2 tablespoons olive oil
1 medium onion, (about 1 cup), cut into 1/2-inch cubes
1 clove garlic, minced
1/4 teaspoon each ground ginger and ground cinnamon
3/4 teaspoon ground cumin
Salt and freshly ground pepper
1 pound (about 2 cups) butternut squash, peeled and seeded, flesh quartered lengthwise and cut into 1/4-inch-thick slices
1 tablespoon tomato paste
1 1/2 cups low-sodium canned chicken broth
2 teaspoons freshly grated lemon zest
3/4 cup couscous
1/3 cup golden raisins

Steps:

  • Heat oil in a medium saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until softened, 3 to 5 minutes. Stir in ginger, cinnamon, cumin, and 1/2 teaspoon each salt and pepper; cook 1 minute. Add squash and tomato paste; cook 3 minutes more.
  • Stir in broth and zest; simmer until squash is tender and sauce is thickened, 12 to 15 minutes. Season with salt and pepper.
  • Meanwhile, bring 1 1/2 cups water to a boil with 1/4 teaspoon salt. Put couscous and raisins in a glass bowl; pour in boiling water. Cover tightly with plastic wrap; let stand 5 minutes. Uncover; fluff with a fork. Serve couscous with squash and sauce.

  • Cook 1 1/2 cups Israeli couscous as the label directs. Meanwhile, cook 1 small chopped onion, 1 teaspoon chopped thyme, 1 cup cubed butternut squash, 3 chopped dates and 1/2 teaspoon kosher salt in a skillet with olive oil until just tender, 6 minutes. Add 1/2 cup water and cook 4 minutes. Stir in the couscous, 1/2 cup chopped pistachios and 2 tablespoons chopped parsley; season with salt and pepper.

2 tbsp harissa paste
1 tsp each ground cumin and ground coriander
2 red onions , halved and cut into thin wedges
2 skinless chicken breasts , cut into bite-sized chunks
1 small butternut squash , cut into 1cm chunks (no need to peel)
x cans tomatoes
zest and juice 2 lemons
200g cherry tomato , halved
140g couscous
small bunch coriander , roughly chopped

Steps:

  • Heat a large non-stick casserole dish or pan on the hob. Add the harissa, spices and onions, stir and cook gently for 10 mins until soft. Add chicken and brown for 5-10 mins. Add squash, stirring to combine, and a splash of water if it starts to stick. Cook for 5 mins more.
  • Tip canned tomatoes into the pan with ½ can of water, cover and simmer for 20-30 mins. Add the lemon zest and juice, cherry tomatoes, couscous and seasoning. Cover and turn off the heat. Leave on the hob for 10 mins, then stir through the coriander and serve.

1 medium acorn squash
1 cup water
1/2 cup unsweetened apple juice
1/3 cup uncooked couscous
1/2 cup dried cranberries or cherries
2 tablespoons chopped walnuts
2 tablespoons chopped green onion
1 tablespoon butter, melted
2 teaspoons brown sugar
1/8 teaspoon salt
1/8 teaspoon ground cinnamon

Steps:

  • Cut squash in half; discard seeds. Place squash cut side down in an ungreased 13-in. x 9-in. baking dish; add water. Bake, uncovered, at 350° for 40-45 minutes or until tender. , In a small saucepan, bring apple juice to a boil; stir in couscous. Cover and remove from the heat; let stand for 5 minutes or until liquid is absorbed. Fluff with a fork., Scoop out squash, leaving a 1/4-in. shell. Cut pulp into 1/2-in. pieces; place in a bowl. Stir in the couscous, cranberries, walnuts and onion. Combine the butter, brown sugar, salt and cinnamon; drizzle over couscous mixture and toss gently. Spoon into squash shells. Serve immediately.

1 tablespoon vegetable soup base
1 ¾ cups Israeli couscous (such as Osem®)

5 baby portobello mushrooms, or more to taste, thinly sliced
1 leek, thinly sliced
½ red bell pepper, finely chopped

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Place squash, cut-sides down, on the prepared baking sheet.
  • Bake in the preheated oven until squash is soft to the touch, about 30 minutes.
  • While the squash is baking, bring water and bouillon to a boil over medium-high heat. Add couscous and garlic, cover, and lower to a simmer. Cook until water has been absorbed, 8 to 10 minutes.

1 (3-inch) cinnamon stick
1 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 475°F.
  • Halve lemons and scoop out flesh, keeping both flesh and peel. Cut enough peel into 1/4-inch dice to measure 1/4 cup. Put lemon flesh in a sieve set over a bowl and press with back of a spoon to extract juice.
  • Toss squash with 1 tablespoon oil and salt to taste in a large shallow baking pan and spread in 1 layer. Roast in upper third of oven 15 minutes, or until squash is just tender, and transfer to a large bowl.

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and golden, about 10 minutes. 4 squash, each about 1 to 2 pounds
3/4 cup water, salted if desired
2 1/2 cups uncooked couscous
1 cup currants
2 tablespoons margarine
4 tablespoons fat-free margarine, spread
2 large golden delicious apples, cored and sliced
2 pears, cored and chopped coarsely
1/2 cup dried apricot, cut into small pieces
1/2 cup golden raisin
1/2 cup coarsely chopped walnuts
4 tablespoons mild honey
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon mace
1/2 teaspoon ground allspice
1 1/4 teaspoons cardamom
1/2 teaspoon fresh ground black pepper
salt
1 pinch ground cinnamon
fresh greens or fresh edible flower, for garnish

Steps:

  • Cut the top of each squash off to make a handsome lid.
  • Set aside the lids.
  • Cut a thin slice from the bottom of each squash to make it stand firmly.
  • Using a large metal spoon, scoop out and discard the seeds and stringy flesh.
  • Remove the flesh from each to weigh a combined total of about 1 pound, taking some from the lid pieces, if necessary.
  • Cut the scooped-out squash into 1/2 inch cubes.
  • Steam until fork-tender, about 10 minutes.
  • Meanwhile, bring salted water to a rolling boil.
  • Stir in the couscous and currants, cover and remove from the heat.
  • Let sit 10 minutes.
  • Preheat the oven to 325*.
  • Heat 2 tbls.
  • margarine in a large skillet, and cook the apples, pears, apricots, raisins and walnuts, stirring, for 5 minutes.
  • Add 2 tbls.
  • honey, spices except for the pinch of cinnamon, couscous, steamed squash and salt to taste.
  • Cook, stirring gently, for 2 or 3 minutes more.
  • Remove from heat.
  • In a small pot, melt the remaining margarine, stir in the remaining honey and a pinch of cinnamon.
  • Generously brush the inside of the squash with the honey mixture and divide the filling equally among them.
  • Replace the squash lids, carefully turn upside down and place on a baking sheet sprayed with nonstick cooking oil.
  • Bake until a fork easily pierces the squash, about 1 hour.
  • Carefully transfer the roasted squash to a large serving platter, remove the lids and cut each squash in half vertically.
  • Garnish the platter with fresh greens or flowers.

1 bunch fresh spinach, trimmed and coarsely chopped
1 tablespoon margarine
½ small onion, chopped
½ teaspoon seasoned salt, or to taste
salt and ground black pepper to taste
¼ cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place acorn squash cut-side down on baking sheet.
  • Bake squash in the preheated oven until tender when pierced with a fork, about 45 minutes. Flip to face up and let cool slightly.
  • Bring 2 1/4 cups water to a boil in a saucepan; remove from heat and stir in couscous and cilantro. Cover saucepan and let stand until water is absorbed completely, about 10 minutes. Fluff couscous with a fork.
