2 bags ready to use mesclun greens
Pinch salt
Freshly ground black pepper
Balsamic Vinaigrette, recipe follows
1 pint grape tomatoes
1 yellow bell pepper, seeded, halved and thinly sliced
1 shallot, peeled and roughly chopped
1 tablespoon chopped fresh basil leaves
1/4 cup balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 cup olive oil

Steps:

  • Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
  • Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil
Mesclun salad mix or favorite greens, for accompaniment
Assortment of salad ingredients, such as cherry tomatoes, chopped carrots, sliced red onion, chopped celery, diced cucumbers, walnuts
Blue cheese, for garnish
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar, optional* (See Cook's Note)
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil

This is the perfect fall salad for entertaining. The dressing has that savory-sweet flavor combo that everyone loves.

1 cup (4 ounces) pecan halves
2 tablespoons real maple syrup
Pinch salt
1 small garlic clove, minced
1 tablespoon finely chopped shallots
¼ teaspoon salt
¼ teaspoon ground black pepper
1½ tablespoons real maple syrup
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
6 tablespoons vegetable oil
10 cups mesclun greens (or favorite mixed greens such as green or red leaf, boston, bibb, or romaine)
3 ounces goat cheese (or blue cheese), crumbled

Steps:

  • Preheat the oven to 375 degrees. Lightly oil or line 2 baking sheets with parchment paper. In a small bowl, combine the pecans and maple syrup and toss gently to combine. Spread the pecans in a single layer on one of the prepared baking sheets. Roast in the preheated oven, stirring once, until the syrup is bubbling vigorously, about 5 minutes. Immediately scrape the glazed pecans onto the other prepared baking sheet, spreading them in a single layer. Sprinkle with a pinch of salt and set aside to cool.
  • In a small bowl, whisk together the garlic, shallots, salt, pepper, maple syrup, mustard and vinegar. Whisking constantly, slowly add the oil in a steady stream. (Alternatively, add all your ingredients to a jar, cover with lid, and shake vigorously to blend.) Set aside.
  • Place the greens in a large bowl, drizzle with about half of the vinaigrette and toss to combine. Add as much of the remaining vinaigrette as desired and toss again. Divide among individual plates, sprinkle with the cheese and reserved pecans and serve immediately.

Steps:

  • Make vinaigrette: In a large bowl whisk together mustard and vinegar. Add oil in a slow stream, whisking until emulsified. Whisk in tarragon and salt and pepper to taste.
  • Preheat oven to 350°F
  • In a shallow baking pan toast almonds in middle of oven until pale golden, 6 to 8 minutes, and cool. Add mesclun to vinaigrette and toss to coat well.
  • Divide greens and apple slices among 4 plates and top with grapes, cheese, and almonds.

Sometimes I'm too lazy to slice up pears so I'll throw in a handful of raisins instead (or diced apples, dried cranberries or dried cherries, etc. ...) The salad dressing is best prepared several hours in advance. A symphony of flavors!

3 tablespoons real maple syrup
3 tablespoons aged balsamic vinegar
3 tablespoons strong earl grey brewed tea, cooled
3 tablespoons Dijon mustard
salt & freshly ground black pepper, to taste
6 cups mixed greens (mesclun)
4 cups fresh Baby Spinach
1 bunch fresh cilantro, chopped (about 2 cups)
1 bunch fresh basil, chopped
1 bunch of fresh mint, chopped
1 bunch sliced green onion, sliced (scallions)
2 bosc pears, thinly sliced or 3 tablespoons raisins

Steps:

  • Prepare salad dressing and allow to marinate at least 3 hours.
  • Rinse mixed greens and spinach leaves well and remove all excess moisture.
  • Toss greens and spinach carefully with the herbs and the green onions.
  • If using pears, slice up pears just before serving then toss salad lightly with a small amount of the salad dressing. (The acidity in the dressing will stop the pears from turning brown.) If using raisins, they should be added to the salad just before serving.
  • Serve with crusty French bread, a platter of fresh fruit, imported olives and cheese and your favorite white wine.
