STICKY STICK BISCUITS
Get the kids to help out with making these chocolate stick biscuits. They're easy and fun to decorate exactly like the character from Hey Duggee

- Heat oven to 180C/160C fan/gas 4 and prepare two lined baking trays. Beat the butter and sugar together until combined then beat in the egg and vanilla. Add all of the flour and mix into a soft dough. If the dough is very soft, chill for 15 mins before shaping. You can freeze the cookie dough for a later date, but defrost thoroughly before baking.
- Roll the dough into log shapes about 1.5cm-2cm in diameter, then cut into pieces 15cm long (using the ruler to measure).
- Insert a soaked lolly stick into each biscuit as well as a piece of Mikado for an arm on each side. Place on the baking trays evenly spread apart.
- Bake for 15-20 min until golden brown, but do check after 15 mins as all ovens vary. Transfer onto a wire rack to cool.
- Break the milk chocolate into pieces and melt in a bowl set over gently simmering water, or in short bursts in the microwave. Once the biscuits are cool, use a pastry brush to gently paint the chocolate all over the back of each stick, going a little around the sides and on the back of the Mikados.
- Once set, flip the sticks over and paint the fronts, then leave for 30 mins to completely set.
- Mould little pieces of the icing to create his leafy coif, goggle eyes and mouth. Stick them on using a little of the leftover melted chocolate.

- Preheat the oven to fan 170C/conventional 190C/gas 5. Using an electric whisk, beat together the butter and sugar until pale and creamy.
- Stir in the egg yolks, ground almonds, toffees, dried apple and flour. Mix well together then roll into walnut-sized balls.
- Place well apart on two non-stick or lined baking sheets and flatten slightly with your hand. Brush with milk and bake for 8-12 minutes until golden. Leave to firm up for 5 minutes, then transfer to a wire rack and leave to cool completely.

- In a small bowl combine topping ingredients. Mix together. Place an equal amount into the bottom of each muffin tin (about 2 teaspoons each). Sprinkle the 1/3 cup of raisins equally into each muffin tin; set aside.
- In another bowl combine the flour, baking powder, salt and cinnamon together and stir. Using a pastry cutter, cut in the shortening and butter till they become small pea size chunks. Grate the apple. Squeeze out the juice and add the apple to the mixture. Add in the milk. Mix together till the dough comes to a ball. Add a tablespoon of milk if needed to allow dough to cling together. Turn dough out onto a lightly floured surface and knead until dough forms a ball. On a well floured surface, roll dough out to a 10 x 8 inch rectangle.

- Mix together the sugar, cornstarch, cinnamon, and salt in a saucepan. Add apples and lemon juice. Stir until well combined. Cook over medium-low heat for 15 minutes. Set aside.
- While the apples are cooking preheat the oven to 375°. Melt the butter in a bowl. Spray your 12-inch cast iron skillet with non-stick spray and add a couple tablespoons (no need to be exact) of melted butter to the bottom. Make sure to swirl it around to coat the bottom of the skillet.
- In a separate bowl mix together the brown sugar, cinnamon, and nutmeg. One at a time, dip the biscuits in the butter allowing the excess to drip off. Coat each side of the biscuit in the cinnamon sugar mixture.
- Spread the coated biscuits around the skillet evenly. Add the apples and all the cooking liquid to the top of the biscuits. Try to get as many apples on the top of the biscuits as possible because they like to slide off during the baking time. Pour over the remaining butter and sprinkle with the rest of the cinnamon sugar mix.
