CLASSIC FRENCH OMELETTE WITH SIDE SALAD

Steps:
- Combine the Dijon mustard, shallot and red wine vinegar in a large bowl. Season with salt and pepper. Slowly whisk in the olive oil and 3 tablespoons chives. Set aside.
- Melt 2 tablespoons butter in a 12-inch nonstick pan over medium heat. When the butter starts to bubble, add the eggs and the cold cubed butter, and begin to stir with a rubber spatula. Continue to stir until the eggs are half set, then reduce the heat to low.
- When the omelette is soft, sprinkle with salt and pepper, and top with the cheese on one side. Let the omelette sit over low heat, without touching it, for 1 minute, to let the heat of the pan set the eggs. Roll the omelette over the cheese so it forms a jelly roll shape, then roll the whole omelette onto a large dish. Lightly spread the remaining tablespoon butter over the omelette to coat. Toss the lettuce with the vinaigrette and serve alongside the omelette. Garnish the omelette with the remaining tablespoon chives.
MEDITERRANEAN SUPPER OMELET WITH FENNEL, OLIVES, AND DILL

- Heat 1 tablespoon oil in 10-inch nonstick skillet over medium-high heat. Add fennel bulb; sauté until beginning to brown, about 5 minutes. Cover and cook until softened, stirring occasionally, about 4 minutes. Add tomatoes and mash with fork; mix in olives. Season with salt and pepper. Transfer mixture to medium bowl.
- Add remaining 1 tablespoon oil to same skillet; heat over medium-high heat. Add beaten eggs and cook until eggs are just set in center, tilting skillet and lifting edges of omelet with spatula to let uncooked portion flow underneath, about 3 minutes. Sprinkle half of cheese over half of omelet, then top with fennel mixture. Sprinkle dill over, then remaining cheese. Using spatula, fold uncovered half of omelet over cheese; slide onto plate. Garnish with chopped fennel fronds and serve.

- Warm 2 tablespoons of olive oil in a skillet over medium-high heat and add fennel, sautéing until lightly browned. Add garlic and tomatoes and sauté five minutes more. Transfer to a bowl and mix in olives and basil. Salt to taste. Warm remaining olive oil in a skillet. Add half of the beaten eggs to the skillet. As the eggs cook, use a spatula to lift the edges of the omelet and tilt the skillet so uncooked egg comes in direct contact with the pan. After about three minutes, when the eggs are mostly set, add half of tomato mixture to one side of the eggs. Using a spatula, fold the uncovered half of the omelet over the top; cook a minute more and slide onto plate. Repeat to make second omelet.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or nonstick aluminum foil.
- Remove stems and core from fennel bulbs. Reserve a handful of fronds. Dice fennel into bite-sized pieces. Toss fennel and fronds with Parmesan cheese, oil, salt, and pepper. Spread in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20 minutes. Turn fennel with a spatula and roast until crisp-tender and browned on both sides, 5 to 10 more minutes.

- In a bowl whisk eggs with whipping cream, baking powder, oregano and black pepper until well combined; allow to sit for 5 minutes.
- In a medium skillet melt butter over medium heat until sizzling.
- Whisk/stir the egg mixture one more time then pour into hot skillet; cook without stirring for 3 minutes or until almost set, gently lifting the edge of the eggs with a spatula to allow any uncooked egg to flow underneath.
- On one side of the ometette sprinkle the feta cheese and olives.
- Lift the uncovered half over the cheese and olives and cook for another 2-3 minutes.
- Slide onto a plate.

FRENCH OMELET
I learned this simple recipe from my dad, who cooked it often for breakfast. Simple, but my favourite omelet.

Steps:
- Whisk the eggs with the water and salt and pepper. Water helps bond the egg, so the omelet will fold more easily.
- Put 3/4 (15g) of the butter and 1/2 (ie. a dash) of the olive oil in a good non-stick 20cm to 30cm frying pan. Heat till the butter bubbles. Mixing the oil with butter makes the mixture spread out, and mushrooms taste better cooked in butter.
- Put the mushroom, onion and bacon (and potato, if using) in the frying pan. Cook until the onion starts to brown (and stir to ensure the mushroom soaks & bacon cooks). Remove from the pan.
- Put 1/4 (5g) of the butter and another dash of the olive oil in the pan. Again heat until it bubbles. Make sure it covers the base of the frying pan (by tipping & tilting the frying pan). Put the whisked egg in the frying pan, and make sure that it covers the base of the frying pan (by tipping & tilting again).
- Immediately put the cooked bacon, mushrooms & onions on one half of the omelet - whichever half looks like it might cook the slowest. Lay the cheese on top of the bacon, mushrooms & onions.
- Test lifting the other side of the omelet. When it is cooked enough to be solid enough to lift, lift it with one or two spatulas to cover the other half of the omelet. You can lift with one spatula and jerk the frying pan, but it might be easier to use two spatulas.
- Leave the omelet to cook on a lowish heat for another minute - so the cheese will completely melt through. Then serve.
