Steps:
- Place bacon in a large skillet over medium-high heat. Cook until shrunken, but not crisp. Remove to paper towels to drain.
- Preheat the oven to 300 degrees F (150 degrees C).
- In a shallow baking dish, whisk together the sugar, soy sauce and garlic with a fork. Wrap each oyster with a piece of bacon, and secure with toothpicks. Place wrapped oysters into the dish with the sauce.
- Bake for 10 minutes in the preheated oven, until the sauce has thickened and bacon is nicely crisped at the edges.

- In a large skillet, saute onion in butter until tender. Add spinach; cook and stir until wilted. Remove from the heat; stir in cheese, lemon juice and pepper. Spread kosher salt into 2 ungreased 15x10x1-in. baking pans. Shuck oysters, reserving oyster and its liquid in bottom shell. Lightly press oyster shells down into the salt, using salt to keep oysters level. Top each with 2-1/2 tsp. spinach mixture. Bake, uncovered, at 450° until oysters are plump, 6-8 minutes. Serve immediately.,

Steps:
- Gather the ingredients.
- In a small pan, gently heat the Worcestershire sauce, balsamic vinegar, butter, and Tabasco sauce. Stir until combined.
- Remove from the heat and set aside.
- In a frying pan, cook the bacon slices until crispy.
- Transfer to a paper towel to drain.
- Once cooled, dice the bacon and set aside.
- Place the oven shelf in the topmost position under the broiler and set the oven to broil. On a baking sheet, using aluminum foil, create pockets for the oyster shells to sit in without toppling over.
- Arrange the shucked oysters in the foil pockets.
- Top each oyster with a spoonful of sauce.
- Scatter each with diced bacon.
- Broil for 50 to 60 seconds, watching carefully.
- Arrange on a serving platter and enjoy.

- Slice the bacon strips in half. It is very important to get thin-cut bacon for this recipe, as thick bacon overwhelms the oysters. Likewise, it is important to get small oysters-otherwise, they become too large a mouthful.
- Wrap a half-slice of bacon around each oyster and secure with a toothpick. Arrange on a broiling pan or get a grill ready.
- Place the bacon-wrapped oysters under the broiler until they're crispy, about 5 to 6 minutes.
- How long this will take on your grill depends on the heat; but I rarely do this on the grill, as the bacon fat falls through the grate and causes flare-ups. Then again, you do get a smoky flavor with real fire...
- Take the oysters out and turn them over. Return to the broiler and crisp the other side. This should take about 2 to 4 minutes.
- Serve family-style on a big platter. Don't hit them with lemon juice until right before you serve them, otherwise it ruins the crispiness of the bacon.
- Traditionally, this appetizer is served on buttered toast points, so if you're a stickler for tradition, that's the way to go.

DEB'S OYSTERS ROCKEFELLER
Every November, our family and friends gather at our home for our annual "Oyster Party". My sons and some of their friends shuck between 300 and 400 oysters throughout the day and I prep, bake and serve them to our guests. Forks are spread out over the platter and everyone just starts grabbing the baked oysters off the tray. - Shuck oysters, reserving bottom shell; set aside. Spread rock salt into two ungreased 15x10x1-in. baking pans. Lightly press the oyster shells down into the salt. - Rinse off the oysters under cool running water. (If the oysters are super fresh you can skip this step) Place the rinsed oysters into a bowl and cover with the marinade mix of buttermilk/or whole-milk and a few splashes of your favorite hot sauce, then into the refrigerator for 30 to 40 minutes. Not overnight, the natural acids in the milk will break down the oysters' texture too much.
- Take the oysters straight from the buttermilk/or whole milk (do not rinse) and place them straight into the dredging mix of flour, cornmeal seasoning. If you like a thicker fryed oyster, not like the blog post photo, you can repeat the dredging process twice.
- Use peanut oil if possible, the second choice being canola oil (vegetable oil has zero flavor). The high smoke point of peanut oil is preferred when frying. Google the smoke point of whichever oil you use beforehand. Never exceed that temperature.TIP: If the oil does get too hot and exceeds the smoking point, there is no saving the oil. The flavor will be rancid and not useable. Start over...

- Lay bacon out on a roasting pan in a single layer and bake for 10 minutes until just crispy - remember they will be going back into the oven with the oysters so you don't want to finish the bacon just yet. - Heat a large skillet over medium. Add bacon. Cook, stirring occasionally, until crispy, 6 to 8 minutes. Add onion and garlic. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Add kale or collards. Cook, stirring occasionally, until soft and tender, about 8 minutes for kale or 12 to 15 minutes for collards.
- Add butter to skillet. Cook over medium, stirring constantly, until melted, about 20 seconds. Add flour; cook, stirring often, 1 minute. Reduce heat to medium-low. Add whipping cream and Parmesan. Cook, stirring constantly, until mixture is thick and pasty, about 45 seconds. Remove from heat; stir in lemon juice, red pepper, salt, and black pepper.
