Steps:
- Preheat the oven to 350 F.
- In a large mixing bowl, add the chicken livers, garlic powder, onion powder, extra-virgin olive oil, oregano, and dried thyme.
- Mix it all together and place the livers on a lined baking tray.
- Bake for 30 minutes.
- When they are done, transfer the livers to a serving plate
- Top with chopped parsley, if using, and serve.

- 1. Heat oven to 350*. Spray sheet pan with non-stick cooking spray or cover with parchment paper
- 2. Drain and rinse chicken livers. Cut larger pieces into smaller pieces
- 3. Place livers in a bowl, add spices, mix lightly to coat with spices
- 4. Cut bacon in half
- 5. Wrap one half of bacon around each liver, place on prepared pan. Lightly dust with garlic powder and black pepper. You do not need much salt for this dish!
- 6. Cook for 15min and check them. Livers will be done when they are browned and bacon is browned and crispy. Takes about 45min altogether.
- 7. Serve with a smokey BBQ or a rustic dijon style mustard.

CITRUS MARMALADE-GLAZED CHICKEN LIVERS WITH ROASTED POTATOES AND CRISPY BRUSSELS SPROUTS

- Preheat the oven to 400 degrees F. Melt 1 tablespoon butter.
- On a baking sheet, toss the potatoes with the melted butter, 1/2 tablespoon olive oil, salt, pepper, and 1/2 tablespoon thyme. Put them in the oven for 30 minutes.
- Meanwhile, heat a large skillet and add 1 tablespoon oil. Add the chopped bacon and cook for a few minutes. You don't want to over-crisp the bacon before you add the livers. If the bacon gets too crisp before the livers go in just take it out and lay on a paper towel to drain. Season the livers with salt, and pepper, and add to the pan. We are looking for a great dark sear on each side so let the livers cook about 3 minutes per side. Put the livers on one side of pan and the bacon on the other. After the livers are cooked, add the marmalade and the remaining thyme and give it a good toss or stir. Turn off the heat and let stand. While the livers are resting, in another saute pan add 1 tablespoon oil and 1/2 tablespoon butter. Put the pan over high heat and when the butter starts to brown, add the sliced Brussels sprouts and spread out across the entire pan. Cook for 2 minutes, add salt, and pepper, and toss like a pancake or simply stir them up. The edges will start to brown and you'll get a deep nutty crispness.
- Place the Brussels sprouts down on a plate and lay the livers on top and then flank it with the new potatoes.
- To make Citrus Marmalade:
- Heat a large pot over medium heat and stir in the grapefruit sections, grapefruit peel, sugar, wine, and rice wine vinegar. Bring the mixture to a boil, then lower the heat and simmer for 90 minutes or until it's nice and thick. Transfer the mixture to a food processor or blender and quickly pulse. Do not fully puree it. Keep the mixture in a jar to use with meats or desserts.
ROAST CHICKEN WITH CHICKEN LIVERS
What a lovely dish for Sunday supper or is it dinner? We made this for an Easter Sunday meal for the staff, where we waited on them, as much as we can! They enjoyed the feast which consisted of a salad of argula & baby spinach with a fruity vinaigrette, a rice ring with mushrooms, & my old standby haricots verts with sliced almonds. It was really great and for dessert we had chocolate layer cake with ganache and coffee ice cream for whoever wanted it. Not a diet friendly meal - at all!!! You can tell, I didn't plan it. - Preheat the oven to 350°F
- Set the chicken in a roasting pan just large enough to hold it.
- Sprinkle the thyme in the cavity and season the bird inside and out with salt.
- Tie the legs together.
- Pour the olive oil over the chicken and scatter the garlic cloves and peppercorns in the pan.
- Roast the chicken for about 20 minutes, or until the garlic is soft and golden.
- Transfer the garlic to a coarse sieve set over a small saucepan.
- Roast the chicken for about 1 hour longer, or until the juices in the cavity run clear.
- Tip the chicken in the pan to drain the juices, then transfer the bird to a carving board and cover loosely with foil.
- Skim the fat from the pan juices and reserve 1 tablespoon.
- Press the garlic through the sieve into the saucepan and pour in the pan juices with the peppercorns.
- In a medium skillet, heat the 1 tablespoon of reserved fat just until smoking.
- Add the chicken livers, season with salt and freshly ground pepper and cook over high heat until browned on both sides and pink in the center, about 1 minute.
- Add the livers to the pan sauce and bring the sauce to a simmer.
- Season with salt and remove from the heat.
- Carve the chicken and arrange on plates.
- Spoon the sauce on top, garnish with the olives and parsley and serve.

CHICKEN LIVERS ON TOAST

- Pick over the livers, cutting away any fatty bits and sinew, then pat the livers dry. Place the shallot, parsley and capers into a bowl and drizzle with half the olive oil and 1 tbsp of the Sherry vinegar.
- Toast the bread (preferably on a griddle but a toaster is fine). Toss the livers in the flour and cayenne pepper, and season generously with salt and pepper. Heat the rest of the oil in a frying pan and fry the livers over a really high heat for 4-5 mins until brown and crisp on the outside and cooked, but still a little pink in the middle. Splash remaining vinegar into the pan and bubble down for 1 min.
- Tip the contents of the pan in with the shallot and parsley, toss everything together, season to taste, then pile onto the toasted bread. Season with a little crunchy sea salt and serve.

Back in 2012, Sam Sifton and Mark Bittman put together a feast for 15. The trick? Get it done in eight hours. Lobster and chopped salad, soubise and root vegetables, and a roasted chicken were all on the menu. And so was this recipe for chicken liver on toast. It may not have been the star of the show that night, but it served a critical purpose: keeping appetites satisfied in the lead-up to the meal. It can be an appetizer, or, paired with a salad, an exemplary light lunch or dinner.

- Melt the butter over medium heat in a large sauté pan. Add the onion and cook, stirring often, until it is soft but not brown, about 10 minutes. Add the chicken livers and chipotle and cook until the livers are lightly browned, an additional 10 minutes or so. Add the wine, and cook until there are only a few tablespoons of liquid remaining, about 15 to 20 minutes.
- Transfer the liver to a food processor and pulse until the sauce is blended and a little lumpy. Season to taste with salt and pepper.
- Put the mixture into small ramekins and place, covered, in the refrigerator to cool and set.
- Spread on grilled or toasted peasant bread.

- In a large frying pan, heat 2 tablespoons of the oil over moderate heat. Add the onions, 1/2 teaspoon of the salt, and 1/8 teaspoon of the pepper. Cook, stirring frequently, until the onions are well browned, about 15 minutes. Remove the onions from the pan and put on a serving platter or individual plates.
- In the same frying pan, heat the remaining 1 tablespoon oil over moderately high heat. Season the chicken livers with the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Put the livers in the pan, in two batches if necessary, and cook for 2 minutes. Turn and cook until browned, about 2 minutes longer. The livers should still be pink inside. Remove the chicken livers from the pan and put them on top of the onions.
- Return the pan to the heat and add the Madeira. Boil rapidly, scraping the bottom of the pan to dislodge any brown bits, for 1 minute. Pour the sauce over the livers and the onions. Top with the egg and parsley.
