SUGAR DONUTS FROM CANNED BISCUITS
Since I was young, my mother made these for us and when I married, my daughters always wanted these also. Now my grandchildren look forward to making them, helping to cut the holes and dipping them in the sugar. It is delicious served warm.

Steps:
- Preheat 2 inches of oil in a Dutch oven or a large pot. It's not a good idea to use a small short sided skillet for this due to the hot oil splashing out.
- While the oil is heating to 350 degrees, get your biscuits ready. Pat or roll out each biscuit to approximately 1 1/2 inches in height. Then cut out the middle of each biscuit.
- When the oil is ready, add two to three biscuits in at a time. Using tongs turn them over after about three minutes so both sides get browned. Then repeat the same process with the donut holes.
- Remove them immediately and place them on paper towels to drain.
- After the donuts are done, melt the chocolate in a double boiler or microwave following the instructions on the package.
- As soon as the homemade donuts are cooled down enough to touch, dip them in the chocolate and top with sprinkles, roll in a simple sugar mixture or roll them in cinnamon mixture.

CANNED BISCUIT DOUGH DONUTS AND HOLES
I made these one evening when I so wanted donuts. These are so good. I can't have confectioners' sugar so I covered my donuts with Splenda and cinnamon. I didn't have the large can of donuts so I used the little can. Be sure to watch these as they tend to float to the bottom of the kettle and stick to the bottom. I got this recipe from Food Network.

Steps:
- Heat 2 inches peanut oil in a large pot or Dutch oven to 350 degrees F.
- In a shallow bowl, stir together the ground cinnamon and sugar and set aside. In a small bowl, whisk together 1 cup of confectioners' sugar, 2 tablespoons of milk and 1 teaspoon of vanilla extract, set aside. This is the vanilla icing. In another bowl, whisk together 1 cup of confectioners' sugar, 1/4 cup of cocoa powder and 3 tablespoons of milk and set aside. This is the chocolate icing.
- Lay out the biscuits on a cutting board and with a 1 1/2-inch round cookie or biscuit cutter, cut out a hole from the middle of each biscuit. Fry them in the oil until golden and then flip with tongs to fry the other side. You can even fry the donut holes. Drain on paper towels and then toss in the cinnamon-sugar or ice and decorate with sprinkles, as desired.

Steps:
- Place a wire cooling rack on a baking sheet and set to the side.
- Pour your frying oil in a dutch oven and heat over medium heat. You will need about 3-4" depth of oil. Use a candy thermometer to ensure you bring the oil to 350F.
- Using a round cookie or biscuit cutter, cut out the center of each biscuit. Then gently stretch the biscuit dough until your donut is about 1/2" wider.
- Once the oil is hot, fry each donut for about 1 minute per side, until golden brown.
- Use a strainer to carefully remove each fried donut from the oil and set on the cooling rack so the excess oil drips off.
- Turn off the heat for the oil once all of the donuts have been fried, and allow the donuts to cool down completely.
- While the biscuit donuts are cooling, sift the powdered sugar into a large bowl. Whisk in the milk, vanilla extract and salt.
- Dip each cooled donut into the vanilla glaze, and then place back on the cooling rack. Immediately sprinkle the tops with rainbow sprinkles (optional).
- Allow the biscuit donuts to sit until glaze is set, about 30 minutes.

Steps:
- Add enough oil to a deep fryer or large, deep heavy pot so that it is a couple of inches deep.
- Heat the oil to 350 degrees.
- Place 2 to 3 biscuits in the oil and allow them to lightly brown on one side, about 90 seconds. Be sure to fry only a couple at a time or the oil may cool too much and the donuts will absorb too much oil.
- Turn the biscuits over to brown on the other side.
- When the donuts are golden brown on both sides, transfer them to a wire rack or paper towels to drain for 15 seconds.
- Pour sugar into a small bowl.
- Dredge the warm donuts in the sugar.

- Locate a small lid in order to cut out a donut hole. Soda or water bottle caps work great as well as spice jar lids. Spray lid with a bit of non-stick cooking spray and press down in the center of the biscuit until on the other side. Carefully remove extra dough from center and set aside. This dough can be used to make donut holes or discarded.
- Heat vegetable oil in a deep sauce pan on medium-high heat. Oil is ready to use once a drop of water sizzles on top. Using tongs, carefully lower biscuit dough into hot oil and let fry for 2 minutes.

- Transfer to a lightly floured work surface and pat into a rectangle. Fold the sides of the dough over and onto itself, just as if you were folding a piece of paper to place in an envelope. Dust with flour if needed and roll out until the dough is about a 1/4" thick.

- Divide the biscuits and flatten out on counter top. Make a hole in the center of each one either with the tip of a knife or a hole cutter. Dip the donuts and the holes in melted butter and then in the sugar and cinnamon combined. Place on sprayed baking sheet or on parchment paper and bake in preheated 375 degree oven for about 12 minutes. Makes 8 to 10 donuts and 8 to 10 holes depending on how many are in your can.
- Heat cooking oil in skillet, cut hole in biscuits, drop biscuits and holes in hot oil. Cook until brown on one side, turn and finish cooking. This only takes a few seconds. Remove from oil and drain on paper towels. Sprinkle on or dip in powdered sugar or cinnamon and sugar combination. Can melt chocolate chips and spread on donuts. Use your imagination and add sprinkles. Makes the same amount as above.

- In a deep pan, heat about 2 inches of vegetable oil to 350 degrees. You can use a thermometer to find the exact temperature. You will know your oil is ready when you place the handle of a wooden spoon in the hot oil and bubbles begin to form around it.
- Arrange biscuits on a flat surface, and using a biscuit cutter, cut out the centers of each biscuit. Place 2-3 biscuits in the hot oil and fry just until golden, turning once. Do not add too many biscuits to the oil, crowding the pan will reduce the temperature of the oil. When donuts are golden, remove them to a to drain on a paper towel. Repeat the process with the remaining donuts (and holes if desired).
- Once donuts have drained, and they are no longer too hot to handle quickly dip them in the sugar mixture, taking care to coat both sides.

- Using a small round shape, cut out the center of each biscuit to form your donuts. The round shapes you cut out will be used for your canned biscuit donut holes.
- In a microwavable bowl, begin making the biscuit donuts glaze icing by warming 2 tbsp butter until melted. Add in sugar, vanilla, and milk, stirring well until you have reached the desired smooth consistency. Set aside.
- In a small bowl combine the sugar and cinnamon you will use to coat the canned biscuit donut holes.
