until smooth. Cook for about 2 minutes stirring constantly until mixture thickens.
  • 6. Reduce heat to low. At this point, if using add the ground mustard, Worcestershire, or hot sauce.
  • 7. Add cheese and stir until cheese melts and the mixture is smooth. Stir in the pasta.
  • 8. Spoon into greased, oven-proof ramekin, soup crock, or small gratin dish. Sprinkle top with cheddar cheese, or bread crumbs if you wish (I use both!).
  • 9. Place on a small baking sheet (in case it bubbles over), and bake for about 10-15 minutes until the cheese is melted and it is heated through.
  • 10. *Note: There are so many ways you can vary this. You could use sauteed onions instead of the onion powder, or add bacon, etc. Let your imagination run wild! :)

Categories     Thanksgiving

Time 45m

Number Of Ingredients 15

16 oz (500 g) elbow macaroni, uncooked
6 cups chicken broth
8 oz (225 g) sharp cheddar cheese, shredded
8 oz (225 g) colby jack cheese, shredded
8 oz (225 g) part-skim mozzarella cheese, shredded
8 oz (225 g) American cheese, cubed
4 oz (125 g) cream cheese, cubed and room temperature
1 cup (250 ml) half and half
1 cup (250 ml) heavy cream
Kosher salt and freshly cracked black pepper, to taste
1/2 teaspoon (4g) smoked paprika
1-2 teaspoon (3g) garlic powder
1 teaspoon (3g) onion powder
1/2 teaspoon mustard powder
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Butter an 8 by 11 or 9 by 13-inch baking dish and set aside.
  • Fill a large stockpot or dutch oven halfway with chicken broth (or water if you don't have broth), and bring to a boil. Add in elbow macaroni and cook until just under al dente, according to package directions. Do not fully cook or overcook the macaroni pasta, it'll finish cooking through completely in the oven. Once just under al dente, drain the pasta.
  • While the pasta boils, use a wooden spoon to mix the half and half, heavy cream, half of the cheddar cheese, half of the Colby jack cheese, all of the mozzarella cheese, all of the American cheese, and all of the cream cheese in a large mixing bowl.
  • Add smoked paprika, garlic powder, onion powder, mustard powder, and some kosher salt and pepper, stirring well and tasting the mixture to ensure there is a good flavor. Do not add too much salt, since cheese is pretty salty and will add its saltiness as it bakes. Once satisfied with the seasoning, stir in the cooked macaroni and eggs until well incorporated with the cheese.
  • Pour the macaroni mixture into the baking dish and spread evenly.
  • Top the macaroni and cheese generously with the rest of the cheddar cheese and colby jack cheese. Sprinkle the top with a little more smoked paprika, if desired.
  • Bake the mac and cheese for 35 minutes or until the cheese crust is bubbly and nicely browned. Do not over-bake or the macaroni pasta will become mushy and the cheese mixture will become dry.
  • Let the baked macaroni and cheese cool for about 10 minutes or until just cool enough to serve. Serve hot so the cheese is nice and creamy.
  • Keep in an airtight container in the fridge for up to 4 days.

VELVEETA BAKED MACARONI & CHEESE

Velveeta Baked Macaroni & Cheese image

Mac and cheese is one of the all-time comfort foods. When my kids' taste finally outgrew the boxed stuff, I came up with this recipe to satisfy their need for cheese (my daughter, in particular, is a cheese junkie). I'm sure this recipe contains influences from my Mother and Grandmother. It goes great with other comfort food staples like meatloaf, roast, pork roast, etc.

Time 55m

Yield 10 serving(s)

Number Of Ingredients 7

24 ounces macaroni
1/2 cup butter
1/2 cup flour
4 cups milk
16 ounces Velveeta cheese (sometimes I use even more)
1 pinch white pepper or 1 pinch black pepper
1 -2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • Prepare macaroni according to package directions.
  • Melt butter in a large pan.
  • Whisk flour into melted butter to create a light roux (paste).
  • Slowly whisk milk into the roux, whisking constantly to avoid lumps.
  • Allow milk and roux to heat for about one minute, then begin adding the Velveeta.
  • Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper.
  • After macaroni has cooked, drain the water from the pot and mix in the cheese sauce.
  • Once the macaroni and sauce are mixed together, transfer to a 9 x 13 baking dish.
  • Cook uncovered for 25-30 minutes or until bubbly.
  • Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is thoroughly melted.

Steps:

  • In a medium pot, add broth, milk, butter, garlic powder, mustard, salt, ground black pepper and bring to a boil.

  • Boil the pasta: Boil the macaroni according to the package instructions, then drain it and set aside.
  • Make a roux: While the pasta cooks, add the butter to a large skillet that's oven proof or a Dutch oven and melt over medium heat. Once the butter has melted whisk in the flour and cook for 1 to 2 minutes until the mixture is lightly browned. This will remove the raw taste of the flour. Whisk in the salt and pepper.
  • Add milk to the roux: Add the milk and whisk to remove lumps. You can add it all at once or a bit at a time whisking rigorously until smooth.
