- Preheat oven to 350°. In a large saucepan, combine brown sugar, cream, butter and salt. Bring to a gentle boil; cook and stir 1 minute. Remove from heat; stir in vanilla. Cool completely., Meanwhile, for the crust, cream butter, brown sugar and vanilla. Gradually add flour. Stir in chopped pecans. Press onto bottom and 1/2 in. up sides of a greased 9-in. springform pan. Place pan on a baking sheet., Bake until lightly browned, 10-12 minutes. Cool slightly. Spread with 1/2 cup caramel sauce. Cool on a wire rack., Spread ice cream over caramel layer. Freeze 15 minutes. Top with additional chopped pecans or pecan halves. Freeze, covered, several hours or overnight. Cover and refrigerate remaining caramel sauce., Loosen sides from pan with a knife; remove rim from pan. Heat caramel sauce and serve with torte.

- 1. BUTTER: Preheat oven to 375 F. Butter three 9-inch cake pans. Line bottoms with parchment; butter parchment. Using Electric mixer, cream 3/4 cup butter until light. Add sugar and beat until light and fluffy. Beat in eggs one at a time. Add vanilla and salt. Using rubber spatula, stir in chocolate, than pecans. Divide batter among prepared pans. Bake until tester inserted in center come out fudgy but not wet, about 22 minutes. Cool in pans on rack 5 minutes. Run knife around edge of cakes. Invert onto racks, and cool layers completely.(Can be prepared up to 2days ahead. Warp each layer separately with plastic and refrigerate.) Arrange one cake layer bottom side up on platter. Slide strips of waxed paper under cake (this will keep platter neat during glazing). Spread 2/3 cup Strawberry Buttercream over layer. Repeat with remaining layers and buttercream, ending with cake bottom side up. Pat layers to even. Cover and refrigerate torte for at least 6 hours. Cut edges of cake serrated knife to even if necessary. Pour glaze over cake; smooth over sides and top. Discard waxed paper. Arrange strawberries around top edge of torte, cut side down. Let stand at room temperature 1 hour before serving.
- 2. STRAWBERRY BUTTERCREAM: Using electric mixer, cream butter and sugar until light and fluffy. Mix in yolks, than pureed berries and preserves. Cover tightly and refrigerate until set. Soften buttercream at room temperature until spreadable.
- 3. EASY CHOCOLATE GLAZE: Heat chocolate, water, butter and oil in top of double boiler over gently simmering water until chocolate melts. Remove from heat. Add cocoa powder and sugar and stir until sugar dissolves and glaze is smooth. Let cool until glaze is thickened slightly but still pourable.

- Make the cake:
- Position rack in center of oven and preheat to 350°F. Butter and flour three 9-inch-diameter cake pans with 11/2-inch-high sides. Line bottom of each cake pan with waxed paper; butter and flour waxed paper.
- Using electric mixer, cream butter in large bowl. Gradually beat in sugar until smooth. Beat in egg yolks 1 at a time. Blend in melted chocolate. Slowly mix in pecans, vanilla, and spices. Gently fold in flour in 4 batches (batter will be very thick and dense).
- Using electric mixer fitted with clean dry beaters, beat egg whites with salt and cream of tartar in another large bowl until medium peaks form. Gently fold 1/4 of whites into batter to lighten, then fold in remaining whites. Divide batter among prepared pans, spreading evenly. Bake until toothpick inserted into center of cake comes out clean, 35 to 40 minutes. Run knife around sides of each cake. Let stand 10 minutes. Invert cakes onto racks. Cool to room temperature.
- Do Ahead
- Cakes can be made up to 2 weeks ahead. Wrap tightly and freeze.
- Make the buttercream:
- Stir sugar and corn syrup in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and boil 1 minute. Meanwhile, using electric mixer, beat egg yolks in medium bowl until pale and thick. Gradually beat in hot sugar syrup; continue beating until mixture is completely cool, about 5 minutes. Beat in butter 1 piece at a time, incorporating each piece completely before adding next. Blend in melted chocolate, then rum. (If buttercream looks broken or curdled, place bowl with buttercream over medium heat on stove burner and whisk 5 to 10 seconds to warm mixture slightly, then remove from heat and beat mixture again on medium speed. Repeat warming and beating as many times as needed until buttercream is smooth.)
- Reserve 1/2 cup buttercream. Set 1 cake layer, flat side up, on rack; spread with half of remaining buttercream. Top with second cake layer; spread with remaining buttercream. Top with third cake layer; use reserved 1/2 cup buttercream to fill in seam where cake layers meet. Freeze cake until buttercream is firm, about 2 hours.
- Make the glaze:
- Stir all ingredients in top of double boiler over gently simmering water until mixture is smooth. Remove from over water. Stir until glaze is thickened, about 5 minutes (do not allow glaze to set).
- Pour 3/4 of glaze over top of cake. Carefully and quickly tilt cake back and forth so glaze coats sides; smooth sides with spatula, adding some of remaining glaze where necessary. Chill cake until glaze is set.
- Make the chocolate ribbons:
- Melt white chocolate in top of double boiler over gently simmering water; stir until smooth. Stir in 1/4 cup corn syrup. Pour onto baking sheet. Chill until firm, 30 to 40 minutes. Transfer white chocolate to work surface and knead several minutes. Shape white chocolate dough into ball. Wrap in plastic. Let white chocolate dough stand at room temperature 1 hour.
- Repeat with bittersweet chocolate and remaining 1/4 cup corn syrup.
- Cut white chocolate dough into 4 pieces. Flatten 1 piece into rectangle. Turn pasta machine to widest setting. Run chocolate through 3 times, folding into thirds before each run. Adjust machine to next narrower setting. Run chocolate through machine without folding. If chocolate is more than 1/16 inch thick, run through next narrower setting. Lay chocolate piece on rimless baking sheet. Repeat flattening, folding, and rolling with remaining chocolate pieces. Repeat process with bittersweet chocolate dough.
- Cut four 8x1-inch strips from rolled white chocolate dough and four 8x1/2-inch strips from rolled bittersweet chocolate dough. Center bittersweet chocolate strips atop white chocolate strips to form 4 ribbons. Run 1 ribbon from base of cake to center. Arrange remaining 3 chocolate ribbons equidistant from each other in same fashion so ribbons meet in center.
- Cut ten 6 1/2x1-inch strips from rolled white chocolate dough and ten 61/2x1/2-inch strips from rolled bittersweet chocolate dough. Center bittersweet chocolate strips atop white chocolate strips to form 10 ribbons. Cut ends off 2 ribbons on diagonal. Starting at center, drape ribbons over top and sides of cake to form trailers. To form loops for bows, fold remaining 8 ribbons in half, layered side out. Cut ends into V shapes. Arrange ribbon halves with V shapes at center of cake to form bow.
- Cut one 3x1-inch strip of white chocolate and one 3x1/2-inch strip of bittersweet chocolate. Center bittersweet chocolate strip atop white chocolate strip. Fold in ends of chocolate strips and pinch to resemble knot; place in center of bow. Carefully transfer cake to serving platter or cake stand.
- Do Ahead
- Cake can be prepared up to 1 day ahead. Cover and refrigerate. Bring cake to room temperature before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 8-inch round cake pans.
- Beat egg whites in mixing bowl until medium-stiff peaks form; set aside. Sift together flour and cocoa powder; whisk in ground pecans and set aside.
- In a separate bowl, beat egg yolks; mix in 2/3 cup sugar, vanilla, and 1/2 teaspoon instant coffee granules and beat well. Fold yolk mixture into egg whites. Gently fold in flour, cocoa, and pecan mixture. Spread batter into prepared pans.
- Bake in preheated oven until cake springs back when lightly touched with a finger and a tester inserted in the center comes out clean, about 25 minutes. Let cakes cool slightly, then remove from pans to cool completely on wire racks.
- To Make Mocha Cream: Dissolve 1 tablespoon coffee granules in boiling water. Cool. Beat whipping cream and 2 tablespoons of sugar together in a cold mixing bowl until stiff. Mix in cooled coffee.
- Fill and frost cake with Mocha Cream and garnish with pecan halves. Keep refrigerated until ready to serve.

- Let eggs stand at room temperature for 30 minutes. In a large bowl, beat egg yolks. Gradually add 1 cup sugar, beating until thick and lemon-colored. STRAWBERRY-WHITE CHOCOLATE BUTTERCREAM

- Thaw the strawberries, either by setting them out for several hours or microwaving on the defrost setting until no longer cool to the touch.
- Puree the strawberries in a food processor or blender. If the mixture is still cold, defrost in the microwave until no longer cool to the touch.
- Break the chocolate into squares and place in a microwave-safe bowl. Add the oil and microwave, stopping and stirring every 15 seconds, until the chocolate is completely melted. Do not allow the mixture to exceed 160°F A double boiler may be used to melt the chocolate mixture if you prefer.
- Add 1/2 cup strawberry puree to the melted chocolate mixture and stir until smooth. Microwave briefly if necessary until mixture is smooth.
- Fill a large bowl with ice cubes and water. Set the bowl with the melted mixture directly in the ice water. Be careful not to get any water into the bowl. Stir constantly with a spoon or whisk until the mixture becomes thick and holds stiff peaks. Immediately remove from the ice water.
- Allow the buttercream to sit for several minutes. If it has become solid, it is too cold and will need to rest until it has returned to room temperature.
- Beat the buttercream until thick and airy.

CHOC PECAN TORTE W/STRWBRY BTTRCRM W/CHOC GANACHE
The title wasn't able to fit the entire name. It's called Chocolate Pecan Torte with strawberry buttercream and chocolate ganache. This an amazing recipe. I've served this torte at many dinner parties and have had rave reviews. It turns out perfectly every time. It's also gluten-free. Your family and friends won't believe it...

- 1. Torte: In a large mixing bowl, cream butter until light and fluffy, add sugar and mix well. Add eggs, one a time, mixing well after each. Add vanilla and salt and, again, mix well. Stir-in chocolate until well blended and then the ground pecans.
- 2. Prepare four 9 inch cake pans by coating with butter. Cut out four disks of parchment paper to fit the bottom of the cake pans. After placing the disks into the pans, coat the parchment with butter also.
- 3. Pour batter equally between the pans. Place in preheated oven at 350 degrees F. Bake about 18 minutes. They're done when a toothpick inserted into the center comes out clean. The tops will crack. Cool in the pans ten minutes before running a sharp knife around the edges. Invert onto cooling racks.
- 4. Buttercream: Blend butter with sifted sugar until well blended. Add egg yolks and blend well. Add puréed strawberries and preserves, mix well until light and fluffy. Refrigerate until the consistency is spreadable.
- 5. Ganache: Melt chocolates with water in a medium sized pot. Add butter and allow to melt. Remove from heat. Add cocoa powder and whisk until smooth, add oil. Pour chocolate mixture into large mixing bowl and beat until smooth. Add sifted powdered sugar and mix on high for two minutes. Add additional sugar if needed to obtain the consistency of thick frosting.
- 6. Assembly: place a dab of ganache on cake plate. Top with the first cake layer with smooth side down. Spread with 2/3 cup of buttercream and top with the next layer, spread with 2/3 cup buttercream and repeat with the last two layers. Spread the top layer with remaining buttercream. Refrigerate for at least 20 minutes. Place strips of parchment paper or waxed paper strips along the edge of the bottom layer to avoid getting the ganache on the cake plate. Spread the ganache on the sides, filling the gaps between layers, until a smooth layer coats the sides. Spread a thick layer of ganache on top and smooth out until the top blends with the sides. Refrigerate until 30 minutes before serving. Use a sharp knife to cut the torte.

- Preheat oven to 350°F. and butter two 8- by 2-inch round cake pans. Line each pan with a round of wax paper and butter paper.
- Make cake layers:
- In a food processor pulse 2 cups pecans with flour, salt, and baking powder until finely ground (do not pulse to a paste). Transfer mixture to a bowl and stir in orange juice. Separate eggs and in a large bowl with an electric mixer beat yolks until pale yellow. Gradually add sugar, beating until thick and pale, and fold in pecan mixture gently but thoroughly. In another bowl with cleaned beaters beat whites until they hold stiff peaks. Stir about one fourth whites into pecan mixture to lighten and fold in remaining whites gently but thoroughly.
- Divide batter between cake pans and bake in middle of oven 25 minutes, or until cakes pull away from sides of pans. Cool cake layers in pans on a rack 10 minutes and invert onto rack to cool completely. Carefully remove wax paper from bottoms of cake layers.
- While cake layers are cooling, on a baking sheet toast remaining 1/2 cup pecans until fragrant and a shade darker, about 8 minutes. Cool nuts and chop.
- Make filling:
- In a medium bowl with cleaned beaters beat cream with zest until it just holds stiff peaks.
- Arrange 1 cake layer, top side up, on a serving plate and spread filling evenly onto layer. Put remaining layer, bottom side up, on filling.
- Make frosting:
- Chop chocolate. In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove chocolate from heat and stir in sour cream and a pinch salt until smooth.
- Immediately spread frosting on top and side of torte and pat toasted pecans around side. Chill torte, loosely covered, until frosting is set, at least 1 hour, and up to 3 days.
- Serve torte chilled or at room temperature.

Chocoholics rejoice! This rich dessert is all-out decadent, while looking oh so elegant. Sure to impress! Easy to make, but you need to allow for some chilling/cooling time (not included in times above). Can substitute strawberries for raspberries. In fact, put some chocolate covered strawberries on top for a really nice touch. Recipe is from the one of those supermarket aisle mini cookbooks called Better Homes and Gardens Ultimate Chocolate Desserts.

- TORTE:.
- Preheat oven to 375°F Grease three 9 inch round cake pans and line bottoms with greased parchment or waxed paper for easy removal. (Springforms work fine too, but aren't necessary.).
- Beat butter for 30 seconds. Add sugar and vanilla and beat until combined. Add eggs one at a time.
- Stir in melted chocolate.
- Fold in pecans. (Pecans should be really finely chopped, almost like pecan meal. Remember, this is what's replacing the flour. A food processor does this in 30 seconds. By hand you'll be chopping a lot.).
- Pour into prepared pans and bake for 22 minutes or until toothpick inserted near centers comes out fudgy but not wet.
- Cool on racks for 10 minutes. Remove from pans, remove parchment and cool completely on racks.
- RASPBERRY/STRAWBERRY CREAM FILLING:.
- Beat 1 cup powdered sugar with 2/3 cup softened butter until fluffy.
- Beat in 1/3 cup preserves.
- DOUBLE CHOCOLATE GLAZE:.
- In medium saucepan over low heat, combine 3 ounces chocolate chips and 1/3 c butter. Remove from heat when melted and stir in 2/3 cup sugar, 1/2 cup cocoa powder and 1/4 cup water. May need to reheat it until sugar is dissolved and glaze is smooth. (Taste it periodically -- I know, tough duty -- to check that there are no sugar crystals. You want it to be smoooooth!).
- Cool until it thickens slightly but is still pourable.
- ASSEMBLY:.
- Assemble torte layers with raspberry filling in between. Cover and chill for 8-24 hours.
- Spread glaze over top of torte, allowing some to drizzle down the sides. Arrange berries on top. Cover and chill for 1-24 hours.
- Enjoy!

- Brush the bottom and sides of a 9-Inch Springform Pan with melted butter. Cut a large single sheet of aluminum foil – making sure that it is wide enough to surround all sides of your springform pan. (We recommend using extra wide aluminum foil if it is available rather than two narrower pieces of foil to avoid any chance of leaking.) Wrap the pan, making sure that the sides of the pan are fully covered by the foil. Also make sure that you don’t tear the foil as you wrap it. Set pan aside.
- In a small dry skillet, lightly toast the pecans over low heat. Let cool, then using a mini food processor, grind the pecans until uniform sized crumbs. Set aside.
- Please butter and chocolate pieces in a heavy-bottomed saucepan and melt over medium heat, stirring and being careful not to brown the butter or scorch the edges of the melting ingredients. Remove pan from the heat and stir in the cocoa powder. Set aside to cool.
