EGGPLANT AND GOAT CHEESE LASAGNA
This lasagna is a take on the traditional. Instead of noodles, it uses sliced eggplant. Instead of ricotta, it uses goat cheese. It is delicious!!!

- Preheat oven to 350 degrees F (175 degrees C).
- Spray a 9x13-inch baking dish with cooking spray.
- Arrange one fourth of eggplant slices in a layer in the bottom of the dish.
- Pour one fourth of pasta sauce on top of eggplant layer.
- Dot pasta sauce layer with one fourth of goat cheese slices.
- Repeat layers three more times with remaining ingredients, ending with a top layer of goat cheese.
- Bake in preheated oven until pasta sauce is bubbling and goat cheese is melted, 45 to 60 minutes.

GRILLED EGGPLANT AND GOAT CHEESE SALAD

Steps:
- Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the olive oil over the slices of eggplant and toss to coat. Grill the eggplants until tender and grill marks appear, about 3 to 4 minutes per side.
- Place the eggplants side-by-side on a serving platter. Sprinkle with the pine nuts, goat cheese, basil, and mint. Drizzle with extra-virgin olive oil, balsamic vinegar, salt, and pepper.
- Cook's note: Plating the eggplant salad this way allowed the cheese to stay bright white. The salt and pepper showed up on it. The herbs remained green and fluffy. The grill marks on the eggplant were distinct.
EGGPLANT (AUBERGINE) AND GOAT CHEESE LASAGNETTE
This a recipe I changed slightly from a show called Season by Season with host Michael Chiarello. In the original recipe he only breads the eggplant with flour seasoned with pepper, but when I tried that it seemed too bland, so I coated them with the flour, dipped them in eggwhites, and coated them again with Italian breadcrumbs. It takes a little more time, but it is worth it! It tastes like it should come from a gourmet restaurant!

Steps:
- Directions for the Thick tomato sauce:.
- Heat 3 tblspns olive oil in a heavy saucepan over medium-high heat until hot.
- Add the bell pepper and sauté until brown, about 5 minutes.
- Add the remaining 1 tablespoon olive oil, if necessary, and the garlic, and cook briefly until light brown.
- Add the onion and cook until brown, about 5 minutes.
- Add the tomato paste and stir to mix well.
- Add the tomatoes and their juice, the stock, and bay leaf.
- Bring to a boil, reduce the heat to low, and simmer the sauce until thick, about 25 minutes, be sure to stir often to prevent scorching.
- Add the butter, oregano, parsley, and basil and stir well. Adjust the seasoning with salt and pepper.
- Use immediately, or let cool, cover, and refrigerate for several days, or freeze for up to 1 month.
- Directions for the lasgnette:.
- Cut the eggplant lengthwise into 1/8 to 1/4-inch-thick slices. Salt for 20 minutes, then rinse thoroughly and pat dry.
- Preheat the oven to 375°F.
- Pour the olive oil into a large skillet to a depth of 1 inch and place over medium-high heat until hot, about 350°F Meanwhile, season the flour with the pepper.
- Dredge the slices in the flour, then dip in eggwhites, and then coat with dry breadcrumbs.
- Fry, turning once, until browned, about 2 minutes total. Drain on paper towels. Note: The oil should be hot enough to bubble while the eggplant is cooking but be careful not to let them burn.
- Add more oil as necessary to maintain the oil at a depth of about 1 inch.
- Spread a thin layer of the tomato sauce in the bottom of a 2-1/2-quart baking dish. Arrange a layer of eggplant in the dish to cover the bottom completely.
- Spoon on another layer of sauce, and sprinkle with 2 tablespoons of the Parmesan, 1 tablespoon of the parsley and basil, and dot with one-third of the chevre.
- Repeat the layering twice, beginning with eggplant and ending with chevre.
- Do not press down on the layers.
- Top with the remaining eggplant and then another thin layer of sauce.
- Sprinkle with the remaining Parmesan (about 3 tablespoons), parsley (about 2 tablespoons), and the breadcrumbs.
- Bake until browned and bubbling, about 20-30 minutes. Do not over-brown.
- Let rest a few minutes before cutting into squares to serve. Serve hot or warm, drizzled with the garlic or basil oil if desired.

EGGPLANT LASAGNA

- Preheat the oven to 375 degrees. Using a mandolin or a thin knife, slice eggplant lengthwise into thin strips. Toss the eggplant with 1/4 cup coarse salt. Transfer the eggplant to a colander and allow to sit overnight. (This will remove any excess water from the eggplant and allow it to crisp nicely when fried.) Brush the salt off the eggplant slices. Heat oil in a large skillet until approximately 350 degrees. Carefully fry eggplant slices in the oil until golden brown, approximately 30 seconds on each side. Drain the slices on paper towels, set aside until needed. In a medium bowl mix together 2 cups tomato puree, oregano and 1 tablespoon chopped garlic. Season with salt and pepper. Grease a 8 by 8-inch square pan, and layer the eggplant on the bottom of the pan. Sprinkle some of the mozzarella cheese mixed with the parmesan cheese, pepper, and drizzle the tomato sauce over the cheese. Repeat the process the pan is full. Bake the lasagna for 20 to 25 minutes until the cheese is melted and golden brown.
VEGETARIAN LASAGNA WITH CHAVRIE GOAT CHEESE
This is great for the holidays for Vegetarians! The goat cheese adds a wonderful unique layer of flavor!

Steps:
- Slice the eggplant and squash lengthwise into 1/8 to 1/4-inch thick strips. Lay the strips out on baking sheet pan and salt generously. Set aside.
- Slice the peppers lengthwise into 1 1/2-inch strips.
- Preheat the oven to 375 degrees F.
- Mix the Chavrie®, olives, thyme, and eggs together in a bowl and season, to taste, with salt and pepper.
- Thoroughly wipe excess salt and moisture from eggplant and squash with paper towel.
- Spread 1 cup of the tomato sauce into the bottom of an 8x11-inch baking dish. Begin layering, remembering to season with pepper between each layer. Start with the eggplant and then summer squash , peppers and pasta.
- Spread sauce evenly over pasta.
- Dollop spoonfuls of the cheese mixture over the sauce cover.
- Repeat with the remaining eggplant, squash, goat cheese, and sauce.
- Sprinkle top layer with Parmesan and bake, covered, for 30 minutes, then uncover. Continue baking until the vegetables are tender and the sauce thickens, about 15 minutes more.
- Let lasagna stand for 10 minutes before slicing.

GOAT CHEESE LASAGNA
Necessity is the mother of . . . well, you know. This recipe was born when I went to the grocery store one day and they were out of ricotta. It occurred to me that goat cheese being the same consistency, it might do in a pinch. I find it lends itself beautifully to this dish, and now my family prefers this recipe to the traditional. Use the un-aged soft goat cheese, for example Chavroux. If you are looking for a marinara sauce recipe, I've posted one that goes especially well with this dish ! Preparation time does not include time to prepare the marinara sauce.

- Beat the eggs then add the drained goat cheese, the shredded mozzarella, the basil leaves, salt and pepper, and mix till creamy and everything is incorporated well.
- Coat the bottom of a 13X9X2 inch baking dish with a thin layer of the sauce.
- Arrange half the lasagna noodles in the pan.
- Cover with half the goat cheese mixture.
- Cover this with half the mozzarella slices.
- Cover this with half the marinara sauce.
- Repeat layers: noodles, goat cheese, mozzarella slices and sauce.
- Sprinkle parmesan or romano on top.
- Bake in pre-heated 375°F oven for 30 to 35 minutes, or till bubbly and the cheese is nicely melted on top.
- Let stand 10 minutes before serving.

GRILLED EGGPLANT LASAGNA WITH TOMATOES AND THREE CHEESES
Long slices of grilled eggplant are layered with tomatoes and several cheeses, so it becomes a kind of lasagna without pasta. While the tomatoes cook, they release a good deal of juice, so this dish is a lot juicier, but far easier, than traditional lasagna. I have had this recipe for quite some time and believe it comes from our local newspaper. Prep time includes the 20 minutes of salting and draining the eggplant.

Steps:
- Using an 8 x 11 inch baking dish (or a dish about tht size).
- Layer the eggplant with salt in a colander.
- Set the colander on a large plate for 20 minutes.
- Rinse the eggplant slices and pat dry.
- Drizzle the eggplant on both sides with oil.
- Cook on a grill, turning often, until cooked through.
- Remove from the grill and set aside.
- Set the over to 350 degrees.
- Rub the inside of the baking dish with oil.
- Layer as follows: Place several slices of eggplant in the dish.
- Add black pepper, 1/2 the basil, 1/2 the tomatoes, 1/3 of the Fontina, 1/3 of the mozzarella, 1/3 of the Romano.
- Continue layering in this way until you have made: 3 layers of eggplant and 2 layers of tomatoes.
- Sprinkle the top layer with the remaining cheese.
- Transfer the dish to the oven and bake for 40 to 45 minutes or until the cheese browns and the juices are bubbling at the edges.
- Serve at once.

- Preheat the oven to 400 degrees F.
- Heat the olive oil in a large (10 to 12-inch) skillet. Add the onion and cook for 5 minutes over medium-low heat, until translucent.
- Add the garlic and cook for 1 more minute.
- Add the sausage and cook over medium-low heat, breaking it up with a fork, for 8 to 10 minutes, or until no longer pink.
- Add the Jar of Ragu Sundried Tomato & Sweet Basil Pasta Sauce Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.
- In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, the egg, the remaining 2 tablespoons of parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.
- Ladle 1/3 of the sauce into a 9 by 12 by 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one third of the sauce. Add the rest of the pasta, mozzarella, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.
