1 cup walnuts

Pinch ground cinnamon
Pinch kosher salt

2 teaspoons mixed berry jam
1/4 teaspoon garlic powder
1/4 cup extra virgin olive oil
Pinch kosher salt
10 ounces mixed greens
1 cup sliced strawberries
1 cup candied walnuts (or pecans)
1/2 cup feta cheese
Blush wine vinaigrette, homemade (recipe follows) or store bought

Steps:

  • To make the candied walnuts: In a large skillet, melt the butter over medium heat. Add the walnuts, sugar, cinnamon, and salt and cook, stirring constantly, until the sugar melts and caramelizes, about 2 minutes. Transfer to a silicone mat-lined baking sheet and let cool completely, 20 minutes.
  • To make the vinaigrette: In a jar with a lid, add the sugar, vinegar, hot water, mixed berry jam, and garlic powder. Add the oil and salt. Cover and shake vigorously to combine.
  • To make the salad: In a large bowl, toss together the mixed greens and 1/2 cup of the strawberries. Add the vinaigrette to taste and toss until the greens are coated. Top with the remaining strawberries and sprinkle the feta cheese and candied walnuts on top.

Steps:

  • In a small jar with a tight-fitting lid combine vinegar, oil, and salt and pepper to taste and shake sealed jar until vinaigrette is emulsified. Vinaigrette may be made 1 day ahead and chilled. Bring vinaigrette to room temperature and shake before using.
  • In a saucepan of boiling salted water boil haricots verts until crisp-tender, 3 to 4 minutes, and transfer to a bowl of ice and cold water to stop cooking. Drain beans in a colander and pat dry between paper towels. Beans may be made 1 day ahead and chilled, wrapped in a paper towel in a sealable plastic bag.
  • Divide greens among 6 salad plates and top with beans. Sprinkle salads with onion and drizzle with vinaigrette.

1 head baby bibb lettuce or 1 head boston lettuce, leaves torn

  • Preheat oven to 400°F. Place 2 onions cut side down on baking sheet. Pour 2 tablespoons oil over. Sprinkle with sugar. 1 teaspoon Dijon mustard
1/2 cup cider vinegar

1 head red Bibb lettuce
3 heads Belgian endive (about 12 ounces)
4 ounces baby spinach

Steps:

  • Preheat oven to 350 degrees. Spread walnuts in a single layer on a rimmed baking sheet, and toast in oven until golden and fragrant, 10 to 12 minutes. Let cool.
  • In a food processor, pulse 5 dates, mustard, and vinegar until pureed. With the machine running, slowly pour oil through feed tube. Season with salt and pepper.
  • Quarter remaining dates lengthwise. Into a large bowl, tear lettuce and endive into bite-size pieces; add spinach, dates, and walnuts. Drizzle with vinaigrette, and toss to combine. Serve immediately.

1 cup braeburn apple, julienned, cut 2-inches long (can substitute similar apple such as Honey Crisp, etc.)
2 tablespoons apple cider vinegar
2 tablespoons maple syrup (NOT imitation)
2 teaspoons brown mustard (or Dijon)
2 1/2 teaspoons walnut oil
1/8 teaspoon salt
1/8 teaspoon cayenne
1/2 cup walnuts, toasted and chopped

Steps:

  • In small glass bowl, prepare salad dressing first and set aside.
  • Use salad spinner to remove excess moisture from the greens.
  • *In large non-reactive serving bowl place the sliced apples and toss them with a little bit of apple cider to halt oxidizing.
  • Next, add the salad greens, a few tablespoons of the salad dressing and toss gently again with tongs to mix.
  • Serve remaining salad dressing on side along with the toasted walnuts if using.
  • *For best results, cut up apples and toss with the vinegar right before serving.

400g Brussels sprout , trimmed and thickly sliced
250g Savoy or green cabbage , sliced or shredded
100g shallot , peeled and sliced
2 tsp each butter and olive oil
300ml vegetable or chicken stock (use vegetable if you have any vegetarian guests over for Christmas)
400g frozen peas
50g walnut , chopped

Steps:

  • Bring a large pan of salted water to the boil, add your sliced sprouts and cabbage, then boil for 2 mins. Drain, rinse in cold water to cool, then drain well again. Soften the sliced shallots in a frying pan with the butter and oil until meltingly soft. Cover the veg separately with cling film and chill for up to 24 hrs, until just before serving.
  • While your turkey is resting, tip shallots back into your largest frying pan with the stock and heat until simmering. Stir in the blanched sprouts, cabbage and frozen peas and cook for 2-3 mins until all the veg is tender and stock reduced. Season and stir in the walnuts just before serving

1 lb strawberry, hulled and halved (do not use frozen)
5 ounces mixed baby greens
1 cup feta cheese, crumbled
1/2 cup walnuts, toasted
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon sugar (or you can use 2 packets of your favorite artificial sweetener)

Steps:

  • Mash enough strawberries to measure 1/3 cup. Place in a blender with the oil, vinegar and sugar and blend until well combined. Season dressing with salt and pepper, if desired.
  • In a large bowl, combine the greens, remaining strawberries, feta cheese and walnuts. Add the dressing; toss to coat and serve immediately.

The salad incorporates roasted beets, fennel and shallots, tossed with baby greens (I used a bag of baby greens which is available at more grocers these days) but you can use your favorites, and then topped with this unique vinaigrette and crumbled goat cheese for a classic taste. This is an excellent salad, but I am also a big fan of salads and always trying to come up with something a bit different. Warm salads I am very fond of and are usually a huge hit at dinner parties. Everyone is always expecting a traditional salad ... so I like to come up with unique ideas that my guests won't expect but really enjoy!

1 (7 ounce) bag baby greens, I used Dole, but there are many different brands and by all means use your favorite mix for this
2 medium red beets (roasted)
3 medium yellow beets (roasted)
1 medium fennel bulb, cut in quarters (roasted)
2 large shallots, cut in half (roasted)
8 ounces gorgonzola, crumbled
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/3 cup olive oil
1 tablespoon walnut oil
1 tablespoon maple syrup
1 tablespoon sherry wine vinegar
1 tablespoon cider vinegar
1 teaspoon minced garlic
1/4 cup walnuts, fine chopped (a few extra for a garnish)
1 teaspoon shallot, grated

Steps:

  • Vinaigrette -- In a small measuring cup or jar, baggie, whatever is easiest for you, mix all the ingredients, mix well and set to the side. I like to serve this dressing room temperature. I also don't like to over dress my salad and with the walnut oil it is a stronger dressing, so go lite and dress it according to how you like it.
  • Beets and Vegetables -- In a large foil pouch, add the beets (I trim the ends) and drizzle with olive oil, salt and pepper. Also I do the red in one pouch and yellow in another so the colors don't bleed. I do the shallots right on the baking sheet next to the shallots, also drizzled with olive oil, salt and pepper. Now the beets will take about 45-60 minutes depending on the size and the fennel about 20 and the shallots about 15, so I just remove them as they get done.
  • After each of the vegetables cool, I then slice the shallots, fennel, cool the beets and remove the skin and slice. Place all the vegetables on a small plate so I can reheat in the microwave for just 1 minute in order to serve them warm over the salad.
  • Plate -- Add salt and pepper to the vegetables if needed and reheat on medium heat 1 minute in the microwave - Just to warm up. For the salad, in a medium bowl, add the greens, and the dressing and toss well. Plate a bed of the greens for each person and then top with the warmed roasted beets, fennel and shallots. Top and garnish with the cheese and a few walnuts.
