HONEY MUSTARD CURRY CHICKEN MARINADE

⅓ Cup of Honey
⅓ Cup Dijon Mustard (a spicy whole grain mustard works too.)
1 Tbs Curry Powder (can increase if you love this flavor)
1 Tbs Garlic Powder
1 Tsp Kosher Salt
¼ Cup Vegetable Oil
2 lbs Fresh Chicken (prefer boneless skinless thighs)
3 stalks green onion (chopped)

Steps:

  • Mix the honey, mustard, curry powder, garlic powder, salt and oil in a bowl. (Reserve ⅓ Cup for painting onto the chicken while grilling if desired).
  • Place the chicken pieces into a large plastic bag and pour the marinade over the top.
  • Allow to sit for 20 minutes (up to 24 hours).
  • Heat the grill to medium hot (450 degrees)
  • Place the chicken onto the grill and allow it to sit in one position for at least 3 minutes to achieve the dark grilling marks desired.
  • After grilling the first side for 3-4 minutes, (paint with reserved sauce if desired) flip the pieces over and turn the temperature down to medium (paint again with reserved sauce if desired). Allow to finish cooking for about another 2-3 minutes on side two.
  • Remove to a plate and allow to rest for 5 -10 minutes.
  • Garnish with chopped green onions. (If you didn't use the reserved sauce to baste onto the chicken while cooking, you may want to serve the prepared chicken with extra sauce).

10 skinless chicken thighs
½ cup liquid honey
¼ cup prepared mustard
1 teaspoon curry powder
¼ teaspoon salt
½ teaspoon dried tarragon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Flatten chicken thighs and squeeze tightly into a square baking dish.
  • Combine honey, mustard, curry powder, and salt in a bowl. Spoon over chicken. Sprinkle tarragon on top.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and juices run clear, about 50 minutes, basting occasionally with the honey-mustard sauce. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is my family's favorite dish, I usually double the honey mixture because we like more sauce. If I use chicken breasts I will either butterfly or pound them with a mallot, that way they're not as dry. I also cook a little longer so the sauce reduces and turns to a nice glaze.

1 whole cut up chicken (or chicken breasts or chicken thighs)
1/4 cup margarine, melted
1/4 cup prepared mustard
1/2 cup honey
1 teaspoon garlic salt

  • Combine margarine, mustard, honey and spices.
  • Dip chicken in sauce and place in a 13x9 baking dish, pour remaining sauce over chicken.
  • Bake covered at 375 for 1 hour.

¼ cup prepared mustard
1 cup honey
3 tablespoons curry powder
2 (4.5 ounce) cans mushrooms, drained
1 (4.5 ounce) can mushrooms, drained, liquid reserved

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Lay chicken pieces in a 9x13 inch baking dish. In a small microwave safe bowl mix together the mustard, honey and curry powder. Microwave on HIGH (full power) for 1 minute. Add all of the mushrooms, mix together, and pour mixture over chicken. Bake in the preheated oven for 45 to 50 minutes or until chicken is cooked through and juices run clear. Turn chicken pieces after 1/2 hour of baking. When done, chicken will be a beautiful golden brown.

2 tablespoons margarine
1/4 cup prepared mustard
1/3 cup honey
4 teaspoons curry powder

  • Melt the margarine in an ovenproof pan.
  • Add honey, mustard, curry powder, cayenne pepper and cumin; mix well.

There are many variations of this recipe on 'zaar. I'm posting this one so I can get the nutrition information for my version. I've decreased the honey and salt. It can be cooked however you like. I've done it on the grill, in the oven, in the slow cooker, and on top of the stove. What I like the most is that the whole family eats it. I mix it all together and put in a freezer bag. Defrosting before cooking gives better results (unless slow cooking- then can put it in still frozen)

4 boneless skinless chicken breasts
1/4 cup butter, melted
1/3 cup honey
1/4 cup Dijon mustard
1 teaspoon curry powder

  • Mix up the sauce (all the listed ingredients except the chicken).
  • Grill: marinade chicken at least 2 hours. Grill over medium heat, turning and basting every 10 minutes, til done (about 3 turns).
  • Oven: spray baking pan, put in chicken and cover with sauce. Bake at 375, turning and basting chicken every 15 minutes. Takes about 30- 45 minutes.
  • Stove Top: put chicken in pan, cover with sauce. Cook, covered, over med-low heat, turning and basting chicken every 15 minutes. Remove the lid for the last 15 minutes to thicken up the sauce.Takes 30-45 minutes.
  • Slow Cooker: put chicken in cooker, cover with sauce. Since there is honey in this, I only cook on low. I've found that cooking on high can burn the honey. Cook on low 4-6 hours.

1 teaspoon curry powder

2 teaspoons applesauce
4 chicken leg quarters
3 tablespoons butter

Steps:

  • Mix together the honey, dry mustard powder, curry powder, garlic powder, soy sauce, and applesauce in a bowl until thoroughly combined, and place the chicken legs into the mixture, spooning the honey mixture all over the chicken to coat.
  • Heat the butter and olive oil in a large skillet over medium heat, and place the chicken into the hot skillet, shaking off excess honey mixture. Retain extra honey mixture in bowl. Puncture a few holes in the chicken legs with a sharp meat fork, and brown the bottom sides of the chicken, about 8 minutes. Pour in water, and turn chicken legs over. Cover, and cook until the chicken meat is no longer pink inside and the juices run clear, 15 to 20 more minutes.
  • Drizzle the chicken with the remaining honey-curry mixture, bring to a boil, and spoon the pan drippings over the chicken to serve.

  • Add chicken thighs, potato cubes, carrot chunks, onion chunks and halved brussels sprouts into a large bowl.
  • In a medium bowl, mix together honey, dijon mustard, olive oil, yellow curry powder, cayenne pepper and salt and pepper. Use clean hands or a tong to toss all of the ingredients together until well combined and spices and sauce evenly coat the chicken and veggies. Pour onto prepared baking sheet (or evenly divide between two baking sheets.) You’ll want to group the vegetables as best as possible: carrots in one section, chicken in one section, potatoes in one section and brussels and onions in one section (as indicated in the photos). Season with additional salt and pepper. Bake for 25-35 minutes, rotating the pan(s) and stirring vegetables halfway through to encourage even cooking.
