5 tablespoons red wine vinegar
1 teaspoon fennel seeds, crushed
1/2 cup olive oil
2 white grapefruits
1 10-ounce head radicchio, torn into bite-size pieces
8 ounces baby spinach leaves
1/2 cup Kalamata olives or other brine-cured black olives, pitted

Steps:

  • Combine vinegar and fennel seeds in medium bowl. Gradually whisk in oil. Season dressing with salt and pepper.
  • Cut all peel and white pith from grapefruits. Cut grapefruits between membranes to release segments. Stir segments into dressing. Let stand at least 15 minutes and up to 1 hour.
  • Toss radicchio, spinach and olives in bowl. Add grapefruit segments and dressing to coat. Season with salt and pepper.

1 grapefruit, cut in supremes
1/2 cup walnuts, chopped

Steps:

  • In a big bowl, mix olive oil, balsamic vinegar and honey.
  • Add grapefruit supremes, walnuts, cranberries and baby spinach leaves.
  • And grab a fork and begin to eat ;).

Pink Grapefruit and Radicchio Salad with Dates and Pistachios image

2 pink or red grapefruits
2 medjool dates, pitted and thinly sliced
1/2 medium shallot, peeled and thinly sliced
Fine sea salt, to taste
1 small head radicchio, halved and cored
4 tablespoons extra-virgin olive oil
2 tablespoons coarsely chopped pistachio nuts
Freshly ground black pepper

Steps:

  • Slice the top and bottom off one of the grapefruits. Stand it up on a cut side and, using a small sharp knife, slice off the peel and pith, following the curve of the fruit. Save the peels (there should be some red fruit clinging to the pith). Repeat with the other grapefruit. Slice both grapefruits into quarter-inch-thick rounds and arrange on a platter. Evenly sprinkle the dates on top.
  • Squeeze the juice from the grapefruit peel into a small bowl. You should have about a tablespoon. If there is less, squeeze some from one of the grapefruit slices. Add the shallot and a pinch of salt; let sit for 5 minutes.
  • Meanwhile, thinly slice the radicchio and add to a bowl. Add the shallot and grapefruit juice and toss to combine. Toss in 3 tablespoons of the oil.
  • Sprinkle grapefruit slices with salt and drizzle with the remaining oil. Place a mound of the radicchio in the middle of the grapefruit, leaving a border of the fruit exposed. Sprinkle with pistachios and black pepper and serve immediately.

1 (6 ounce) can sliced water chestnuts, drained
2 tablespoons vegetable oil
3 tablespoons grapefruit juice
2 tablespoons wine vinegar
1 tablespoon soy sauce
1 dash Tabasco sauce
1/4 lb fresh mushrooms, sliced
2 tablespoons bacon bits (or 3-4 slices bacon, fried crisp and crumbled)

Steps:

  • Wash spinach, break into bite size pieces & arrange in a salad bowl. Top with grapefruit & orange sections and water chestnuts.
  • Mix dressing ingredients together until well blended & pour over salad and chill for 30 minutes.
  • To serve, garnish with mushrooms and bacon.

1 package (10 ounces) fresh spinach, torn
2 tablespoons chopped green onion
2 teaspoons cider vinegar
2 teaspoons olive oil

Steps:

  • Cut grapefruit in half; with a sharp knife, cut around each section to loosen fruit, reserving juice. In a salad bowl, toss the spinach, onion and grapefruit sections.   • In a nonreactive salad bowl combine the vinegar, fennel seeds, 1/2 teaspoon salt, and several grinds of pepper. Whisk well to blend, then gradually whisk in the olive oil.
  • Trim a slice from the top and the bottom of a grapefruit. Then, stand the grapefruit upright on a work surface and, with a sharp knife (starting at the top and bringing the knife all the way down to the bottom), cut off all the skin and the white pith beneath. Repeat with the remaining grapefruit. Slice segments from the grapefruits, cutting between the membranes.
  • Add the grapefruit segments to the bowl with the dressing and toss to coat well; let stand at least 15 minutes or up to one hour so that juices from the grapefruit meld with the dressing. (The salad can be prepared to this stage one hour ahead; leave at room temperature.)
  • Add the radicchio, spinach, and olives to the salad bowl and toss to mix. Taste and add more salt and pepper if needed. Mound the salad on a salad plate.
