Cheese soup in a coffee cake?!! This makes a great snack cake that you can just pick up and eat with your hands. I brought it to work and it got raves. No one can believe it has the cheese soup in it! The recipe is from The Carriage House a bed and breakfast inn in California

Steps:
- In a large mixing bowl combine the cake mix, soup, water, eggs, and lemon rind. Beat until blended.
- Stir in 1 cup of coconut, pineapple, and nuts. Spread the batter evenly in a greased and floured 9x13-inch pan.
- In another bowl, cut butter into the flour until crumbly. Stir in sugar and the remaining coconut. Sprinkle over the batter.
- Bake in a 350 oven for 50 minutes or until done.

Steps:
- Add instant coffee to cake mix and prepare cake according to instructions on package. Pour batter into 2 greased and floured 9 inch cake pans. Bake according to instructions on package. Allow to cool.
- With a large serrated knife, split each layer horizontally to make 4 layers. Sprinkle 1/4 cup of the coffee liqueur on each of the 4 layers.
- Make the pudding according to package directions, but add the remaining 1/4 cup of coffee liqueur. Spread 1/3 of pudding between each layer of cake as you assemble. Whip cream with sugar until stiff peaks form. Spread on top and sides of cake. Sprinkle with coconut.

- Make cake mix according to instructions on package.
- Add the instant coffee and mix well.
- Pour the batter into 2 greased and floured 9 inch cake pans.
- Bake according to instructions on package.
- Place on wire rack to cool completely.
- With a large serrated knife, split each cake horizontally to make 4 layers.
- Sprinkle 1/4 cup of the Tia Maria on the cake layers and set aside. Try to add the same amount of liqueur on each cake.
- Make the vanilla pudding using the package directions, -- please note -- that you have to use the remaining 1/4 cup of Tia Maria as part of your liquid ingredients in the pudding .
- Spread 1/3 of the pudding between each layer of cake as you assemble it.
- Whip cream with sugar until stiff peaks form and spread the top and sides of cake the cake and sprinkle with the toasted coconut.

Steps:
- Sprinkle pecans in bottom of a greased and floured 10-inch Bundt pan.
- Set aside.
- Combine remaining ingredients except Glaze in a large mixing bowl.
- Beat 30 seconds at low speed of electric mixer, then 2 minutes at.
- medium speed.
- Pour into prepared pan.
- Bake at 325 degrees for 1 hour or until a wooden pick inserted in.
- center comes out clean.
- Cool in pan 10 minutes; remove and let cool.
- completely on wire rack.
- Using a wooden pick, pierce cake at 1-inch intervals.
- Spoon Glaze over cake.
- Glaze: Melt butter in heavy saucepan.
- Stir in orange juice and sugar.
- Bring to a boil.
- Boil 5 minutes, stirring constantly.
- Remove from heat and stir in orange peel and liqueur.
- Makes 1 1/4 cups.

- Coffee-cake topping:
- Combine 1/2 cup flour, coconut, 1/2 cup brown sugar, and cinnamon in a bowl. Toss in melted butter and set aside.
- Batter:
- Preheat the oven to 325°F Lightly coat a 9-inch round springform pan with a little of the softened butter and set aside. Combine the remaining flour, baking powder, and salt in a bowl and set aside. Beat the egg yolks, remaining brown sugar, granulated sugar, and vanilla using an electric mixer set on high speed until the mixture is thick and pale yellow, about 2 minutes. Mix in the remaining butter and the sour cream. Reduce mixer speed to low, add flour mixture, and mix.
- Cake:
- Pour batter into the prepared pan, sprinkle with topping, and bake on the middle rack of the oven until a toothpick inserted into the center of the cake comes out clean, 55-60 minutes. Cool in pan on a wire rack for 1 hour. Release the cake from the pan. Serve warm. Enjoy!
COCONUT STREUSEL COFFEE CAKE
This is a dandy cake just right for serving with coffee or even for dessert. There's a buttery coconut streusel on top of and running through the tender, spicy cake. All spices called for are ground.

- Butter and flour an 8-inch square or round baking pan (a bundt pan also works well).
- Preheat oven to 350°F.
- For the streusel: In a small skillet or saucepan melt the butter over medium-low heat and add dessicated coconut and walnuts. Cook, stirring occasionally for 8-10 minutes, or until coconut and walnuts start to get toasty and smell fragrant. Be careful not to burn. Remove from heat and stir in brown sugar and cinnamon and empty half this mixture into the bottom of your prepared baking pan. Reserve other half.
- For the cake: In a small bowl, whisk together eggs, coconut milk, liqueur and orange zest. Set aside.
- In a large mixer bowl, cream butter with sugar for 5 minutes, or until light in color and fluffy. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula. Add baking powder, baking soda, vanilla extract, salt, cinnamon, ginger, cardamom, nutmeg and cloves.
- Add flour, alternately with wet ingredients (egg, etc.) until blended through. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula.
- Pour 3/4 s of the batter into your prepared pan and layer with reserved streusel mixture. Pour remaining batter over top and run knife through pan, marbling streusel into the batter.
- Bake for approximately 1 hour and 20 minutes, or until a wooden toothpick inserted into the centre of the cake comes out clean. Allow to cool 20 minutes before removing from pan.

LIQUEUR CAKES
These cakes make wonderful gifts or are great to serve to guests in your own home. You can store them up to two weeks in a cool place. They also freeze exceedingly well, which is a good excuse to make extra so you can have them anytime. Prep time does not include cooling/soaking. An adopted recipe.

Steps:
- Preheat oven to 350 degrees F. Grease and flour 4 loaf pans.
- Split open vanilla bean and scrape seeds into cream.
- Drop pod into cream and heat until scalding. Let cool.
- Whisk together the eggs, sugar and salt until well blended.
- Sift the flour and baking powder together.
- Whisk the sifted dry ingredients into the egg/sugar mixture just until blended.
- Remove (and discard) the vanilla bean pod from the cream, and whisk cream into the batter.
- Gently mix in the melted butter, pour batter into the prepared loaf pans and bake for 50-60 minutes or until golden brown and a cake tester comes out clean.
- While cake is baking, prepare syrup by combining sugar, water and corn syrup in a heavy saucepan. Stir mixture over medium-high heat until it comes to a simmer.
- Continue to heat (WITHOUT FURTHER STIRRING or your finished product will have sugar crystals!) until mixture comes to a full boil.
- Cover (also important to avoid those nasty sugar crystals) and continue to boil until all sugar is dissolved and liquid is clear, about a minute.
- Remove from heat and let cool for about 5 minutes.
- Stir in liqueur.
- After removing cakes from the oven, allow them to cool in pan for about 5 minutes.
- Run a knife around the edges of the pan and turn cakes out, then immediately return cakes to pans.
- Use a thin wooden skewer to poke numerous holes into the cake, about 1 inch apart. The holes should go all the way from the top to the bottom of the cake. Pour 1/4 syrup mixture over each cake and, if desired, sprinkle with optional toppings.
- Let cool until the cakes have absorbed the syrup.
- Remove from pans.
- Note: If giving these cakes as gifts, you can use disposable aluminum foil loaf pans and give the cake in the pan.
COFFEE COFFEE CAKE
Coffee is great! This cake is made in a bundt pan and is different from other 'coffee' cakes I've seen.

Steps:
- Preheat oven to 350°F.
- Grease and lightly flour a 10 inch fluted tube pan.
- In a bowl whisk together coffee, sugar, oil, honey, vinegar and vanilla.
- Add eggs; whisk until combined.
- In another bow combine flour, cocoa powder, baking powder, soda, salt and nutmeg.
- Whisk in coffee mixture until combined. Add 1 cup hazelnuts; stir to combine. Pour batter into prepared pan.
- Bake in preheated over about 1 hour or until a wooden pick inserted near centre comes out clean.
- Cool in pan on wire rack for 20 minutes.
- Remove from pan to serving plattewr. Brush with some of the coffee-hazelnut syrup.
- Cool for 30 minutes. Brush again with syrup.
- Sprinkle with the 1/4 cup hazelnuts.
- Serve cake warm with remaining syrup.
