BAKED FISH, SPANISH STYLE
From the Betty Crocker International Cookbook. It states it is low-calorie, but it sure doesn't taste low-cal. I used cod, but I think just about any fish would be just as delicious.

- Method
- 1. To make the marinade, combine all the ingredients in a small saucepan. Bring to a boil over medium-high heat, and then immediately remove from the heat. Cover and let cool to room temperature.
- 2. Arrange the fish fillets in a deep baking dish and pour the marinade over. Cover and refrigerate for 4 hours or overnight, turning the fish occasionally.
- 3. Prepare a hot fire in a grill. Oil the grill grate or a perforated grill rack.
- 4. Remove the fish from the marinade and pat dry. Brush or spray the fillets on both sides with olive oil. Place the fish, flesh side down, on the grill rack and grill for 10 minutes per inch of thickness, turning once halfway through. A fish fillet is done when it begins to flake when tested with a fork in the thickest part. Remove from the grill, season with salt and pepper, and serve hot, garnished with fresh lemon slices.
SPANISH FISH
These flaky fish fillets from Pix Stidham of Exeter, California get plenty of fresh flavor from onions and tomato, plus a little zip from cayenne pepper. "This recipe is particular favorite of my family's" Pix notes. "The fish doesn't get dry...it's moist and delicious."

- Shrimp/Prawns. Shrimp is probably the most sought-after type of seafood during the Christmas season. They are easy to spot at the market, where big styrofoam boxes are filled with whole shrimp, head and all!
- Scallops. There are two main types of scallops sold in Spain: vieiras (sea scallops) and zamburiñas (variegated scallop). The former is about the size of a half dollar with a shell about the size of a small hand.
- Lobster. Some of the most expensive items in the Christmas spread, lobsters are a true delicacy in Spain. One of the most popular ways to find them is slowly stewed in paella-style rice dishes called arroz con bogavante.
- Crab. Like shrimp, there are many types of crab in Spain. From the large, expensive bueyes del mar to the smaller, more affordable nécoras, there is a crab for every taste (and budget!).
- Clams. Clams are some of the most diversely used types of seafood in Spain. You'll find them served freshly steamed with nothing more than a slice of lemon, mixed into rice dishes like paella or stewed with paprika and wine like in this recipe for almejeas a la marinera.

- Grilled Halibut With Basil-Shallot Butter. This halibut recipe is perfect for warm weather. While the grill is fired up, throw on some asparagus or another quick-cooking vegetable for an easy dinner.
- Grilled Salt-and-Pepper Black Bass with Curry Verde. If you can learn how to cook a whole fish, you'll have summer's most impressive dinner in your back pocket.
- Lime-and-Cilantro-Stuffed Black Bass. The stuffing can be varied easily. Try lemon with tarragon, or orange with rosemary. View Recipe.
- Snapper Escabèche with Chiles, Garlic, and Oregano. Because it’s so delicate, the flesh can break down when marinated first, sometimes causing the fish to fall apart.
- Whole Grilled Fish with Lime. Don't turn or touch the fish until its skin is charred and crispy—otherwise, it will stick to the grates. View Recipe.
