CHOCOLATE RASPBERRY BUNDT CAKE

Nonstick cooking spray, for the pan
3/4 cup milk
1/3 cup seedless raspberry jam
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup raspberry liqueur, such as Chambord
3 large eggs
One 15.25-ounce box devil's food cake mix
1/2 cup fresh raspberries, for decorating
1 bunch fresh mint, for decorating
1/2 cup plus 2 tablespoons semisweet chocolate chips
1 tablespoon seedless raspberry jam
1 tablespoon raspberry liqueur, such as Chambord
1/2 cup heavy cream

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Spray a bundt pan with nonstick cooking spray.
  • In a large mixing bowl, use a handheld electric mixer to whisk the milk, jam, melted butter, liqueur and eggs. Add the cake mix and beat on medium speed for about 1 minute.
  • Transfer the batter to the prepared pan and bake until a toothpick or cake tester comes out clean when inserted into the cake, about 35 minutes. Let cool in the pan for 15 minutes. Remove the cake from the pan and transfer to a wire rack to cool completely.
  • For the ganache: Put the chocolate, jam, and liqueur in a mixing bowl. Bring the cream to a low simmer in a small pan set over medium-high heat. Pour over the chocolate and let stand 10 minutes. Stir with a whisk until smooth. Let stand another 10 minutes.
  • Place the cake on a cake stand or serving dish and pour the ganache over it, letting it drip down the sides. Use the raspberries and mint to decorate it to look like a holiday wreath if desired.

Three 8-inch round cake pans, greased and bottoms lined with parchment paper circles
2 3/4 cups (13 3/4 ounces) all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon fine sea salt
1 1/2 cups (17 1/4 ounces) jam, preferably blackberry, raspberry, or apricot
3/4 cup buttermilk, at room temperature
3/4 cup (6 ounces) unsalted butter, at room temperature
1 1/2 cups (10 1/2 ounces) sugar
4 eggs, at room temperature
1 cup (4 ounces) sliced natural almonds, toasted
Caramel Chocolate Ganache

Steps:

  • Center an oven rack and preheat the oven to 325°F.
  • In a large bowl, sift together the flour, baking soda, cinnamon, nutmeg, cloves, and salt, then whisk the mixture to ensure that the ingredients are well distributed.
  • In a small bowl, stir together the jam and the buttermilk.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium-high speed until fluffy, about 5 minutes. As you make the batter, stop the mixer frequently and scrape the paddle and the sides of the bowl with a rubber spatula. Blend in the eggs one at a time, adding the next one as soon as the previous one has disappeared into the batter. With the mixer on low speed, add the flour mixture in three parts, alternating with the buttermilk mixture in two parts, beginning and ending with the flour. After each addition, mix until just barely blended and stop and scrape the bowl. Stop the mixer before the last of the flour has been incorporated and complete the blending by hand with a rubber spatula to ensure you do not overbeat the batter.
  • Divide the batter evenly into the prepared pans (there will be approximately 1 pound 4 ounces per pan) and smooth the tops. Bake in the middle of the oven until the centers are just barely firm when lightly touched, 32 to 34 minutes. Cool the cakes on a wire rack for 30 minutes before removing them from their pans. Once removed, continue to cool the cakes on the rack, top side up, until they reach room temperature. Leave the parchment paper on until you assemble the cake.
  • To assemble the cake, place one of the layers, top side up, on a flat plate or a cake board. Using a thin metal spatula, spread a thin layer of caramel ganache (a bit more than 1/2 cup) on top of the cake and out to the edges of the cake. Sprinkle 2 tablespoons of almonds evenly over the ganache. Align the next cake layer, top side up, on top of the first one, and repeat with another thin layer of ganache and almonds. Place the final layer of cake on top of the cake. Frost the top heavily and the sides lightly with the remainder of the ganache. Lightly press the remaining toasted almonds on the sides of cake.
  • This cake is best stored and served at room temperature. In an airtight container, it keeps for up to 5 days.

200g golden caster sugar
200g unsalted butter, softened plus extra for the tins
4 large eggs
200g self-raising flour
2 tbsp cocoa powder
1 tsp baking powder
½ tsp vanilla extract
2 tbsp milk
100g milk chocolate, chopped
200g butter, softened
400g icing sugar
5 tbsp cocoa powder
2 tbsp milk
50g dark chocolate
25g milk chocolate
25g white chocolate

Steps:

  • Heat oven to 190C/170C fan/gas 5. Butter the base and sides of two 20cm round sandwich tins and line the bases with baking parchment.
  • In a large bowl, beat together 200g golden caster sugar, 200g softened unsalted butter, 4 large eggs, 200g self-raising flour, 2 tbsp cocoa powder, 1 tsp baking powder, ½ tsp vanilla extract, 2 tbsp milk and a pinch of salt until pale.
  • Divide the mixture between the prepared tins. Bake for 20 mins or until a skewer inserted into the centre of the cake comes out clean.
  • Leave to cool in the tin for 10 mins, then turn out onto a wire rack to cool completely.
  • For the buttercream, put 100g chopped milk chocolate in a heatproof bowl and melt in the microwave, stirring every 30 secs. Leave the melted chocolate to cool for 5 mins.
  • Mash 200g softened butter and 400g icing sugar together with a fork, then switch to a wooden spoon or electric beaters, if you have them.
  • Sift in 5 tbsp cocoa powder with a pinch of salt and pour in the melted chocolate and 2 tbsp milk. Mix again until smooth.
  • On a cake stand or large plate, sandwich the cakes together with half of the buttercream, then spread the rest on top. Decorate with chocolate shards, if you like.
  • To make chocolate shards: melt 50g dark chocolate and pour it onto a tray lined with baking parchment or foil.
  • Now melt 25g milk chocolate and 25g white chocolate and drizzle them over the dark chocolate before it sets.
  • Shake the tray gently to level the mixture then leave to set somewhere cool. Chop into shards.

3/4 cup unsweetened cocoa powder, plus more for dusting the pans
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
1/2 cup vegetable oil
3/4 cup hot coffee
2 teaspoons vanilla extract
3 large eggs, at room temperature
1 cup sour cream, at room temperature
1 cup Cherry Jam Filling, recipe follows
2 cups of your favorite chocolate frosting
2 tablespoon cornstarch
2 cup frozen pitted sweet cherries
2/3 cup granulated sugar
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray two 9-inch-round cake pans with non-stick cooking spray and dust with cocoa powder.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Beat together the butter, granulated sugar, brown sugar and oil in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy, about 2 minutes.
  • Meanwhile, whisk together the hot coffee, 3/4 cup cocoa powder and vanilla in a medium bowl until smooth.
  • Add the eggs to butter mixture one at a time, mixing well and scraping down the bowl between each addition. Beat in the coffee mixture until well combined. Add half of the flour mixture and beat just until combined, then beat in the sour cream followed by the remaining flour mixture. Scrape down the bowl and beat 1 minute more.
  • Divide the batter between the prepared cake pans. Bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Transfer to racks. When the cakes are cool enough to handle, turn them out onto the racks to cool completely before frosting.
  • To assemble the cake, place one cake layer onto a serving platter or cake stand. Trim the top with a long serrated knife to make it level, if needed. Spread half of the Cherry Jam Filling on top in an even layer. Top with the other cake layer and frost the entire cake with chocolate frosting. Spread the remaining Cherry Jam Filling on top of the cake.
  • Stir together 2 tablespoons water with the cornstarch in a small bowl until the cornstarch dissolves. Combine the cherries, sugar, remaining 6 tablespoons water and the lemon juice in a medium pot over medium heat and simmer for 2 minutes. Stir in the cornstarch mixture and continue to simmer, stirring occasionally, until the mixture has thickened and looks clear and shiny, about 5 minutes. Cool to room temperature and then refrigerate, covered, until cold, about 1 hour.

Had some cranberry sauce left over and it had thickend to the consistency of jam. Used it in this cake. Nice combination. You can use any kind of jam you wish. This recipe comes from a little recipe leaflet I bought a long time ago.

1/4 cup baking cocoa
1/2 cup butter or 1/2 cup margarine
2/3 cup sugar
1/3 cup jam, your choice
1/3 cup hot water
2 eggs

Steps:

  • Preheat the oven to 350°F.
  • Grease and flour a round 9 inch baking pan.
  • Put butter, sugar, jam and water in a small pan on low heat.
  • Stir until butter is melted and sugar is dissolved.
  • Let it cool to room temperature.
  • Sieve flour, baking powder and cocoa in a bowl.
  • Add eggs and butter mixture.
  • Mix batter with a wooden spoon, don't overmix.
  • Pour batter in prepared pan.
  • Bake 35 minutes or until an inserted skewer comes out clean.
  • Serve with whipped cream or frosted with chocolate or just as it is.

LEFTOVER CHOCOLATE/JAM CAKE

Had some leftover homemade cranberry compote/jam and some apple sauce. Thought I would use it to make a chocolate cake. Used a compilation of some cake recipes. It turned out very well! The cake is moist and very "chocolatery". You can sub the cranberrycompote for any jam you like.

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a Bundt pan or any other pan holding 9-10 cups.
  • Sift togther the sugar, flour cocoa, baking soda, baking powder and salt.
  • Add eggs, milk and apple sauce.
  • Mix for 2-3 minutes with an electric mixer.
  • Add jam, mix carefully.
  • Add boiling water and mix carefully on lowest speed for about one minute.
  • Pour into prepared pan.
  • Bake for 40-45 minutes or until a skewer comes out clean.
  • Let stand for 5-10 minutes before removing from pan.
  • Let cool completely.

225ml sunflower oil , plus extra for the tins
250g caster sugar
3 large eggs
225ml milk
250g self-raising flour
4 tbsp cocoa
1½ tsp bicarbonate of soda
150g raspberry jam
100g frozen raspberries , defrosted
300ml double cream
2 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line two round 20cm springform cake tins with baking parchment. Whisk the oil, sugar, eggs and milk in a bowl until smooth. Sieve the flour, cocoa and bicarb into another large bowl, then gradually mix in the wet ingredients.
  • Divide the mixture between the tins and bake for 35-40 mins until the cakes are risen and spring back when pressed. Leave to cool in the tins for 10 mins, then transfer to a wire rack to cool completely.
  • For the raspberry layer, stir the jam and the defrosted raspberries together. Once the cakes are cool, whip the cream with the sugar to soft peaks, then gently fold half the raspberry mixture through the cream to create a ripple effect.
  • Spoon most of the reserved raspberry mixture over one of the cakes, then dollop on half of the cream. Smooth over with a palette knife, then place the other sponge on top. Swirl over the remaining cream and swirl the last of the raspberry mixture through it. Will keep in the fridge for two days.

125g butter
100g dark chocolate chips or a bar
340g jar of marmalade
150g caster sugar
2 eggs
150g self-raising flour

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a loose-based 20cm cake tin with baking parchment. Put the butter and chocolate in a medium saucepan and heat gently, stirring all the time, until melted.
  • Put 2-3 tbsp of the marmalade in a small bowl and set aside. Off the heat, stir the rest of the marmalade and the sugar into the buttery melted chocolate, and mix well, then break in the eggs and mix again. Finally, stir in the flour in three batches, folding lightly until combined. Scrape into the tin and smooth the top.
  • Bake for 45-55 mins, rotating the tin halfway through so it bakes evenly. Keep an eye on it in the later stages as (depending on your marmalade) there may be a tendency for the top to scorch. After about 30 mins, cover loosely with foil. If it starts to get a little dark, tent loosely with a sheet of foil.
  • The cake is cooked when the centre is firm when gently touched, and a skewer inserted in the centre comes out with a very few crumbs attached, like a brownie.
  • Allow to cool for 10 mins, then turn out and leave to cool right-side-up on a wire rack. Heat the reserved marmalade in the microwave until runny, then brush all over the cake to glaze. Leave to cool before serving.

  • Start by melting the butter over low heat in a heavy-based saucepan, preferably a large one. As the butter begins to melt completely with only a few yellow nuggets of fat left floating around, remove the pan from heat and drop in the chocolate buttons.   • While the chocolate butter cools, prepare an 8-inch cake tin. You don’t have to use a loose-bottomed or spring form one; I used a regular cake tin. Ensure to grease the tin properly, then line the base with baking parchment. Preheat the oven to 170 Degrees Celsius.
  • Back to the cake mixture; add the sugar, then the conserve. Using the same whisk, stir the batter to incorporate the jam into the chocolate. This will take a moment; have faith, it will come together. Then, add the beaten eggs. Again, stir to mix until only the merest hint of yellow trails the chocolate. Finally, add the flour in two batches. Don’t worry about folding it in, just stir it into the batter.
  • Transfer the batter into the waiting cake tin, and give it a sharp tap on the counter to release air bubbles. This will be a thick and gooey batter. Then, place the tin in the oven to bake for up to 45 minutes. If you find that the top is getting too dark by the 30 min mark, open the oven door slightly and slip a layer of foil on top of the cake tin. This will help the cake cook without the top charring.
