4-6 ears of corn, husked
Butter (about 1/2 tablespoon per ear, cubed)
Salt
Pepper

Steps:

  • Place each ear of corn on a sheet of aluminum foil large enough to tightly wrap it. Place butter cubes on top of corn. Sprinkle with desired amount of salt and pepper.
  • Wrap each ear up tightly. Roll the sides upwards towards the seam. Place seam side up in slow cooker.
  • Cover and cook for 2 to 2-1/2 on high, or 4 to 4-1/2 hours on low.

1 can (15 ounces) coconut milk
1 medium onion, chopped
1/4 cup butter, cubed
6 fresh thyme sprigs
2 garlic cloves, minced
1 bay leaf
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh cilantro leaves, chopped
2 green onions, sliced

Steps:

  • In a 5- or 6-qt. slow cooker, combine first 9 ingredients. Cook, covered, on high 2-3 hours or until tender. Serve with cilantro and green onions.

  • Gently pull back husks to remove silk, without removing the actual husks.
  • Remove stem and cut off ends of corn so that they can stand or lay in the slow cooker with the lid on.
  • Add water, cover and cook on low for 2-3 hours. (I accidentally did it for 4 hours, and it still worked great!).
