- Finely grate the lemon zest into a large bowl.
- Cut the lemon in half and squeeze in the juice from one half.
- Add 1 tablespoon of extra virgin olive oil and season with sea salt and freshly ground black pepper. Mix well.
- Put a pan of salted water on to boil. Meanwhile, trim the the beans.
- Once the water is boiling, steam or boil the beans until tender. Drain well, then tip the cooked beans into the bowl with your dressing and toss everything together, making sure all the beans get coated.
- Have a taste and squeeze over the remaining lemon juice if you think it needs it, then serve.

- Bring a medium-sized pot of salted water to a boil.
- Add the green beans and blanch in the boiling water for 3-4 minutes. While the beans are cooking, fill a large bowl with ice water. Drain the beans with a colander and immediately transfer to the ice water to stop the cooking process. Drain again and set aside.
- Heat the butter in a large pan over medium-high heat. Add the diced shallots and saute for 1-2 minutes.
- Add the honey to the pan and stir with the shallots for a minute more.
- Add the green beans and lemon zest to the pan and stir together for a couple of minutes, until warmed through. Season with salt and pepper and serve immediately.

- In a medium pan, toast almonds over medium heat. Remove from pan and add 1/2 inch water. Bring water to a boil, add beans and cover pan. Reduce heat. Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat. Add lemon juice to butter (juice lemon half right side up to keep seeds with lemon, rather than in your beans). Add beans to lemon butter and coat evenly. Season with salt and pepper, to taste. - Blanch green beans in a large pot of salted water until tender, 5 minutes. Drain and transfer to a large plate or rimmed baking sheet to cool.
- Heat oil in a large skillet over medium-high. Add garlic and cook until softened and just beginning to color, 1 to 2 minutes. Add green beans and season generously with salt and pepper. - Wash the beans, break off both ends, and break them in half.
- Mix the herbs and garlic together.
- In a Dutch oven, layer 1 cup of onions on the bottom of the pan, top with beans, then herb mix, season with salt and freshly ground black pepper, and drizzle with 1/2 of the olive oil.
- Finish with the remaining cup of onions before drizzling with the last 1/2 of olive oil.
- Cover and cook over medium high heat until the pan lid is hot. As soon as the lid is hot, turn the heat down to low and simmer for 1/2 hour, or until the beans are very soft and tender.
- Stir in 1/8 cup lemon juice.

- Add all the ingredients for the lemon dill dressing to a 1 cup mason jar, secure the lid and shake the dressing together. Or you can whisk them together in a bowl. The dressing separates as it sits, so shake or stir it back together just before you toss it with the green beans.
- Place the trimmed green beans in a large skillet, (12″) along with 1/4 cup water. Place a lid on the skillet and turn the heat on to high until it comes to a boil. Then lower the heat to maintain a simmer, and steam the green beans just until barely tender and bright green, 6-8 minutes for fresh. Be sure to keep an eye on the level of water in the pan, if it looks like it's running dry, add a few tablespoons more water to finish cooking. If you're using frozen green beans, start checking sooner as they come already partially cooked.
- Drain the green beans and toss them with the dressing.

- Snap off the stem ends of the green beans, or cut them off in a big bunch with a knife.
- Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom so you can keep track of the color.) Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.

- 1. Lightly film the bottom of 2 straight-sided 12-inch sauté pans with oil. Heat them over medium-high heat. Add the beans and generous sprinklings of salt and pepper, and sauté for 2 minutes, or until the beans begin to brown. Add 1/2 cup of water to each pan and immediately cover it. Turn the heat to medium-low. Cook the beans for 15 to 20 minutes, checking them often for burning and adding a little water if necessary. You want the beans very tender.

- Use a microplane, zester, or small-holed cheese grater to remove the thin layer of yellow zest from the lemon. Set the zest aside. Remove the stems from the green beans and, if you prefer shorter pieces, snap them in half. Place the green beans in a colander and rinse well with cool water.
- Transfer the rinsed green beans to a deep skillet. Add about one inch of fresh water (the water will not cover the beans). Place a lid on the skillet and turn the flame on to medium-high. Allow the water to come up to a boil. Let the beans simmer and steam for 3-5 minutes, or just until the beans are bright green and just slightly tender. Test the texture with a fork.
- Once the green beans are bright green and slightly tender, turn off the heat and drain them in a colander. Return the drained green beans to the still-warm skillet with the heat turned off.
- Add the butter, about 1/2 tsp of lemon zest, a quick squeeze of the lemon juice (about 1 tsp), a pinch of salt, and some freshly cracked pepper. Toss the green beans to distribute the seasonings and allow the residual heat to melt the butter.
