1 large head broccoli, cut into florets
2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
4 shallots, thinly sliced
1 sweet red pepper, sliced into rounds
1/4 cup asiago cheese, grated
salt and pepper
red pepper flakes

Steps:

  • Place the broccoli in a steamer basket.
  • Steam over boiling water in a large covered saucepan for 3-5 minutes until bright green and crisp-tender.
  • Transfer to large bowl.
  • Saute the garlic, red pepper and shallots in a large skillet with the olive oil for 3 minutes.
  • Remove from heat.
  • Add the broccoli and mix well.
  • Add the salt, black pepper, red-pepper flakes and Asiago cheese.
  • Toss lightly.

This dish helps me warm up on a cold winter's day without being too heavy. It was inspired by a dish from my favorite vegetarian cookbook. I eat it with rice and chicken for dinner or a piece of brown bread for lunch.

1 tablespoon olive oil
1 small onion, thinly sliced
1 clove garlic, minced
1 small carrot, diced
1 stalk celery, diced
salt and ground black pepper
¾ pound broccoli - cut into florets, stems peeled and sliced 1/4 inch thick
1 (15 ounce) can diced tomatoes
1 tablespoon chopped green olives
2 teaspoons maple syrup
¼ cup crumbled goat cheese
¼ cup Parmesan cheese

Steps:

  • Heat olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until aromatic, about 3 minutes. Stir in the carrots and celery, season with salt and pepper, and continue cooking until the vegetables begin to soften, about 5 minutes.
  • Meanwhile, place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli, recover, and steam until bright green, 4 minutes. Remove the broccoli from the steamer and place in a 8x8 inch baking dish; set aside.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Pour the can of diced tomatoes and green olives into the skillet with the onion and carrot mixture. Stir and cook over medium-high heat until most of the sauce thickens, about 5 minutes. Mix in the maple syrup, season with salt and pepper to taste, and cook and stir for 3 minutes.
  • Pour the sauce over the broccoli in the 8x8 inch baking dish. Evenly distribute the goat cheese and Parmesan cheese over the broccoli and sauce.
  • Bake in preheated oven until the cheese begins to brown, about 20 minutes.

4 c fresh broccoli florets
1/2 c water
1/2 tsp dried oregano
1/4 tsp garlic powder
pepper, to taste
2 medium tomatoes, cut into thin wedges
1/2 c shredded mozzarella cheese

Steps:

  • 1. Steam broccoli florets just until tender.
  • 2. When done, in a casserole dish, stir together the seasonings and tomatoes. Add broccoli to the seasonings and the tomatoes.
  • 3. Cover and bake at 350 degrees for 40 minutes.
  • 4. Remove from oven, sprinkle mozzarella over top. Cover and bake 10 minutes longer, or until cheese is melted.

  • Preheat broiler. In a medium bowl, whisk together egg whites, eggs, salt, and pepper. Stir in cheese; set aside.
  • In a large broiler-proof skillet, cook broccoli and shallots in hot oil over medium heat for 8 to 10 minutes or just until tender, stirring occasionally. 1 tablespoon water
1/2 teaspoon dried oregano, crushed
1/4 teaspoon pepper
1 tablespoon lemon juice
2 medium ripe tomatoes, cut in wedges
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Wash and cut broccoli florets in 1/2 inch pieces.
  • Place broccoli and water in a shallow, round microwave-safe dish.
  • Cover with plastic wrap or lid and microwave on HIGH for 5-7 minutes or until tender (every microwave is different, so keep an eye on them!).
  • Stir several times- Drain.
  • Stir in oregano, pepper, lemon juice and tomato wedges.
  • Sprinkle cheese on top.

1 large head broccoli (~480g, including the stalk)
1/2 red onion (1/2c diced)
1 red capsicum (1/2c diced1/2c parsley (chopped and packed))
6 sundried tomatoes
1/4 c kalamata olives (sliced)
3 medjoul dates (pitted & fined diced)
2 tbsp extra virgin cold-pressed olive oil
2 tsp balsamic vinegar
2 tsp apple cider vinegar
1 tsp coconut nectar
1/4 tsp sea salt

Steps:

  • Put the sundried tomatoes in 1/2 cup of boiling water and set aside to soak.
  • Meanwhile cut the head off your broccoli, then thinly slice the skin off the stalk. Chop the head and stalk roughly and place in a food processor. Pulse gently until roughly chopped into 1/4-1/2cm pieces - some roughness and irregularity is good. If your food processor is strong enough, you can add the red onion at the same time and chop these together.
  • Remove the sundried tomatoes from the water and thinly slice (give the tomato water to your plants!).
  • Place all salad ingredients in a bowl and mix gently, lifting to combine.
  • Place all dressing ingredients in your food processor bowl (no need to clean in between) and blend until thick and creamy, then pour over salad and mix lightly to combine. Serve straight away!
