EASY UPSIDE DOWN KIWI CAKE RECIPE BY TASTY

Steps:
- On a cutting board, cut the castella into ¼-inch (6 mm) slices.
- In a bowl, use a hand mixer to combine the heavy cream and sugar.
- Add the Greek yogurt and blend until stiff peaks form.
- Line a 7x7 inch (18x18 cm) bowl with plastic wrap and add the sliced kiwi to the bowl.
- Add a layer of whipped cream to cover the kiwi. Place the castella on the cream.
- Add half of the chopped orange and pineapple. Cover with a layer of whipped cream, and top with castella. Add the remaining half or orange and pineapple, top with whipped cream, and remaining castella.
- Cover the top layer in plastic wrap, and refrigerate for 3 hours.
- Place a plate on the opening of the bowl, and gently turn the bowl over, removing the plastic wrap.
- Slice the cake, and serve.

- In a small bowl, combine wafer crumbs and sugar; stir in butter. press onto the bottom and 2 in. up the sides of a greased 9-in. springform pan. Bake at 350° for 8 minutes. Cool on a wire rack; refrigerate for 30 minutes., Meanwhile, drain pineapple, reserving 1/2 cup juice (discard remaining juice or save for another use). In a small saucepan, sprinkle gelatin over reserved juice; let stand for 1 minute. Cook over low heat, stirring until gelatin is completely dissolved. Cool to room temperature, about 10 minutes., In a large bowl, beat the cream cheese, ricotta cheese and confectioners' sugar until smooth; gradually add the gelatin mixture, orange zest and vanilla. Beat on low speed until well combined. Spoon half into crust. Cut four pineapple rings in half; arrange in a spoke fashion over filling. Evenly spoon remaining filling over pineapple. Refrigerate for 6 hours or overnight., Beat marmalade until soft and spreadable; brush 6 tablespoons on top of cheesecake. Cut remaining pineapple rings in half; arrange over marmalade. Place kiwi slices between pineapple rings. Brush with remaining marmalade. Just before serving, run a knife around edge of pan to loosen. Refrigerate leftovers.

- In a large saucepan, combine 3 cups mashed kiwi, pineapple juice, lemon juice and apples. Bring to a boil and then add the sugar; stir to dissolve, reduce heat and simmer for 30 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

KIWI CREAM PIE
For Zaar World Tour 5. This is for the Australia/New Zealand region and comes from the Avon International cookbook. I have made this recipe numerous pies and one of my other recipes has been inspired from this recipe. There is barely any cooking involved, but there are several hours of chill time which will be used as cooking time.

- In a mixing bowl combine crushed vanilla wafers, cinnamon, and melted butter or margarine. Press into a 9 inch pie plate to form a firm, even crust. Chill the crust for 1 hour.
- In the meantime, in a small saucepan soften gelatin in cold water, then cook and stir over medium heat until gelatin is dissolved. Cool completely.
- In a large bowl, beat together yogurt, sugar, and lemon juice; stir in the cooled gelatin mixture. Chill until partially set.
- Beat the first 1/2 cup of whipping cream until soft peaks forms and then fold it into the gelatin mixture. Chill till mixture mounds when spooned. Turn into chilled crust. Cover and chill several hours or till set.
- Just before serving, arrange kiwi around the edges of the pie. Beat the second 1/2 cup of whipping cream until soft peaks form and spoon into the center of the pie; garnish with remaining kiwi slices.
